Federal Foods has awarded Fujitsu Consulting the deployment project of SAP software solution that will bring a number of ERP modules to improve business processes and help applying Best Business Practices across Federal Foods diversified operational landscape.

With this deployment project, Federal Foods will look to achieve a number of benefits including standardization, integration, simplification and streamlining of business processes, better use of staff time through cutting paperwork, adoption of best practices and improving customer service.

The past few months have been extremely busy for the family of Federal Foods especially in developing and completing the

stages of SCORE project. I am delighted to see this level of commitment and excitement for SCORE given the increasing challenges we are facing daily. This is truly encouraging for all of us at Federal Foods. This period is an extraordinary one from the professional angle as well as a great opportunity to be part of an adventure with the spirit of a winning team. This exciting journey will design Federal Foods’ future and build Best Practices that will take into a promising future better equipped.

As I conveyed to you in the previous Newsletter, speed of execution is very important, it’s a tough challenge but it is the only way forward to keep Federal Foods successful and vibrant.

It is imperative to mention, that the initiative to restart Federal Foods’ Newsletter is commendable, and I feel privileged to be part of it, and I am confident that this initiative will continue and you, Federal Foods family, will not only enjoy reading this Newsletter but will make valuable contributions to it. Federal Foods LLC and India Gate announce Distribution Partnership in the UAE.

As of July 1st, 2011 Federal Foods started offering the trade in the UAE a repertoire of India Gate Classic Basmati Rice, the world’s longest Basmati rice, which has a predominant presence in the Middle East and USA.

Adel Al Nowais Vice Chairman of Al Nowais Investment and Managing Director of Federal Foods commented, “At Federal Foods we strive to partner with brands that have a mission similar to Federal Foods and our family of distributed brands and to provide services that enable these brands to grow.

Mr. Arshad Khan from India Gate, added, “Federal Foods is widely recognized in the region as one of the leading “marketing and distribution” companies in the UAE and is the

largest independent distributor in the UAE. By harnessing Federal Foods’ dedicated resources, this partnership will broaden the range of Basmati Rice we offer in the UAE and generate new commercial opportunities. At the same time, it enables India Gate to re-focus our efforts on growing our business in the region, as well as bolstering our promotional activities.”

A stock of frozen chicken and seafood products along with canned food was donated to Action Care – Dubai, a faith-based, non-profit charitable organization dedicated to providing services for the ‘less fortunate’.

“Federal Foods contribution to Action Care services and the future donations and contributions to other charitable organizations reflect our efforts to increase the support of our community. Federal Foods believes investing in our community is investing in our future. We hope our increase in sponsorships and non-profit partnerships will open more doors for the neighboring communities,” commented Shehzad Ahmad Director of Business Development”

Federal Foods LLC hosted a frozen and canned food donation throughout the month of June 2011.

Sadia, one of the leading brands of frozen foods distributed by Federal Foods LLC in the UAE, has partnered with the “Dubai Cares Girls’ Education Campaign 2011”, offering UAE residents an opportunity to contribute to a worthy cause. Throughout the Holy Month of Ramadan, all Sadia products have featured the Dubai Cares logo and messages on girls’ education. The UAE community can contribute to the campaign (campaign will last until no. 2011) in support of girls’ education worldwide by buying Sadia products.

As stated by Tariq Al Gurg, CEO of Dubai Cares

“This campaign aims to raise awareness of the plight of girls in developing countries and to mobilise the UAE community to help change their lives by donating towards Dubai Cares programmes that focus on girls’ education,”.

It is imperative to mention that children of women who have completed primary school are 40% less likely to die before the age of five, yet of the 69 million children out of school, an estimated 42 million are girls. Studies have shown that girls who receive education are able to pass it on to their children and eventually the community at large.

From 21st to 23rd November Federal Foods LLC took part in the SIAL Middle East show to be held at Abu Dhabi National Exhibition centre

Adel Al Nowais, Vice Chairman of Al Nowais Investment and Managing Director of Federal Foods said. “We are delighted to participate in SIAL Middle East 2011 – Abu Dhabi, as with no doubt it will contribute to the overall business development efforts in the region. On the occasion of the holy month of Ramadan, and out of its belief in the importance of enhancing its united family spirit, Federal Foods LLC held its annual Ramadan Iftar function for its 1,300 employees at Maktoum Hall, Dubai World Trade Centre on August 18, 2011.

During the event, the senior management welcomed all employees from various departments, praising the family spirit and the positive vibes that Federal Foods’ activities are renowned for. Also the management expressed its sincere appreciation to all employees for their loyalty and commitment to Federal

Foods and their on-going efforts to enhance the company’s operations in the UAE & Qatar markets, and their commitment to its current and future success.

The Iftar function had a variety of entertainment programs as it included the distribution of gifts and prizes amongst employees, in addition to the holding of an interactive quiz competition which added much enjoyment to the unique and enthusiastic spirit of the event.

The Lucky-draw prizes were sponsored by Air Arabia, UAE Exchange, Wild Wadi and India Palace.

A crowd of well-wishers was on hand at the June 29 office ceremony of Federal Foods Credit Control Department to honor Pandarathil Karunakaran Sasidharan – Branch accountant as he is retiring after he wrapped up 18 years of employment at Federal Foods.

Federal Foods’ CFO Mr. Hassan Sharafeddin, opened the ceremony by thanking Sasidharan for his dedication to Federal Foods, elicited his contribution to the “one family one team” office environment over the last 18years and wished him a healthy and happy retirement. The CFO

then presented Sasidharan with an engraved plaque commemorating his years of service.

Sasidharan thanked the CFO, the Directors of Federal Foods and those present for the kind words, admitting that he was somewhat taken aback by this event and said: “I’m glad I’ve been able to be of service to Federal Foods. This is my home but now it’s time to spend some time in my home country where I was born.”

The crowd then enjoyed refreshments served by his colleagues while congratulating him.

Federal Foods honors 18-year employee at retirement ceremony

Federal Foods was awarded the Top Goal Scorer trophy for the second time in a row while securing the 2nd position in Dubai Corporate League Championship - July 2011

In the final matches of Dubai Corporate League last July, Federal Foods football team secured the 2nd position of Dubai Corporate League Championship.

in a row proved just why he deserved the title as he netted 13 great goals while team mates

opponents’ nets (Dubai Financial Market, Emirates Flight catering, Al Barjeel) to secure the 2nd position for their team.

Speaking to the Captain of the team Hassan Hisham, “We started out wanting to give our final opponent – Dubai Financial Market a good game and I think we did. We played with a compact defence and hit on the counter-attacks and that made it difficult for them. I think we did well to maintain our position as the 2nd best. We’re very happy with it and we’re confident to snatch the top position soon.”

Employees of Federal Foods LLC & Danway LLC gathered in Fun Bowling Tournament

Out of the very busy schedule, both companies Federal Foods LLC and Danway LLC (both are a subsidiary of Al Nowais Investment) have organised a bowling tournament for their employees and top management members to have fun and get away from their heavy work schedules.

Attendees formed 7 teams and participated in this Fun tournament that took place on July 27, 2011 and Federal Foods won.

Step 1: Get a lot of potatoesThe potatoes used in the production of French Fries come either directly from the producers (farms) or from rather large warehouses, depending on the location of the processing plant and the time of year. The potatoes are checked for solids content (how much water vs. how much non-water), grades (how good the spud is) and sugar content (is it too old?).

Step 2: Peel themThe most common method for peeling in the French Fry industry is the steam method, in which a whole lot of tubers are put into a rather large, pressurised tank which happens to be pretty hot, too. After enough time, the pressure is quickly released and the potato skin is said to fly off. After the potatoes come out of the peeler vessel, they’re sprayed with high-power water jets to remove any peel still clinging. The removed peelings are either processed as cattle feed or run through a system which lets them decompose and uses the resulting methane to offset the energy needs of the plant.

Step 3: Inspect them the first timeThe naked potatoes run past an inspection line where machines sorts & remove any potato which looks defective (clear potato rot or bad shape or anything else that might cause problems). The rejected potatoes are taken away to grind them and the resulting potato starch is used in things like chemical glues and papermaking (as sizing or binder). They don’t waste a thing!

Step 4: Cut them up.Next stop is the cutter. The potatoes go through a centrifugal pump and are shot out at about 50mph (80 km/h) at some stationary blades which chop the tuber into what the industry calls “strips”.

Step 5: Inspect them againThis time, all the little chips and bits (like the quarter-round bits left which come from the outer

edge of the potato) are removed, as are any strips with black bits (which weren’t visible during the first inspection). This black bit removal is done through automation. Cameras and detectors notice the discoloration and the entire strip is knocked out of this machine to another. These machines are pretty high-tech and can inspect and decide the fate of up to 1,000 strips and chips each second!

In this second sorter, more sensors detect bad bits and automatic knives remove them. The bad bits are sent to grinding and the leftover good bits (and all the little chips that are too small to be French Fries) go on to a new life as hash browns or elsewhere in the processing plant.

Step 6: BlanchingThe twice-inspected strips have made the grade and are now on their way to being processed into French Fries. The next step is blanching. Despite the picture shown here, blanching is actually done

with the strips on a moving conveyor chain which carries them through a rather large vat (or a few vats) of hot water. The time and temperature of the blanching is adjusted continually in order to remove excess sugars and to give a consistent, uniform colour.

Step 7: DryingThe next thing to do after the blanching is to

partially dry the strips. Basically, the strips stay on this chain-belt and after they

come out of the water, they go through another machine which blasts hot

air from both the top and bottom, partially drying the chips... sort

of like the dryers at automated car washes.

Step 8: Par-FryingNow we’re back in familiar territory. The “par fry” (or “partial fry” is a cooking stage where the strips are cooked for a about a minute and a half in oil that’s a bit hotter than normal French Fry cooking temperatures.

All frozen French Fries are par-fried at the

manufacturing plant before you fry them completely at

home. This is one of the reasons that when you cook French Fries

at home, they just don’t seem the same.

Step 9: The Deep FreezeThe final step is blast freezing of the strips.

Blast freezing is a method that freezes the French Fries which travel down on the wire conveyor using air cooled down to about -40° (Celsius or Fahrenheit -- they’re same at -40) so that only small ice crystals form. This prevents them sticking together and helps protect the flavour.

Step 10: Wrap them up and ship them outAfter the processing is done, the French Fries are bagged and/or boxed and shipped out to their final destinations (distributors, restaurants, and supermarkets) where they are then cooked to order. You don’t want French Fries which have been cooked more than about 5-10 minutes in advance since they get limp, greasy, soggy and cold.

Method1. Bring 3 litres of water to the boil and add 1 table spoon of salt and a drizzle of oil.2. Add the pasta and cook at the medium level by stirring occasionally.3. Cook the pasta for about 7 to 9 minutes, drain and set aside, keeping warm.4. Slice the chicken breast into strips.5. Heat a frying pan with a little butter and oil and fry the chicken until just browning.6. Drain and set aside.7. Spray frying pan with cooking spray.8. Add the onions and coriander seeds and fry till soft.9. Add the mushrooms, stirring occasionally and cook until soft.10. Add the garlic paste, stir well, and cook for about 30 seconds.

11. Add the flour, stirring it into the veggies.12. Pour in the milk and whisk continually until well combined.13. Cook until it thickens, about 10 minutes.14. Once it thickens add the salt and pepper to taste.15. Lower the heat, stir in the cream cheese and cream, and continue stirring until well combined.16. Add the emmental cheese, stirring until combined.17. Add the chicken, pasta, and broccoli to the skillet.18. Allow to heat over low heat until all ingredients are hot.

Ingredients 400 g Melda Penne Rigate450g Sadia Skinless Chicken Breast¼ cup onion, diced1 tsp Majdi Coriander Seeds2 cups Emborg Sliced mushrooms2 tsps Shan Garlic Paste1 tbsp Whitworths Plain Flour1 ½ cup KDD MilkSaltPepper, fresh2 tbsps Uhrenholt Cream Cheese2 cups Emborg Cooking Cream1 cup Emborg Broccoli, defrosted, halved and set aside¼ cup Emborg Emmental Cheese, grated

Serves: 8 - 10Prep time: 1 hour, plus setting & chillingUtensils: Mixing Bowls, Wire Whisk, 22cm Spring Form Tin, Wax Paper, Wooden Spoons, Scale

Crust250 g ETI Finger Biscuits, crushed into fine crumbs50 g Whitworths Demerara Sugar150 g Val de Lesse Butter, melted

1. In a mixing bowl, mix together the biscuit crumbs and Demerara sugar. 2. Add in the melted butter and mix well.3. Spoon the biscuit mixture into a 20cm spring-form cake tin lined with silicon paper or baking parchment. 4. Use a metal spoon to press the biscuit crumbs down firmly and evenly. 5. Chill in the refrigerator until set

Filling3 tsp Gelatine½ cup Water, cold500 g Uhrenholt Cream Cheese75 g Whitworths Icing Sugar1 tsp vanilla extract500 ml Emborg Cream, whipped

2 tsp Grated Lemon Peel2 tbsp Lemon Juice

1. Sprinkle gelatine in cold water in a heat-proof bowl. 2. Let sit until gelatine is softened. 3. Microwave, uncovered, at 100 percent power, at intervals, for a total of approximately 45 seconds; for each interval, microwave for 10 seconds and check it in between. 4. Watch the gelatine mixture carefully because you don’t want it to boil, otherwise it must be discarded.5. In a large mixing bowl, using a whisk or a wooden spoon, beat together the cream cheese, icing sugar, peel, juice and vanilla extract until well mixed.6. Fold in the whipped cream, mixing well.7. Fold in the gelatine mixture.8. Spoon the cream mixture over the chilled biscuit base, making sure that there are no air bubbles.

9. Smooth the top of the cheesecake with a palette knife or metal spoon.10. Chill the cheesecake in the refrigerator until set.

Strawberry Glaze½ cup Whitworths Sugar1 tbsp Cornstarch1 pkt Frozen Emborg Strawberries, defrosted

1. With fork crush berries.2. In small saucepan combine berries, sugar and cornstarch.3. Add ½ cup water.4. Bring to boiling, stirring, until thickened and translucent.5. Strain; cool.6. Glaze one hour before serving.

To serve1. Loosen side of pan with spatula, remove.2. Arrange some of fresh berries over cake.3. Top with some of glaze.4. Serve rest of berries in glaze with a spoonful of KDD Thick Cream.
