  • Chronic Musings A letter from your Chronicler

Greetings from your Chronicler! I hope this letter finds everyone well. The Canton recently put on the 6th installment of Run for Your Lives, the Saxons are Coming! The event was a little different than previous years and pitted Saxons against Vikings in a a blind team macth-up. After points were tallied from all activities, the Saxons won by a narrow margin. Much fun was had by all participants and the Vikings will be looking to exact their revenge when the event returns in 2021. In the meantime, Procrastinator's Brawl returns after several years' hiatus. A tentative date is set for the first weekend in Sept. (6-8th) 2019 at the Historic Fort Wayne in Detroit. Be sure to be on the lookout for updates!

On a very different note, I do not pretend to have a lot to say nor particular expertise in any area of medieval history or recreation, so this is a plea to make my job easier (and your newsletter better), by asking all the fine people of our Canton to submit original artwork, stories, editorials, recipes, games - whatever strikes your fancy for inclusion in the quarterly publication! Submissions are due the first of the month that the publication comes out.

    Yours in Service, Beline Nervenartz

  • Medieval Meals

    Raphioles (A sausage-meatball pie)

    Ingredients *

Original Recipe circa 14th C. England Raphioles. Take swyne lyuours and seep hem wel, take brede & grate it; and take yolkes of ayren, & make hit sowple, and do perto a lytull of lard caruoun lyche a dee, chese gratyd, & white grece, poudour douce & of gynger, & wynde it to balles as grete as apples. Take pe calle of pe swyne & cast euere by hymself perin. Make a crust in a trape, & lay pe balles perin, & bake it; and whan pey buth ynowy, put perin a layour of ayren with powdour fort and safroun and serue it forth.

Gode Cookery Literal Translation (James L. Matterer, 2000)Take swine livers and boil them well, take bread and grate it; and take yolks of eggs, & make it supple, and do there-to a little lard carved like a dice, cheese grated, & white grease, powder douce & of ginger, & wind it to balls as great as apples. Take the caul of the swine & cast ever by himself there-in. Make a crust in a pan, & lay the balls there-in, & bake it; and when they be enough, put there-in a layer of eggs with powder fort and saffron and serve it forth.

Modern Redaction: Boil the liver until very tender; drain. Mash or pureé the liver as fine as possible, then blend with the egg yolks, bread crumbs, lard, cheese, and a little bacon grease. Season with the powder douce & ginger. The mixture needs to be smooth but thick enough to mold. Make balls from this mixture, about the size of small apples. Use the casings to make individual sausages from the balls, being sure to keep the round shape. Place the balls in the pie shell, completely filling it. Bake the pie in a hot oven until done - the crust will begin to turn brown. Remove the pie from the oven, then completely coat the top with beaten egg seasoned with the powder fort and saffron. Return this to the hot oven for a few seconds for the egg to cook - be careful not to overcook it as the egg will turn brown, and you want to keep it a yellow color. Serve it forth!

Cooking in Medieval times was very different from that of today. They did not have the same cooking apparatus, units of measure, or even the same ingredients necessarily. As such, many translations have been altered to include units of measure and account for changes in modern day tastes. The following is an unadulterated recipe for a sausage-meatball pie. The spices used are often associated with autumnal meals, particularly Thanksgiving.

Source for original recipe: Hieatt, Constance B. and Butler, Sharon. Curye on Inglish: English Culinary Manuscripts of the Fourteenth Century (Including the Forme of Cury). New York: for The Early English Text Society by the Oxford University Press, 1985. Source for translation: www.godecookery.com, © James L. Matterer, 2000.
