21 Water Activity, aW Water activity means the amount of water present in a product that is not chemically linked to its molecules and therefore "free" or "available" for microbial development. Consequently, it is a fundamental parameter for determining the durability of a product over time, that is, its "shelf life" The water activity or aW is part of the total water pre-sent in a product which is called "humidity". Water and humidity activities are therefore two parameters linked between logos but at the same time different which give us different information about product and which can be determined with different techniques. Waterlab is an indispensable tool for the quality con-trol of products and ingredients in the food, pharma-ceutical and cosmetic fields. Wherever it is necessary to study the shelf life of a product in order to determine its risk of microbial development and therefore its shelf life over time, Waterlab is the ideal solution.

Waterlab is also the most performing instrument on the market thanks to its dew point sensor which measures the actual water activity (aW) and not related and secondary parameters. For this reason dew point sensor is considered the reference point for these determinations. 23 Tartaric stability in wine Tartaric stability is linked to precipitation phenomena caused by potassium and tartaric acid present in wine. Initially these two substances are present in the grapes but not in contact but, when the grapes are pressed, this two substances are mixed together and can create problems of precipitation of potassium bitartrate. This precip-itation is a slow process that can take place in the cellar after the fermentation of the must or directly in the bottle, after bottling the wine, once the wine reaches the shelves of the wine shops. This phenomenon does not cause any organoleptic damage in the wine but certainly, from the visual point of view, the wine is not accepted by an increasingly demanding consumer.
