This magazine, distributed locally to hotels, tourism organizations, and office lobbies, serves to provide a guide of restaurants, accommodations, events and activities in combination with interesting articles - usually focusing on Belizean Cuisine, the corner stone of the Flavors of Belize magazine & cookbook. THE COOKBOOK

When I created the first edition of this guide, my desire was to expose you to Belize’s assortment of culinary offerings and simplify choosing a restaurant while here in Belize. I couldn’t be more thrilled with the reception of our first edition from both our advertisers and visitors who were using our guide! This enthusiasm for the guide as well as the rapidly growing worldwide interest in international & ethnic cuisine has mandated us to not only publish this second edition of Flavors of Belize, but also to create an all-inclusive cookbook of authentic Belizean recipes. In June 2012, our team will be pleased to launch ... Flavors of Belize - The Cookbook.

Soon, visitors and locals alike will not only be able to eat at the great dining establishments in our country, but also have the opportunity to recreate the meals they experienced and share them with family and friends.

Every meal is a new discovery! As a visitor here in Belize, experiencing our unique cuisine gives you the opportunity to participate in our rich culture. With the

influence of thirteen different cultural groups, there certainly is no shortage of delicious and inspiring food in Belize. Navi-gating the restaurants, bars, and local hotspots will add adventure and excitement to your meals and Flavors of Belize is here to assist in that process.

We sincerely hope that your visit to our fascinating country will leave you with a lifetime of memories and that you will be

A message from Mrs. Kim Simplis BarrowFlavors of Belize delves into an aspect of our country that is influenced by the Mexican, Guatemalan, African, Caribbean, Mayan, Garífuna, English, Chinese, Indian, Lebanese and American cultures which coexist in this small gem we call home. This makes it almost mandatory that Belizean cuisine is not relegated to only one or two dishes anymore. The cultures that are spread across the country’s regions have combined their history and traditions with the natural offerings of Belize to produce food that is no longer defined in limited terms. The influence of our Central American neighbors and their own multi-cultural population compounded by the arrival of visitors with discerning palates has resulted in a higher standard of cooking throughout.

Belize is truly special!

Sometimes it is not what you have to offer, but what you don’t offer that makes a destination special.

Belize is one of the very few countries left in the world that doesn’t have any international food franchises within its borders.

Think about it, this makes us really unique ... no golden arches, no casino pizza’s, no TV commercials that brainwash our kids into buying unhealthy food because of a cheap toy.Most of the restaurants you’ll find in Belize are family owned operations. The owners of these places are an interesting mix of distinctive Belizeans, new Belizeans, and expats that have made Belize their new home and they are very often fully involved in all aspects of their eateries.

They refuse follow what franchise’s push on them, but put their heart and soul in every dish that they serve you. Every single restaurant you visit in Belize has its own unique identity. Because of our cultural diversity, we also have a large culinary range to offer. In the northern and western part of our tiny country you will find a lot of ‘Spanish’ influence in the food with dishes like ‘relleno’s and taco’s, while in Central Belize our national dish is ‘Rice and Beans’ (in several variations) and it is very popular! In Spanish Lookout you will find several restaurants serving ‘Mennonite’ dishes, while you will find Chinese, Taiwanese and Indian eateries all over Belize.

On the coastal areas and cayes, seafood is king! While in towns like Dangriga and Hopkins the Gariguna cuisine flourishes and of course you will find the corn and bean based gastronomy of the Maya’s in place like Maya centre and Punta Gorda as well as up North. In the last decade we have seen numerous new ‘Belizeans by Choice’ opening restaurants adding to the eclectic culinary mix.

We are proud of our natural products and show this in our food festivals all over the country. (Lobster Fest, Cashew Fest, Mango Festival, Cacao Fest.) You name it, we have it, and there is always a reason to party in Belize.

While eating close to the source became a trend all over the world, it only comes natural to us in Belize. We don’t import a lot of our fresh products, they are all grown in our back yard. Most of the ingredients are grown on a small scale, especially compared to international standards, no GMO products are allowed in our country, cattle is all grass fed and of course the seafood is provided by king Neptune himself.

If you really can’t survive without your factory food franchises, Belize might not be the place for you, but if you are open to unique, fresh and individual cuisine in many varieties, come and dine with us…

JULYPibil Fest: A traditional way to cook pork - wrapped in banana leaves, buried in a pit with a fire at the bottom and roasting it. The Mayan word “pibil” means “buried”. A host of activities are held in the village of Progresso during this festival.

Belize International Film Festival: This festival showcases Central American and Caribbean films.

AUGUST International Costa Maya Festival: Held in Ambergris Caye. The festival hosts international music groups as well as a beauty pagent, cultural dances, international cuisine and arts and crafts.

SEPTEMBERCarnival Road March: This yearly march through the streets of Belize highlights our many cultures and history and displays the vivid colors and creativity of our people.

St. George’s Caye Day: September 10th, this public and bank holiday is in Celebration of the Battle of St. George’s Caye Day. Official ceremonies and Citizens’ parade and fair are held.

Independence Day: September 21st, the anniversary of Belize’s Official Independence Day, granted in 1981. Ceremonies and national parades are held throughout each district.

NOVEMBERBattle of the Drums: A celebration of Garifuna music and culture with live performances by some of the foremost musicians at work today. The Battle of the Drums is a Garifuna drumming competition allowing drumming groups to compete and showcase their musical talents by playing 5 different categories of Garifuna music.

Garifuna Settlement Day: November 19th marks the arrival of the Garifuna people to Stann Creek and is mainly celebrated in Southern Belize. The re-enactment of their arrival is the main attraction along with religious and cultural activities as well as a parade.

DECEMBERHoliday Boat Lighting Parade: During the holiday season boats are decorated and sail from Boca del Rio to Coconuts Hotel in San Pedro. Prizes are awarded to the boats displaying the most creativity in overall design. The award party hosted after the event has something fun for the entire family.

FEBRUARY San Pedro Carnival: A three day carnival to celebrate the Easter Season. This yearly celebration starts three days before Ash Wednesday.

MARCH La Ruta Maya Canoe River Challenge Race: This monumental race starts in San Ignacio. The four day canoe race retracts the route of the ancient Mayas and ends at Belcan Bridge in Belize City.

Chocolate Week: Hosted by Cotton Tree Lodge, this week is centered on the history of chocolate in our country.

Maya Day: Held in the quiet area of Tumul K’in, Blue Creek Village. This day highlights the unique culture being preserved down south. APRILSan Pedro Lagoon-Reef Eco-Challenge: This Eco-Challenge is a 42 mile, two day kayak race starting on the lagoon side of Ambergris Caye, through the many lagoons in the Northern Ambergris Caye area, up to Bacalar Chico, then down to Robles Point, where all teams camp. The race ends in San Pedro Town.

MAYCashew Festival: Held in Crooked Tree Village, this festival celebrates the cashew harvest season, where live punta music, cashew wine, desserts, Caribbean style dishes and games are the main attractions.

National Agricultural & Trade Show: This trade show is held annually in our capital city of Belmopan. It highlights agricultural diversification, food, rodeo, livestock, handicraft displays, music, games, and food. It’s a great event for the entire family!

Toledo Cacao Festival: The festival opens with a “Wine & Chocolate Evening,” featuring local and international wines and chocolate based cocktails. Saturday brings you the Taste of Toledo Cookery and Craft Fair, with chocolate demonstrations and a host of cacao-related and other craft produce, Cacao for kids children’s activities, Sea Toledo marine trips, and culture in harmony musical performances.

Monkey River Festival: The country’s leading Creole event which includes traditional games for adults and children including the greasy pole, watermelon eating, lime and spoon, tug-of-war, three legged race, needle and thread and sack races along with Jankunu stick, a challenge to all Jankunu dancers throughout Belize to come and show off their stick walking skills – an old tradition which Monkey River Village is determined to revive.

JUNESan Pedro, Placencia and Caye Caulker Lobster Fest: In celebration of the opening of the lobster season these three locations offer a week full of activities. A wide array of lobster dishes are show-cased and activities such as fishing tournaments, bicycle races and social events take place.

The range of dining styles available at San Pedro and Caye Caulker cater to a variety of visitors that include these two islands just off the coast of Belize City in their travel plans. For many years, agriculture was Belize’s largest industry and next to tourism, is still one of the largest contributors to our country’s economy. The country’s climate and topography create the perfect environment for growing a wide variety of fruits and vegetables. As a result, farmer’s markets throughout the country offer a resplendent selection of produce. A visit to one of these markets is a great supplement to eating a the restaurant and is truly an enjoyable experience.

Papaya, mango, banana, watermelon and oranges are the most common fruits served on breakfast plates. However, many others should be tried. One is soursop, a fruit with a green, prickly skin that is white and milky on the inside. This seasonal fruit is enjoyed in juices, ice cream, popsicles, or raw and served with milk. Other varieties include mangoes, star fruit, craboo, breadfruit, dragon fruit and cashew fruit.

In addition to the more familiar vegetables, many farmers also grow some unusual varieties. Cho cho, a mild flavoured squash also known as mirlton or chayote, is commonly served raw in salads and also baked, fried, boiled and stuffed. Chaya is a green leafy plant that is sometimes called “Mayan spinach”. It is rich in several vitamins and minerals. Chaya can often be served as cooked greens or in scrambled eggs.

San Ignacio is the largest town in Cayo - Belize’s largest and most fertile district. This region also boasts the most diverse terrain - from rolling hills and sweeping farmlands devoted to citrus orchards and cattle farming, to lush river valleys and rugged mountain ridges covered in sub-tropical jungle.

San Ignacio has seen a resurgence of interest in traditional food and the stories that come with them. In creating the present and inventing the future of Belizean cuisine, restaurants in San Ignacio are looking to the past for their foundation and inspiration. San Ignacio presents the unmistakable feeling that things now are still a lot like things were back then. And as far as food is concerned, that element helps to ensure an authentic experience when dining. Placencia is 16 miles of natural beach, mangrove-studded lagoons, three different cultural groups, and has become one of the most popular places to visit in Belize. The restaurants on the Placencia Peninsula offer a diverse mix of cuisine, including Garinagu, Creole and a variety of International selections which make eating in a destination this size not as limited as one would think. Placencia’s geographical mix of beach and village allows for a culinary combination of seafood and root food at its freshest and in great variety. There really is nothing quite like the taste of seafood that was caught a mere 30 minutes before it’s prepared and served to you. This kind of eating is the standard on the coast and cayes of Belize. The seafood is always fresh and relatively inexpensive. A gourmet treat for Belizeans is the Caribbean spiny lobster (Panulirus argus). Lightly grilled lobster-tail served with drawn butter is perfect, or try it in fritters, soups, bisques, salads and even burgers. Lobster season runs from June 15 to March 15.

Like lobster, conch can also be enjoyed in a variety of ways - conch steak, fritters, ceviche, and soup. Because it’s in season all year except for July, August, and September, it is a mainstay of every island restaurant and many inland destinations serve it as well. For fish, Snapper and Grouper is most often seen on restaurant menus as well as farm-raised Tilapia.

A favorite for Belizeans is ceviche and while every restaurant serves it their own way, it’s always delicious. Its versatility is perhaps what makes ceviche so great because it can be made with all of the seafood available in Belize: conch, shrimp, lobster, fish, or even octopus and squid. It’s the perfect mix of seafood, citrus, vegetables and herbs.

Ingredients1 pound conch, trimmed, peeled, diced1 pound tomatoes, deseeded, diced½ pound cucumber, deseeded, diced½ pound onion, diced, rinsed with cold water½ pound carrots, peeled, diced½ cup cilantro, chopped1 habanero pepper, deseeded, chopped, optional12 large limes, juicedSalt, to taste1 teaspoon freshly ground black pepper

DirectionsWash conch thoroughly before dicing. In bowl, combine all ingredients & season to taste.Marinate in refrigerator for at least 1 hour before serving. Serve with tortilla chips.

Note: When conch is out of season, lobster, tuna fillet or shrimp may be substituted.
