Dancing prawns, basking mermaids, Coco de Mer naughtiness — what an extraordinary first year for Sexy Fish. The team has dressed for all occasions since we opened at the end of 2015 — their floral Liberty-print resplendence was a personal favourite — and there have been remarkable sights and sounds to dazzle the senses. Flashbacks include larger-than-life crocodiles, a short film on our Japanese whiskies, neon lights, pumping basslines and an outrageously decadent floral fish for Chelsea Flower Show. Column inches have been galore-ious!
We’ve created this magazine to celebrate a new season of cocktails. Our bar team has been stirring, sipping, shaking and experi-menting, with history-making mixology. Art in all its guises — design, fashion, sculpture, cuisine — has been their muse and wit, as ever, is an important ingredient. Take a bow, Rice

So in awe were we of the dress made from 50,000 gummy bears in honour of McQueen, that we concocted our own candy-inspired cocktail as an homage to NYC’s TWELV magazine. Sharp and slightly spicy, served straight up with a gummy mermaid.

The poppy is a mesmerising flower — not least for its fierce ruby tint. Valentino loves this colour so much that his favourite shade is dubbed “Valentino Red”. “L’enfant terrible de la mode” John Galliano was born in Gibraltar; this is a tribute to his Spring ’08 Couture collection for Dior. Son of a flamenco teacher, he loved the dresses of the dancers, so we decided to emulate this in the drink by layering vibrant flavours.

Award-winning Mexican designer, Carla Fernãndez is more than just a celebrated fashion stylist. We found our inspiration for this drink in the French artist Niki de Saint Phalle and her colourful outdoor sculptures of extravagantly voluptuous female figures. Frida Kahlo has long fuelled fashion and art with her self-referential-inspired work, bright colours and dramatic symbolism, not to mention her famous monobrow. For Frida, we keep the process simple and effective, serving it up in traditional Mexican style.

Austrian fashion designer Julia Skergeth caught the attention of the industry and the public in London by designing a shoe made out of bio resin and 13,896 grains of rice. We followed her lead with Rice Rice Baby. We’ve had a bespoke mermaid tiki mug made for the occasion.

Pablo Picasso’s cubism has been a motivator for fashion designers the world over, in particular Oscar de la Renta and Castelbajac, and, more recently, French designer Jaquemus. We were captivated by his 1912 painting “Glass and bottle of Suze” and have made our own version.

My, how front rows have changed! More the domain of celebrities and star style bloggers than pure fashionistas or editors, but still a place to see and be seen. We wanted F’row to be elegant and polished. It’s unspeakably pretty and worthy of the most intense of gazes.

Until we researched the rainbow eucalyptus tree, we hardly knew anything so beautiful could exist. Google immediately (well, after you’ve ordered your drink) and admire how this tree’s bark peels off to reveal layers of mesmerising colours. Any self-respecting textile manufacturer would kill to reproduce such magnificence.

Home to the world’s second largest Japanese whisky collection, Sexy Fish is also filled to the gills with connoisseurs drawn to our continent’s most significant hand-picked selection of these revered Asian-made spirits. It’s taken five years to curate a unique collection of 242 bottles (and counting!).
As with all things Japanese, the beauty in handling, serving and drinking Japanese whisky is intense. As the genre attracts more attention, it has become more challenging to secure new additions. We spend at least a few hours every week tracking down expressions from distilleries current and closed, sourcing bottles from all corners of the globe.
Our flights and presentation trays are bespoke. Ice is created from crystal clear water and hand carved. Even the bottles are works of art. The Japanese whisky menu at Sexy Fish has been thoughtfully put together with listings, maps, history and background on each of the expressions. The complexity of distillation and production is countered by a purity on the palate. It’s hard to explain without you trying it, but when you do, you’ll understand why Japanese whisky has melted the hardest of hearts and earned the loyalty of the most staunch Scotch or bourbon aficionados.

An air of mystery hangs over this drink. The fifth taste, savoury umami, is the most difficult to pin down, but in this case, vodka makes the best bedfellow. Served in a frozen bottle alongside kingfish sashimi, we have gone against the grain and used seawater sake instead of traditional vermouth.

Inspiration for our interiors?We were influenced by the style and sophistica-tion of a mid-century brasserie, then we made it more contemporary and relevant by incorpo-rating patterns and motifs from the ocean such as the fish lamps by Frank Gehry, the ceiling mural of a coral reef by Michael Roberts and Damien Hirst’s mermaids.
Greatest challenge? Sexy Fish has a very impressive art collection, which works well as part of the interior. It was the first time that we have worked so closely with such prolific artists — it was exciting but also relatively new for us — and so we made sure we were constantly communicating between all parties.
If you could take a little bit of Sexy Fish home, what would it be?
I’m not sure I could fit a Frank Gehry crocodile in my apartment, so perhaps one of the rose-gold Cheriton bar lamps by And Objects.
Any special considerations with a project like this?

A Negroni.
If you had to sneak a drink somewhere in London other than Sexy Fish, where would it be?
I wouldn’t have to go far, Annabel’s — the private members’ club just across Berkeley Square — is a great spot for a nightcap. I’m also partial to a drink at Scarfes Bar at the Rosewood Hotel in Holborn; the satirical murals make it an interesting place to pass the time.
If you could have a drink with anyone at the Sexy Fish bar, who would it be?
Other than my partner? Perhaps the Italian architect, Carlo Scarpa. The staircase down to the private dining room is inspired by his designs for the Olivetti Showroom in Venice — I’ve always admired his work.
What do you cook at home?I tend to eat out a lot, but when I get the chance to slow down and be at home, I enjoy cooking a traditional roast. It’s a long process but once mastered, it can be quite therapeutic, not to mention sociable, as we always have guests over.
Who is your style icon?Diana Vreeland.
Song for a party mood?Dóris Monteiro’s ‘Mais Um Adeus’.

A Reinvented Recipe

25ml Martell Cordon Bleu
10ml Peach liqueur (Preferably Merlet)
2 dashes Angostura bitters
2 dashes Rosemary bitters (Droplets work well)
Sugar cube
Champagne
Take a Champagne flute (a Champagne saucer will also work), and add the Cognac and the peach liqueur. Place the sugar cube (brown or white, depending on your preference) on a small plate and drop 2 dashes of Angostura bitters and 2 of rosemary bitters on it; let it soak for a few seconds. Then, using a small tong, place the sugar cube in the flute. Top up with your favourite Champagne. Garnish with a generous twist of orange peel.
