In 2018, the Kingdom of Saudi Arabia and France signed a long-term project to protect, develop and promote AlUla’s historical and cultural sites, thus creating a thriving economy in line with Vision 2030. A region of outstanding natural and cultural significance in northwest Saudi Arabia, AlUla is home to the Nabataean city of Hegra, which has been a UNESCO World Heritage Site since 2008.

As one of the Kingdom’s primary cultural development projects, both nations will embark on a collaborative project to develop the historical sites of AlUla and the necessary infrastructure for tourism which shall gradually transform the region in a sensitive way.

Following the bilateral agreement, the French Agency Afalula was founded to support Saudi Arabia in the economic, touristic and cultural development of AlUla. It sets out an historic cooperation between the two nations which aims to make the AlUla region a world-class destination, appreciated by visitors from around the globe.

In this context, the prestigious French culinary institute, FERRANDI Paris has joined forces with the Royal Commission for AlUla (RCU) to offer the people of AlUla a unique training program in gastronomy to prepare the regions’ future chefs and culinary entrepreneurs.

A program designed especially for AlUla

This program has been specifically designed with a view to developing the culinary skills AlUla needs to meet the objectives set forth in Vision 2030.

In line with FERRANDI Paris’ hands-on teaching philosophy, the majority of course time will be spent practicing skills and producing recipes, in groups limited to 12 participants. The program will be intensive and will include on average 35 course hours per week, over half of which is spent in the teaching kitchen or lab learning the techniques and secrets of French gastronomy.

Classroom sessions focus on technical knowledge and understanding essential processes and techniques. Instructor feedback and guidance aims to help each individual progress within the group and to foster a team-oriented mindset. Insight on French food culture and gastronomy through chef demonstrations, professional excursions and meetings with artisan and industrial food and equipment producers will also be included. A team of dedicated chef-instructors will deliver the programs. They have in common their extensive industry experience in France and abroad, high-level culinary skills and their enthusiasm for their role as professors and mentors of the future generation of French-trained, international chefs.

PROGRAM CONTENT

Discover France’s emblematic recipes, which made French gastronomy the world’s reference for extraordinary taste and refinement. You will learn culinary technique through thematic workshops that will also give you an understanding of the cultural and regional influences that have made French cuisine what it is today.

The Classics of French Cuisine

Continue to progress toward your mastery of fundamental culinary techniques (knife skills, sauces, cooking methods …) while discovering the creative processes and modern techniques involved in plating, food design and styling.

Creativity and Contemporary Cuisine

During AlUla’s Winter at Tantora festival, you will participate in the elaboration of prestigious dinners organized by RCU, and work alongside some of the world’s most well-known chefs. This unique experience will provide you with the skills and knowledge to manage high-profile events.

Event Management

You are part of AlUla’s future development. Through the study of international experiences in the development of eco-responsible and sustainable tourism projects and with the expert insight in culinary marketing and restaurant concepts, you will work in groups to imagine what Saudi Arabian gastronomy will look like in 2030.

Sustainability in Gastronomy and Tourism

Throughout the program, you will be invited to experience Paris’s distinctive food culture: the Rungis International Market, the Versaille Castle‘s vegetable garden, and a « Paris by Night » dinner cruise on the Seine river …
