Honey Orange Flavored Walleye Fillets1 lb. walleye cut into fillets1 teaspoon oil1 tablespoon honey3 tablespoons frozen concentrated orange juice1 tablespoon soy sauceWhite pepper to taste Method of PreparationCombine all ingredients except for the fish in a bowl. Once ingredients are combined, place fillets in mixture to marinate for two hours before cooking.

Take fillets out of marinade. Place pan or grill approximately four inches from a heat source and grill or broil. Turn fish once during cooking process. Make sure to brush fillets frequently with marinade. Cook fish for ten to fifteen minutes. Fish should be easy to flake with a fork when cooking is complete. Combine water, juice of lime and egg in a bowl. Beat to combine mixture. Mix flour, pepper and onion salt together on shallow plate. Coat each fillet with flour mixture then dip the fillets into the egg mixture. Rolling the fillets in the bread crumbs last will coat them nicely. Place all of the fillets in baking dish with melted butter. Bake in preheated oven for between fifteen and twenty minutes. Cooking time will vary depending on the thickness of the fillets. Fish should flake easily with a fork once the cooking is complete. Serve immediately.
