BAR PHILOSOPHY
This cocktail bar was founded on the belief that sharing food and drink is a fundamental human experience and instrumental to the well-being
of a community. With this in mind, we have created a cocktail list in the spirit of community
and collaboration.
Our inspiration for these cocktails is drawn from the literature we love. We have created
an homage to the characters, themes and prose within these masterworks. We desire to
capture, through our craft, the manner in which these works have affected our lives. Like in all
art, we have borrowed from others and included our interpretation, to create an original piece
through the art of the cocktail.

GLOSSARYAMARO - (Italian for “bitter”) an Ital-ian herbal liqueur that is commonly con-sumed as an after-dinner digestive.
APERITIVO - (Italian for “Appetizer”) a drink meant to prepare your stomach for the meal.
ARMAGNAC - a distinctive kind of bran-dy produced in the Armagnac region in Gas-cony, southwest France.
AQUAVIT - Scandinavian in origin, a neutral grain spirit flavoured with dill and caraway
CACHAÇA - a distilled spirit made from fermented sugarcane juice, most popular in Brazil.
CHARTREUSE - a French liqueur made by the Carthusian Monks since 1737. Distilled alcohol aged with 130 herbs, plants, and flowers.
CURAÇAO - a liqueur flavoured with the dried peel of the Laraha citrus (Curaçao Orange) fruit, grown on the Dutch island of Curaçao.
CYNAR - an Italian bitter liqueur of the am-aro variety. It is made from 13 herbs and plants, predominant amongst which is the artichoke.
DRAMBUIE - a Scottish liqueur/spirit made with blended scotch, honey and spices
FASSIONOLA - a typically red coloured syr-up that is fruit flavoured (passion fruit and others) that is more frequently used in trop-ical drinks.
FERNET - a type of amaro, often consumed neat as a digestive or as a mixing component.
GASTRIQUE - made with a combination of roasted fruits, winter spices, vinegar, sugar and water.
GRAPPA - a fragrant, grape-based pomace brandy of Italian origin.
HIBISCUS - a genus of flowering plants in the mallow family, Malvaceae. It has a tart, almost-cranberry like flavour.
MARASCHINO - a liqueur obtained from the distillation of Marasca cherries. The small, slightly sour fruit of the Tapiwa cherry tree.
MEZCAL - a Mexican distilled beverage made from agave. Due to the traditional pro-duction technique, mezcal often has smoky characteristics.
ORGEAT - a sweet syrup made from al-monds, sugar, rose water, and orange blos-som water.
PISCO - a distilled spirit made from the juice of grapes, produced in wine making regions on Peru and Chile.
PINEAPPLE FERMENT - a syrup created by slow fermenting pineapple with sugar and spices
PIMM’S - a gin-based drink containing a se-cret mixture of herbs and liqueurs, used to aid digestion.
RHUM AGRICOLE - French term for rum made from cane juice rather than molasses.
SLOE BERRY - also called Blackthorn, is a berry from a species of flowering plant in the rose family Rosaceae.
SHRUB - a concentrated syrup that com-bines fruit, sugar, and vinegar
THAI INFUSION - an infusion of the base spirit (Gin) with all the powerful flavours used in Thai cooking. Chilli, Thai basil, cilan-tro, soy and more.
UMESHU (Plum Wine) - a Japanese li-queur made by steeping plums (while still unripe and green) in alcohol and sugar. It has a sweet, sour taste, and an alcohol content of 10–15%.
VERMOUTH - an aromatized, fortified white wine flavoured with various botanicals and sometimes coloured.
