INTRODUCTION TO MICROSOFT OFFICELearn the basic functionality of Microsoft Word, Excel, PowerPoint and Outlook in this overview course. You will learn how to create, edit and format documents using Microsoft Word. You will have the opportunity to apply your knowledge in class as you work with tables, document styles and layout pages. You will also learn how to utilize Microsoft Excel at home and at work. In this session you will learn how to enter, navigate, modify, move, copy, format and print data. You will then use this new knowledge to create images, charts and diagrams. You will learn how to create and edit slides, and use drawing tools, clip art, charts and graphs, while adding transitions, animation and sound using Microsoft PowerPoint. BARREL AGED CRAFT BEERSJoin other beer enthusiasts as we delve deep into what makes barrel aged beers so unique. We will sample all styles of experiential beers aged in different kinds of whiskey and bourbon barrels, wine barrels, oak barrels and some beers aged in brandy or even cognac. The choices will open your eyes to the craft beer world. We will be using the Siebel Institute Barrel Aged Sensory Kit, which includes a total of 12 compounds that cover a variety of common flavors that may be associated with the process of aging beer in barrels. These compounds include: almond(Marzipan), coconut, vanilla, fruity, natural wood, sweet, plum, spicy, peat-like, smoky, medicinal, dill, earthy, whiskey or bourbon (Boozy), oakey, rum-like, green custard powder, resinous, phenolic, barnyard (Horsey), brett-related flavors, wine-like and caramel. SOUTH CENTRAL KANSAS TREASURE HUNT*South central Kansas is home to some of the most unique businesses and historical sites in the country. Did you know that Wellington is home to the National Glass Museum, featuring more than 18,000 pieces of American-made glassware from the 1800’s up through the 1970’s? Or that Oxford, Kansas is home to the Sunflower Shrimp Company, where fresh jumbo shrimp are grown in an indoor saltwater operation, providing a source for fresh seafood to our landlocked state? Have you ever eaten an Oh Henry! Candy Bar? If so, it and more than 100 kinds of other candy are manufactured in Dexter, Kansas. South central Kansas is not known for its water features. However, Cowley County is home to one of the 12 most beautiful waterfalls in America, according to Yahoo. Cowley County is also home to the long-lost city of Etzanoa. Unearthed by archaeologists in 2015, it was once home to more than 20,000 ancestral Wichita Indians. On this trip we will visit each of these businesses and historical sites and you will have the opportunity to explore them and learn more about these south central Kansas treasures! CALLING ALL HISTORY BUFFS*Topeka provides the perfect itinerary for a day trip sure to please any Kansas history buff. We will spend the morning at the Kansas Museum of History and State Archives. Join us for a curator-led, behind-the-scenes look at some of the tens of thousands of artifacts, documents, photographs and excavated pieces that are stored in the Archives. You will also have the opportunity to tour the museum and view its many collections. We will then travel to north Topeka for a unique and elegant lunch at The Great Overland Station. Lunch will be served by the station’s very own costumed Harvey Girls who will share their knowledge of the historical Harvey Houses and will take you on a guided tour of the Station. Our next stop is the Charles Curtis House and Museum. Curtis, President Herbert Hoover’s vice president, was the first Native American to hold the office, the first vice president to come from west of the Mississippi and the first vice president from the state of Kansas. Our final stop before heading home is the Brown v Board of Education National Historic Site, which tells the story of the lawsuit, which ended racial segregation in schools. WESTERN HERITAGE TOUR* Interested in cowboy culture? If so, our Western Heritage Tour is for you. We will travel to Oklahoma City where our first stop is lunch and a docent-guided tour of the famous National Cowboy & Western Heritage Museum. The museum features galleries dedicated to the American Cowboy, Native Americans, rodeos and world-renowned works of art. The museum also houses a replica of a turn-of-the-century cattle town and a gallery honoring popular Western icons such as John Wayne, Roy Rogers and Dale Evans. Our next stop is the colorful working world of Stockyard City, the world’s largest stocker and feeder cattle market. The area is on the National Register of Historic Places and home to many restaurants, shops and entertainment venues. We will dine at McClintock’s Saloon situated in the heart of Stockyard City. After dinner, we will attend The Rodeo Opry, Oklahoma’s Official County Music Show, which showcases the best in county and gospel entertainment. FAMOUS KANSANSSure, you have heard of Amelia Earhart and Dwight D. Eisenhower, but how many of you know Actress Elizabeth Taylor had ties to Kansas? Or that the Tony Awards were the inspiration of a Kansan, as was the architect who designed the Empire State Building. In this class, we will explore Famous Kansans. We will look at those who made news through the years as well as those who inspired and caused us to reach higher for the stars. HISTORIC WALKING TOUR OF DELANOThe neighborhood west of the river has been both one of the city’s oldest areas and also the location for its most recent developments. Whether called Elgin, West Wichita or Delano, this area has experienced the cattle years, Victorian boom times and Syrian immigration. It has been the source of the city’s entrepreneurial spirit from Travel Air to local business landmarks. Join us as we explore the many layers of this vibrant and ever-changing part of our city! IT’S BEGINNING TO LOOK A LOT LIKE CHRISTMAS*Join us on our annual Christmas tour of Kansas City historical sites and lights! Our first stop will be the National WWI Museum and Memorial, which Congress has designated as America’s official museum dedicated to WWI. You will have the opportunity to explore the War through the eyes of those who lived it and learn why the First World War was not the last. Lunch will be provided at the Over There Café, where you can dine on trench stew, army goulash and chipped beef and gravy. After lunch, we will visit the Hallmark Visitor’s Center and view the unique and imaginative J.C Hall Christmas tree collection as well as ornaments and Christmas cards produced by Hallmark through the years. It is then on to the Strawberry Hill Museum and Cultural Center where we will experience an “Olde World Christmas.” Built in the 19th century and situated in the middle of a thriving immigrant neighborhood, the former mansion and orphanage is adorned in Victorian era decorations and Christmas traditions from around the world will be on display. KILLERS OF THE FLOWER MOON – BOOK DISCUSSIONDuring the 1920s, some of the wealthiest people in the world were turning up dead. This award-winning book, Killers of the Flower Moon by best-selling author David Grann, explores how the murders began after oil was discovered on land the Osage owned. The murders prompted the newly-formed FBI to investigate. Currently, the book is in the process of being adapted into a movie by Martin Scorsese and Leonardo DiCaprio. GARDENING FUNDAMENTALS FOR THE FALL: GETTING READY FOR THE NEXT GROWING SEASON This six-week course focuses on gardening best practices that begin in the fall and last into the early spring—be it vegetables, flowers, shrubs or trees. How do we offer our garden the seasonal care it deserves? Keeping the mercurial nature of Kansas weather in mind, we will discuss the important garden tasks that keep our plants looking their best all year long. Starting with autumn, we will learn when and how to divide perennials, where and what variety of bulbs to plant, how to put a vegetable garden to bed properly for the winter, and the proper way to

“clean up” flower beds. We will also talk about the advantages of fall vegetable gardening, including hoop houses and cold frames. Winter is a great time for planning, building garden projects and, most of all, perusing the garden catalogues. We will learn how to prune shrubs and trees while they are dormant. THE ART OF FLY FISHING 101Fly fishing 101 is a course for those of beginner and intermediate skill levels who are interested in learning more about the art of fly fishing. This course will cover all aspects of the sport, from the history of fly fishing to the equipment needed to get started in the sport. Topics covered during this course will include: fish, entomology, water, conservation and etiquette. Participants have the opportunity to learn about both wet and dry flies. Students will receive information about how to buy their first fly rod and reel and how to maintain fly fishing equipment that they already own. Participants will also get hands-on training on how to tie fly fishing knots used while on the water as well as how to rig a fly rod for fishing different types of flies. WOMEN’S SELF DEFENSEThe objective of this course is to empower women and help save lives. The course teaches women’s self-defense techniques based on the martial art of Brazilian jiu-jitsu. This course is hands-on with demonstrations of possible scenarios, student training, and techniques practiced with a partner in class on how to defend oneself and escape a variety of situations. Defense and escape techniques will begin with worst-case rape scenario situations on the ground followed by standing attacks in various attack situations (neck/shoulder, arms, forearms, wrists, from the back, “bear hugs” and front “hugs”) and conclude with additional techniques in potential rape attack situations and discussion. Cancellation Policy • We will refund 100% of your registration fee if the class you wish to take is full or if the class is canceled. A student who withdraws a minimum of 24 hours prior to the first class will receive a registration refund less 15%. Failure to attend class does not constitute withdrawal. All withdrawals must be received in writing and postmarked prior to the first class meeting. No refunds will be issued after the first class meeting. TRIP CANCELLATION: A 15% administrative fee will be assessed on all cancellations received more than 7 days prior to departure. NO REFUNDS will be issued within 6 days of trip departure.
