Groundhog Day: This tradition comes from German roots and is based on Candlemas, which is the midpoint between
winter and spring. Legend has it that if Punxsutawney Phil, named after the site of the annual Ground Hog
Event, sees his shadow there will be six more weeks of winter. He has been making his predictions since
1887. Fun Fact: records reflect that Phil has seen his shadow approximately 9 out of 10 times!
Super Bowl Sunday: An unofficial American holiday, it is one of the most watched TV broadcasts and in the U.S. is
the second largest day for the consumption of food. It started when rival football leagues, the National Football League
and the American Football League, merged to create two conferences (the NFC and the AFC) within one league that
compete against each other once a year in what is now called the Super Bowl. Due to such high TV
viewership, commercials during the program are often the most expensive and talked about commer-
cials throughout the year and have become a major viewing draw and talking point. Fun Fact: The NFC
leads the AFC in Super Bowl wins at 26 to 23.
Chinese New Year: According to legend, the origins of this celebration are based on a mythical monster who preyed
on villagers. The story goes that an old wise man had the villagers make loud noise and hang red papers on their doors to
scare off the monster. This has morphed into the current traditions of lighting fireworks, playing drums,
lighting red lanterns, and hanging red paper cutouts on doors. The Chinese New Year is based on the lunar
calendar, which is the moon’s orbit around the earth, instead of the western Gregorian calendar, which is the
earth’s orbit around the sun. Fun Fact: 2016 is the Year of the Monkey and is a Yang year.
Mardi Gras: Also known as “Fat Tuesday”, this holiday is based on the tradition of eating copious amounts of rich and
fatty foods in preparation for fasting for Lent. While not observed as a national holiday in the U.S., it is cele-
brated in many traditionally ethnic French Catholic regions. New Orleans is the most famous city to celebrate
Mardi Gras and has had parades and festivities since 1837. Fun Fact: During Mardi Gras, storefront poles are
coated in Vaseline in New Orleans to deter people climbing up them!
Valentine’s Day: February 14th was originally a day to honor Christian saints by the name of Valentinus who became
martyrs by serving the needs of persecuted people. It was not associated with romance and love until the time period of
Geoffrey Chaucer when the courts began to embrace the idea of “courtly love”. This eventually morphed
into the holiday as we know it now, which is a day to express your love with little gifts, cards, or flowers.
Fun Fact: Women compr ise 75% of chocolate sales throughout the year , but men purchase 75% of
chocolate on Valentine’s Day!
President’s Day: This American holiday was originally established to honor George Washington’s birthday on Febru-
ary 22nd. President’s Day, as Washington’s birthday has more popularly come to be known, was moved to the 3rd Mon-
day in February as part of the 1971 Uniform Monday Holiday Act. Although the federal government still
recognizes this holiday as “Washington’s Birthday”, President’s Day is presently viewed as a way to cele-
brate all U.S. presidents. Fun Fact: The Uniform Monday Holiday Act was to produce more 3-day week-
ends.
Leap Day: This day occurs almost every four years, called a Leap Year, to adjust the western Gregorian calendar to
account for the earth rotating around the sun approximately 365 and ¼ times per year. There are also “Leap
Seconds” in official time keeping to account for slight inaccuracies in our calendar. Fun Fact: 1 in 1461 people
are born on a Leap Day!

Five Steps to a Healthy Heart
It’s all coming up hearts this February, but not
just in preparation for Cupid’s arrival. In efforts to
raise awareness about the importance of heart
health, February has been designated National
Heart Health Month. Heart disease remains a para-
mount concern, and leading reason of death, for
people aged 65 years and older, according to the
U.S. Centers for Diseases Control and Prevention
(CDC). It affects 37 percent of men and 26 percent
of women 65 and older.
In a national effort to prevent 1 million heart
attacks and strokes in the United States by 2017,
the CDC is encouraging Americans to make blood
pressure control their goal. Adults of any age
should know their blood pressure and if it is high
focus on controlling their blood pressure through
diet, exercise, and in some cases medication. We
aim to encourage our staff, families, and residents
to focus on their own heart health this month with
these five easy steps to a healthy heart:
Visit your doctor – Getting your
blood pressure tested and learning
what your blood pressure should be is
a great first step to a healthy heart.
Stop Harmful Behaviors—
Unhealthy eating habits and smoking
are two of the biggest contributors to
heart disease. If you struggle with ei-
ther of these behaviors, take steps to
reduce or quit.
Increase Physical Activity— To im-
prove overall cardiovascular health
the American Heart Association rec-
ommends at least 150 minutes per
week of moderate exercise. That is
about thirty minutes of aerobic activity at
least five days a week. Not sure you can
give it that much? Something is better than
nothing!
Improve Diet— A healthful diet of nutrient
dense fruits and vegetables will go a long
way in improving heart health. Maintaining
a healthy weight is essential to heart health.
Avoid foods high in sugar and sodium and
increase amounts of vegetables and fruits to
easily improve your diet.
Get Good Quality Sleep-- Not getting
enough sleep or getting too much sleep may
put you at risk for heart disease according
to researchers at the Center for Cohort
Studies at Kangbuk Samsung Hospital.
Make efforts to get at least six hours of
good quality sleep to help reduce your
risks.
Show yourself some love this February by focus-
ing on your heart health!

Grilled Asian Salmon
Serves: 4
Ingredients:
1 Tbsp sesame oil
1 Tbsp reduced-sodium soy sauce
1 Tbsp fresh minced ginger
1 Tbsp rice wine vinegar
Four 4oz salmon fillets
Directions:
1) Combine all ingredients in a shallow glass dish.
Turn salmon to coat all sides.
2) Refrigerate for 30-60 minutes, turning occa-
sional.
3) Lightly coat grill before heating to medium-
high. Grill salmon for 5 minutes per side or un-
til done. Salmon is done when inside flesh is
almost opaque.
Salmon is an excellent source of Omega-3 fatty ac-
ids. Serve over fresh greens or steamed veggies for
a heart healthy meal this month!
