Tōfu 豆腐 It is safe to assume that tofu is one of the most famous Japanese foods. Tofu production was introduced from China in the 7 th century. Tofu is made by first soaking soybeans and mashing them into a pulp, then boiling the pulp in water to produce soybean milk (tōnyu). A coagulant called nigari is added to create a curd. This is cut into blocks and used for a variety of dishes. There are two main types of tofu: momendōfu, which is stronger and easier to handle with chopsticks because it is drained through cloth (momen); and kinugoshidōfu, which has a softer, smoother texture. Okara, the pulped bean bran left after straining, is also very nutritious and often cooked with chopped vegetables, such as carrot and burdock. A popular tofu dish in summer is hiyayakko – a cold block of tofu served with soy sauce and spices such as grated ginger, and chopped spring onions. In addition, tōnyu soybean milk is becoming more and more popular as an alternative to cow’s milk. (Abstracted from 『「日本の衣食住」まるごと事典, pp178-181, IBCパブリッシング). As it happens, hiyayakko is also popular with beer. The “World Beer and Gourmet Stadium 2015” will be held from May 1 to May 10 (see Seasonal Events Information section for more information). Why not try to drink beer with hiyayakko at the venue?. May 2015 For your cultural life in Hiroshima

Tōfu 豆腐 It is safe to assume that tofu is one of the most famous Japanese foods. Tofu production was introduced from China in the 7th century. Tofu is made by first soaking

soybeans and mashing them into a pulp, then boiling the pulp in water to produce soybean milk (tōnyu).

(Abstracted from 『「日本の衣食住」まるごと事典』, pp178-181, IBCパブリッシング).

As it happens, hiyayakko is also popular with beer. The “World Beer and Gourmet Stadium 2015” will be held from May 1 to May 10 (see Seasonal Events Information section for more information). Why not try to drink beer with hiyayakko at the venue?.

What is Trio-Phone?

Trio-Phone Service allows three people to have a conversation at the same time through the telephone. If you are having difficulties communicating in Japanese, call the International Exchange Lounge (082-247-9715). A volunteer interpreter will help you through the Trio-Phone Service!

Please help me. I don’t

understand Japanese very well, so I can hardly understand what this person is saying!

OK! Let’s find a volunteer that understands both Japanese and your mother language.

Would you please help him? He is having trouble understanding Japanese.

OK!

Winter 2015-2016

The International Exchange Lounge collects used stamps and telephone cards to assist international

cooperation activities. Through the two volunteer groups, JOCS and ShaplaNeer, the collected stamps and cards are sold to collectors to raise money. With the profit, items such as milk and medicine are purchased and doctors as well as nurses are dispatched throughout Asia and other continents. We also collects PET bottle caps in order to support the “Ecocap Action”. The sales profits obtained by recycling caps are donated to the Japan Committee “Vaccines for the World’s Children” (JCV).

Garbage Disposal Information Separate garbage properly and take it to the collection site by 8:30am on the

designated day. Please do NOT take garbage to the site on the night before. Garbage collection days vary depending on where you live and the category of the refuse. For further details, consult your local ward office or your neighbors to be sure of the proper disposal method. “Hiroshima 8”, a handbook on how to separate garbage, and “Hiroshima City Garbage Disposal Guidelines for the 2015 fiscal year”, a garbage chart with schedules of garbage collection days, are available at ward offices, branch offices and community halls. The Handbook and Guidelines are translated into English, Spanish, Portuguese, Chinese and Korean. These are also available at the International Exchange Lounge (International Conference Center Hiroshima), so please ask the staff if you need them.
