I hadn’t eaten sushi, or any Chinese food really, before I moved to the GCC - and that was only two years ago. Yes. I was 23 when dim sum crossed my lips, and what can I say? It’s been a love affair that will ultimately last a lifetime! It was actually in the GCC that I first

tried Japanese cuisine, ate a camel burger, and, of course, savoured the most authentic Middle Eastern food – all of which made are now on my foodie favourites list.

So, you can only imagine how excited I am about the first ever FACT Dining Awards Qatar. It’s time to recognise and celebrate the best in the food and beverage, and hospitality industry, right here in Doha. These prestigious awards highlight foodie favourites from Doha’s dining scene in several different categories.

Turn to p27 for more information on how the awards will work and, of course, the nominee list. Each category will have two winners; the best and the favourite. When it comes down to the favourite vote, you the readers have all the control! Look out for the voting forms at select dining outlets or head to our Facebook page (FACTQatar) where we’ll be posting a link to the online voting – click through and have your say.

One of my favourite features this month, and continuing along the foodie path, is our culinary journey around the world. Head to p49 and take a fare-filled tour of some of the world’s most famous cuisines and where you can try these dishes in Doha. Plus we’ve got a jam-packed dining section for you with a chef ’s table at New York Steakhouse (p87), a venue review at The Cellar (p93), and Cucina De Badir’s visit to Astor Grill (p97), as well as many more awesome gastronomy-themed features. Adding to all the food excitement – check out our one-on-one exclusive chat with world famous chef, Wolfgang Puck on p20 – he was an absolute delight!

Giant Oryx Sculptures at The St. Regis Doha

If you’ve been to The St. Regis Doha recently, you will have been greeted by two, mighty Oryx sculptures standing tall at the entrance driveway of the hotel. If you haven’t yet seen the impressive structures in all their metal glory, then rest assured, it’s a sight you can’t miss! And wait until you get inside, there’s another one of these cool sculptures in the grounds of the property. The three Oryx figures weight more than 12-tonnes each and stand 14-meteres-high. They were designed by Ellen Hlavata and engineered by the internationally-renowned Foibos Design Lab; a group of artisans and metal craftsmen who employ high-end technology expertise. Depicting the national animal of Qatar, the Oryx statues stand as artistic reminders of the importance of preserving the country’s rich culture and heritage. The ‘engineering art’ sculptures were designed using the latest cutting-edge technologies and coated using a chemical element called Molybdenum that is capable of withstanding the extreme temperatures of the region.These stainless steel creations are a completely unique and stunning venture for Doha’s hospitality industry. In many ways, this project may yet be a pioneer of things to come. Head over and check out these incredible sculptures today!

Medina Centrale, The Pearl-Qatar’s vibrant town centre, has recently welcomed a series of famous restaurants, including the Portuguese Nando’s, the American T.G.I Friday’s and Fatburger, and Sammach; a seafood lover’s haven. This successful mix of popular F&B brands has led to the noticeable increase in visitor traffic to this budding residential district at a time when The Pearl-Qatar continues to be a preferred destination for families, as well as for leisure and business travellers. Expected to also open later this year in Medina Centrale are Dip N Dip Chocolate House, “Which Wich” Sandwiches, Menchie’s Frozen Yogurt, Foot Care Centre, Big Bear Choppers motorcycle showroom and bikers’ café, German Doner Kebab and Ziryab restaurants in addition to a number of local banks that have chosen Medina Centrale to operate branches, which will service The Pearl and surrounding neighbourhoods.

Mathaf: Arab Museum of Modern Art and Qatar Foundation presents Wael Shawky: Crusades and Other Stories, a major solo exhibition by internationally acclaimed Egyptian artist Wael Shawky, which will run until August 16. Occupying the atrium and ground floor galleries at Mathaf, Shawky presents large-scale installations of two film trilogies – Cabaret Crusades (2010 – 2015) and Al Araba Al Madfuna (2012 – 2015). The three films that make up Cabaret Crusades were produced over a period of four years, the most recent being commissioned by Qatar Museums in 2014 as part of its focus on art, creativity and heritage. The script and structure of the film series Cabaret Crusades draw on sources of writing from the period as presented in Amin Maalouf’s The Crusades Through Arab Eyes (1983), referencing the historical fight for power that is still present today. The exhibition will also premiere a new film commissioned by Mathaf, completing the three-part series, Al Araba Al Madfuna (2012 – 2015), a re-telling of the stories of Egyptian novelist Mohamed Mustagab. Also included is a selection of marionettes (puppets) from the Cabaret Crusades and drawings from both video trilogies. The architecture and scenography produced for Mathaf creates an original atmosphere that combine the artist’s references of history, literature and cinema, through which other stories are imagined.Presented by Qatar Museums under the leadership of its Chairperson, HE Sheikha Al Mayassa bint Hamad bin Khalifa Al Thani, the exhibition is curated by Abdellah Karroum, Director of Mathaf.

He has well and truly conquered the world of professional cooking and now he’s treating foodies with brand-new restaurants at the Four Seasons Bahrain Bay. FACT sits down for a one-on-one with the culinary master himself, Celebrity chef, Wolfgang Puck, to learn more about his restaurants, pick up some cooking tips, and find out exactly what it’s like to have prepared the Oscars menu for the past 21 years…

CELEBRITY INTERVIEW

Describe each of your venues at Four Seasons Bahrain Bay?At Four Seasons we have two main concepts, one is called CUT – which is a modern American steakhouse, mainly serving meat from all over the world. We prepare a lot on the wood-fire grill, with side dishes. Below CUT we have a lounge, where you can come and hang out and have light appetisers like crab rolls, mini burgers, and salads. On the 50th floor with a spectacular view we have our Chinese-style restaurant ‘re Asian’. I love all sorts of Asian cuisines mainly because of the spices and to me it’s interesting. So this restaurant serves dumplings, steamed fish, meat, chicken, and more. It is really a modern Chinese restaurant with western-style service. We also have a lounge area that is more easy-going and is done up in a Moroccan style.

Tips for preparing the perfect steak…Like every other dish, it really starts with the ingredients - it is really important to get the right cut. For me, before cooking the steak you have to let it sit outside and bring it to room temperature; you don’t want to put it onto the grill right out of the refrigerator. The meat should not be frozen,

it should be fresh and it has to be aged. For example, we age American beef for 35 days, sometimes 40 days. I like to season it with a little sea salt, pepper and olive oil, and grill it. I love French Fries and Onion Rings with it. So, the main thing with the steak is, once you grill it the way you like it; I like it medium rare, you let it rest a little. Don’t take it off the grill and cut it, leave it for 5 to 10 minutes, so that the juices don’t come out when you cut into it.

How would you define fine dining?Fine dining is such a funny title, because fine dining is great quality like fine clothes, you don’t say fine clothes – you say chic clothes, or elegant clothes. Our restaurants are upscale dining as we use the best ingredients. I want people to have fun; I want them to have a good time. We play rock ‘n’ roll music! If you like good food, you need to have a good ambience. For me the only serious thing should be on the plate - the rest should be fun!

What inspires you to keep cooking after so many years in the industry?I love cooking, I just love the process of

cooking. I get inspired while I am working, doing things. To me I still love going to the fish market, like yesterday we went to the farm. I love the process of getting the best ingredients and cooking and enhancing them to create something special. Maybe if I had just one restaurant and did the same thing everyday, it might feel different, but I do a lot of things. Like recently we developed an oven where you can cook a 7kg turkey in 55 minutes!

You’ve been preparing the Oscars menu for the past 21 years – is there pressure when cooking for celebrities?It is not a pressure cooking for celebrities, I know most of them and I know what they like to eat. Like Barbara Streisand; she saw me in the restaurant in LA and asked me “Wolfgang are you going to make the Chicken Pot Pie like last year” and I

restaurant is when people finish dinner, and when they head out, they stop at the main desk and make their next reservation. That’s what makes me happy. We have created a regular clientele, and that’s important.

What’s your favourite sauce?It depends on the steak you eat, with different parts of the meat, different sauces work. For example a fillet is very lean so you can have a richer sauce with it. If you have a New York steak or Rib eye, it’s rich by itself so you can have the béarnaise sauce. For Tenderloin I like pepper sauce - it is perfect!

You’re a busy man – TV shows, book launches, restaurant openings – do you still enjoy the grind?I love to be with and around people, in the kitchen, with the farmers growing vegetables, with the guys at the fish market. I’d much rather go there, than a fancy mall and look at clothes. Food is my life.

said, “for sure, I will make it.” At that point in time I had not even thought of preparing that dish, but everybody loves it! At the Oscars you will find so much; the seafood stations, sushi bar, all the best things. But somehow they love the homely Chicken Pot Pie. There are some Signature dishes we prepare every year; like the Chocolate Oscar with 24-carat gold, Smoked Salmon cut-out in the shape of the Oscar and now, I guess, the Chicken Pot Pie will be a signature too!

As a world-famous chef, what matters more – taste or presentation?Say, when you look for a boyfriend the first thing you want is someone handsome, but if they have no heart, no brain, it gets boring. You might as well have somebody who is not as good looking but has a good heart, good sense of humour and is smart. With food it is the same! It is amazing to have great looking food, but when you eat it, if it doesn’t taste as good as it looks then there’s no point. Of course, there are times when you get both together, but with some dishes it is not the same. If I had to choose it would be the taste.

What’s the greatest honour or compliment you’ve received as a chef?My greatest compliment in a

SEAn PAulHe’s had the world under a dancehall spell for the past decade, and now, for the first time, he’s coming to Bahrain. That’s right, Sean Paul will take to the stage at Klub 360 during F1 weekend to have all the party-goers getting their dutty wine on! FACT caught up with the world-famous artist to find out what fans can expect at the April event…

Hi Sean! It’s been 15 years since the release of your debut album Stage One – how has your style and approach to making music developed over the years? I’ve always been mindful to stay true to my dancehall sound and continue to fly the flag as a reggae ambassador, so I don’t think my approach has changed that much, except now I collaborate with a lot of international artists and producers who bring their interpretations of dancehall to the mix.

What do you look for in an artist when it comes to collabs, and is there anyone that you really want to work with?I’ve always wanted to work with Alicia Keys. Also, I love Ellie Goulding’s voice.

GET BuSy WITh I’m open to working with a lot of different artistes. I just did a collabo with Farruko from Puerto Rico and J Balvin from Colombia and, of course, the massive ‘Bailando’ with Enrique Iglesias last year so I’m heavy into Latin collabs right now.

What are you most looking forward to about performing in Bahrain?I love the Middle East - the reaction from my fans there is always hype and the food is always amazing! I’ve never been to Bahrain before so I’m looking forward to meeting them.

We can’t wait to see you on stage – can you give us a sneak peek into the performance?I’ll be doing my usual high energy show filled with all my hits but I’d love to hear what the fans over there would want to hear so hit me up on my Instagram or Twitter at @duttypaul.

Your most memorable moment from your music career to date…My most memorable moment in my music career to date has to be every day in the studio. Just joking! There are so many different ones. Being on my first stage show in Jamaica, doing my first song, working with big artists such as Beyoncé for the first time, so there’s too much to choose one. I’m just very thankful for this career and thanks to the fans for following me all these years.

Who are your musical heroes and why are these figures particularly inspiring?One of them, and who I’ve always spoken about, is Bob Marley. I think that he is a prolific writer, a prolific musician in himself and his songs are lasting 40 years now in terms of being felt by generations down the road. He’s a very prolific person in that respect. His uncompromising, unwavering faith that he had is somebody with a real conviction in life and puts it into his music which helps to evolve the world. I really think that he is a great ambassador for his country, for the music and for his faith. Other influences, I like hip-hop a lot but I think that dancehall influences me a lot more. I would say big up to artists like Papa San, who had the

Guinness World Book Record at the time when I was growing up in about 1989 where he was the fastest rapper alive, in terms of having the most words in a song, ever. I really looked up to his style, even though he is a different kind of artist right now, I still think he’s a very potent artist even though he is a Christian rapper right now, so big up to him.

Any advice for upcoming musicians?Before you try and make it in the world, try and make it on your block, make it in your city, make it in your country. Make sure you stay true to who you are musically, surround yourself with good people and that music is a lot of work. It may look like a bed of roses but you have to be disciplined and you have to have a good work ethic. Don’t expect to make it overnight.

You have a huge international fan base, have you got a message for them?Thank you for following me all these years – to my fan base – without the fans

I wouldn’t be here. Being that my career has spanned so long I have to give thanks to them and to God.

What’s coming up for you in 2015?I’ve been recording a lot in 2014, and I’ve quite a few songs coming out this year. We’re presently shooting videos and there are some more productions being worked on too for later this year. I also have a lot of songs personally, as singles, to drop, so I’m also looking forward to doing that. A lot of studio work and pin-pointing to break into new markets. Different songs will work in different genres and different markets!

Being the architect

of his own imagination,

Jessie has created an

arsenal of wonderful

characters, thoughts, dreams,

landscapes, experiences

and imaginary variations,

all expressed through his

gift of art. Describing his

pieces as his visual diary,

Jessie tends to sketch random

thoughts from his daily life.

“My doodles represent my

emotions and feelings; rage, grief or happiness, i draw it,”

he says. “Depending on my mood, i choose my medium and

colours,” shares Jessie. he uses broken crayons, abandoned

coloured pencils, old oil pastel or wet paint and colours that

represent his emotion, and mixing of colours is what he loves.

every artist draws inspiration from somewhere or

something and so does Jessie, “People, their personalities, and

stories, inspire me,” Jessie says. “Sometimes lyrics of a song

or certain images i see on the roads clicks a ting in my head,

which urges me to draw that very moment,” he reveals. Jessie

LWWLTM[�QV�PQ[�TMQ[]ZM�\QUM#�_PQTM�[QXXQVO�PQ[�M^MVQVO�KWٺMM�or chatting with a friend. he makes it a point not to mix his

passion and his livelihood as an arts teacher.

Jessie works as an arts teacher in a private school. he

loves to teach young children and share his knowledge of art,

in the hope of inspiring children to pursue arts. But the real

question is, how does he balance a teaching job with such a

strong passion? “i don’t

UQ`�Ua�IZ\[a�[\]ٺ�L]ZQVO�my working hours,” Jessie

says. “i doodle after work

and make it a point to

create three doodles a

he tells us.

\W�ÅVL�W]\�_PMZM�Q\�ITT�started from? “i had a group of artist friends, whenever i

[I_�\PMU�LZI_�IVL�TWWS�I\�\PMQZ�ÅVIT�XQMKM[��1�_I[�QV�I_M�of the randomness and vivid stories the doodles expressed,”

Jessie explains. “i decided to do it myself; picked a ball pen

and created a random image which expressed happiness;

PIXXQVM[[�WN �ÅVLQVO�[WUM\PQVO�VM_�º�PM�ZMKITT[��1\�[\IZ\ML�that day and has excelled since, as ball pens were replaced

with water and poster colours. “Doodling or drawing random

things is my personal and visual way to express my feelings”

Jessie reveals.

When i asked him about his creative process, he had

a very simple answer: “i grab a brush, mount my paper up

the wall and start drawing using the mixed colours lying

on my palette, and in the course, i change my medium to

marker pens or oil pastels.” and how does the process end?

“i am unstoppable at times, i don’t stop until i am done, and

sometimes larger paintings take up to a month,” Jessie says.

Pallavi Ramesh chats with artist Jessie Tejada and untangles the

artistic beauty of doodling, as he shares his journey of creating

hundreds of colourful and whimsical artworks. An arts teacher by

profession and a doodler in his spare time, Jessie opens up about

his life-long passion…

exploring ‘People’ and sketching them on paper is what

Jessie loves, i quizzed him about his dream project and his

reply was ‘india.’ he explains: “i love the culture, people,

life and the ethnicity of india, and sketching it all on paper

would be like a dream come true.” Jessie intends to travel to

india when he gets the opportunity, and paint his dream.

With artistic talent of such tremendous power, i asked

2M[[QM�_PMZM�PM�[MM[�PQU[MTN �QV�\PM�VM`\�Å^M�aMIZ[�IVL�_PI\�his future plans are. he replies: “i have two dreams; opening

an art school for young talented artists and underprivileged

children, and organising an art exhibition which involves

doodlers from around the world, showcasing their artworks.”

Jessie’s art has actually been showcased around the

world! “My design was exhibited in Montreal, canada for

an international Medical conference,” he says. “also, my

winning artwork from corbie France was used as a design for

a postcard to be circulated all around the world in celebration

of the World Day for cultural Diversity for Dialogue and

Development” he adds, proudly.

Like every artist, Jessie has his idols and follows famed

artists. “Most of my inspirations are artists, and designers

who are lowbrow artists and pop surrealists,” he says. “i love

the works of Dex Fernandez, Lynard Paras and anjo Bolarda

from the Philippines. then there’s Yoko D holbachie from

Japan, and Mohammad al Mahdi, Leon, and ahmed anan

from Bahrain, and many more,” Jessie shares.

Jessie’s advice to the youth and aspiring artists is simple:

“have the love, compassion, time, determination and

enthusiasm for art,” he says. “Don’t have the competitor

streak; draw and paint because you want to and not to

compete. and lastly, share your talent and learn from experts,

this will make you a successful and grounded artist,” he

PIzza marGherIta - ItalyThe margherita is a humble combination of dough, tomato sauce and cheese, and if cooked with good, fresh ingredients, it can prove a highly satisfying meal. Though the pizza all over Italy would be more than palate-pleasing, it’s the birthplace of the margherita – Naples – where you’ll find the most appetising choices. It was in 1889 when chef Raffaele Esposito of Pizzeria Brandi, created a pizza resembling the colors of the Italian flag, red (tomato), white (mozzarella) and green (basil), for Queen Margherita of Savoy, when she visited Naples. Since then, the modest pizza has grown into one of the most recognisable symbols of Italian food culture. Try it: Quick Bites, Marriott Marquis City Centre Doha.

BIBImBaP - KoreaAs far as the saying ‘you eat with your eyes’ goes, bibimbap is a true visual feast – and it tastes pretty darn good too! This is a Korean comfort food with up to five different colour toppings to go with the rice – for nutrition and aesthetics. It’s a one-bowl wonder of steamed rice and sautéed vegetables with a fried egg on top. Chicken, seafood, or meat may be added. Bibimbap ingredients are rich in symbolism. Black or dark colours represent North and the kidneys; red or orange represents South and the heart; green represents East and the liver; White is for the West or the lungs; and yellow represents the centre, or stomach. In Korean households it’s a traditional way of using up day-old rice and leftovers.Try it: Yee Hwa Restaurant.

hueVos ranCheros - mexICoHuevos Rancheros translates to “eggs ranch-style” in Spanish, and this yummy-looking dish has Mexican breakfast favourite. The basic Huevos Rancheros is made up of eggs, beans, tortillas, and sometimes various meats. It’s the dish that was traditionally served mid-morning, in substantial quantities, when ranchers would take a break. Born out of Mexican farms, this mouth-watering breakfast has spread lat rollercoaster speed across Mexico and The Americas. On your plate is fried eggs served with a lightly fried tortilla, covered with a tomato chilli sauce or salsa, refried beans and condiments like sour cream and guacamole. Pastel de nata - PortuGalPerhaps one of the tastiest pastries you’ll ever consume, this Portuguese egg tart has become an iconic part of the country’s food scene. These little pastry cups of sweet filling have a relatively simple recipe, but the technique to produce the perfect Pastel de Nata is one that comes with experience. The history of this small and sweet dessert treat dates back to the 18th century when Catholic monks used leftover egg yolks to make cakes and pastries. The filling is delicious, and now, some prefer the cream slightly “curdled” to give it a rustic appearance. Try it: Magnolia Bakery.

FIsh & ChIPs - enGlandDefinitely the most famous of all food in England. This great comfort food can be enjoyed as a greasy takeaway, traditionally wrapped in white paper, or in a more upscale environment at restaurants too. We recommend a trip up north to English counties like Lancashire or Yorkshire, where fish and chips is still the go-to dish and mostly enjoyed with a side of mushy peas, and this is also where you’ll find some of the best ‘chippies’ in the country to pick up your own bag of this hearty, hot dish. Here’s a tip – sprinkle loads of salt and malt vinegar all over and tuck in! Try it: Captain Billy’s Fish and Chips.

Pad thaI - thaIlandSome might consider this nothing more than a regular noodle dish – even its origins come from China, not Thailand. However, the popularisation of the dish is credited to Thai authorities and in particular the late Thai Prime Minister Plaek Phibunsongkhram, who introduced and promoted pad thai in his campaign to establish Thai nationalism and modernise the country. Well, if Thai restaurants and food vendors worldwide are any indication, the campaign definitely worked. Pad Thai is made with chewy, stir-fried rice noodles, vegetables, bean sprouts, peanuts, and egg, among other things like dried shrimp, garlic, shallots, red chilli pepper, and even more unusual ingredients like banana flowers. In Thailand it’s the most commonly served street food, and even in many world cities you’ll find it in a number of Asian neighbourhoods. It’s packed full of flavour and a great option for a fast and filling meal. Try it: Issan, Grand Hyatt Doha.

Paella - sPaInA hearty, lavish dish with a real home-cooked dinner feeling, Paella is by far Spain’s most famous food offering. The Spanish rice dish includes different combinations of vegetables and meats or seafood, and is normally seasoned with saffron, but also has other spices depending on the recipe and area in Spain it comes from. That’s all due to the numerous variations and authentic flavours that can be added to this heavy main. Paella was originally farmers’ and farm labourers’ food, cooked by the workers over a wood fire for lunchtime. It was made with rice, plus whatever was to hand around the rice fields and countryside like simple veggies and, occasionally, rabbit or duck, and on special occasions, chicken. Now, one of the most popular paella combos has to be the seafood variety! This is a colourful dish and the fun part is that you have to eat it straight out of the pan. Try it: El Faro, Marsa Malaz Kempinski.

BorsCht - eastern euroPeThis deep-red soup is a winter warmer in many parts of Eastern Europe including Russia, Ukraine, Poland, and other Slavic countries. It’s a beet soup, and its name is said to derive from the Slavic word for cow parsnip. It can be eaten hot or cold, with some of the servings being clear and light like a broth, whilst others like to eat it thick and substantial. It’s a simple dish with a characteristic rich red colour from the palatable beetroots, that also contains ingredients like kvass, a sour ale made from bread, to counterbalance the sweetness of the beets. Vinegar, lemon juice, or citric acid can be added to achieve a similar effect. Ukrainian borscht is more of a hearty soup of beef and a variety of vegetables along with the beets. Borscht without meat can be made with a stock flavoured with forest mushrooms; this Polish version is served with tiny dumplings, called uszka. Just one of the great dishes to try if you’re visiting Eastern Europe. Try it: Shop the ingredients and find a Borscht recipe online, then get cooking!

BIryanI - IndIaBy far India’s ultimate rice dish! Be it with chicken, lamb, prawns, or vegetables, this is a lavish dish that visitors to India absolutely need to try. It is speculated that the Mughals introduced the modern biryani to India, which is made up of rice, a number of spices and condiments, and your chosen meat and/or vegetables. This is a rather sophisticated and skilled dish to prepare; you can make it pakki, meaning cooked, where the cooked meat and cooked rice are layered, or you can prepare biryani the kacchi way, where raw marinated meat is layered with raw rice before being cooked together. sushI - JaPanDon’t be mistaken though, sushi is still one of those dishes that people either REALLY love, or really don’t like. Sushi looks so simple and pretty, but it is in fact an intricate dish in terms of presentation and knowing which flavours work well together. One thing’s for sure though, sushi is causing a dramatic shift in dining habits the world-over. The nigiri and tuna rolls we eat today are a far cry from the pungent, rice-less, barrel-fermented stuff that originated in the 3rd century B.C. Now we have pinwheel-shaped rainbow rolls and sushi masters trading their raw fish skills with culinary connoisseurs. Trying sushi in Japan is a must, but we have to say, this region does sushi and maki rolls, excellently. Try it: Oishi Sushi.

meat PIe - australIaA trip down under is incomplete until you’ve feasted on one of the country’s biggest foodie favourites – the meat pie. This hand-sized pastry with savoury goodness has been described by many in Australia as the national dish. Containing largely diced or minced meat and gravy, often with onion, mushrooms, or even cheese, the meat pie is heavily associated with Australian sports, in particular, Rugby League and Australian Rules football, as it’s one of the most popular foods to eat whilst watching a game. Traditionally, the meat pie is eaten with a big dollop of tomato ketchup on top or on the side. Try it: Jones The Grocer.

taGIne wIth CousCous - moroCCoOn our last visit to Marrakech, everyday was a foodie adventure and the most appetising dish is definitely the tagine with couscous. Tagine is a historically Berber dish, named after the type of earthenware pot in which it is cooked. The tagine way of cooking is similar to a stew, whereby Moroccan tagine dishes are slow-cooked savory stews, typically made with sliced meat, poultry, or fish together with vegetables or fruit. Though tagine is usually served with bread, it tastes amazing when it comes with a side of couscous. Try it: Tajine, Souq Waqif.

WHY IT’S WORTH WATCHING?Desert Dancer became a much talked-about film after making appearances at film festivals in Cannes, Santa Barbara and Ischia, Italy. And still, critics remain divided on this biographical film. Some argue that it’s another Hollywood take on portraying Iran in an exclusively negative light, while others see it as the story of one man’s ambition and dream to dance, despite having to risk his life to achieve this. Like many true-story-inspired films, Desert Dancer will definitely divide theatre-goers into two camps – the first being those who will watch this film through a solely political lens, as it does bring to the forefront many of Iran’s complexities and clichés; and the second will be those who fall in love, and sympathise, with Afshin’s struggles to do what many consider a very normal and acceptable thing – dance. In this case, it’s difficult to decide where we stand without understanding both sides. The film has been criticised for frequently ignoring the realities of life in Iran, on the other hand, we all know that cinema always has to go overboard in order to be effective, throw in the hero’s struggle with a love story, and you’re left with a stirring plot. What’s it about: A drama based on the true story of a young aspiring dancer in present-day Iran, where dance is banned. The man is Afshin Ghaffarian, who risks everything to start an underground dance company in his home country, a place where there’s a politically-volatile environment with morality police patrols observing to make sure that citizens abide by the nation’s laws.

What’s it about:Back for round seven, the Fast & Furious crew face bad-man Deckard Shaw who’s out to seek revenge against Dominic Toretto and his family for the death of his brother, Ian Shaw, who was killed in Furious 6.

WHY IT’S WORTH WATCHING?All eyes are going to be on the Fast family, both on and off screen when Furious 7 hits cinemas in April. Of course, this is also an unusuall tight cast and crew as well, one that has gone through some major tough times after the passing of lead cast member Paul Walker. We’re at number seven now, and what we want to see is EPIC car action and some huge risks. With Jason Statham onboard and a huge part of the film being shot right here in the region, in the UAE, we’re sure there’s going to be a whole lot of on-road thrills in this one.

There’s something intriguing about the elusive Wale; he sends out deep, philosophical tweets about life, always gives fans crazy amounts of creativity through his music, and his discography is filled with a mix of highs and lows. So, it’s fair to say that we’re excited, if not anxious, to hear his latest material on The Album About Nothing. With 2013’s number one The Gifted out of date and his more recent, fan-approved and critically-acclaimed, Festivius mixtape now partied out, the DC rapper returns to his long-time obsession with Seinfield, which he employed on two of his past (and very successful) mixtapes. This 14-track record is Wale’s fourth studio album and features the likes of Jeremih on The Body, Usher on The Matrimony, and appearances from J.Cole, SZA and Jerry Seinfeld himself. He’s definitely one of the most interesting hip-hop stars of today, and Maybach Music Group is definitely letting Wale do what he does best, that is, produce music from his grassroots. Oh, and did we mention the cool album artwork by artist and designer Sue Tsai? Now let’s see if Wale can turn ‘Nothing’ into, well, a thing!

We’ve already heard Something’s Gotta Give, a track that starts off a little lighter than expected but kicks in to give those awesome energetic punk-pop sounds, and if the rest of the album follows suit then fans are in for a massive musical treat. This is All Time Low’s sixth studio album, and the band does not slip up a single time, something that will have been helped by the input of producer John Feldmann and exciting new collabos with Blink 182’s Mark Hoppus (on Tidal Wave) and Good Charlotte’s Joel Madden (on Bail Me Out). Hot off a hugely successful UK tour with You Me At Six, there’s never been so much anticipation for an All Time Low album as there is for Future Hearts. Whatever they’re doing musically, they should continue, because it’s really working!

THE AUDI S3 PROVES THE OLD ADAGE THAT SOMETIMES GOOD THINGS REALLY DO COME IN SMALL PACKAGES – LUXURY, POWER, PERFORMANCE, ALL IN A COMPACT SEDAN!

It was sometime early last year ( June 2014, to be exact) that we drove the Audi A3 sedan, and thoroughly enjoyed it. Though front wheel drive, it was a nippy and agile car that was huge fun to drive.

However, upon returning to the showroom with the A3 and telling the Audi rep how much we enjoyed it, his words were simply, “Oh yeah? Just wait till the S3 gets here…”

And waited we have, for almost a year in fact, but the wait was certainly worth it. Last month we finally got our hands on the Audi S3 Quattro, a compact sports sedan that takes an excellent platform to whole new realms of awesome.

With Audi’s 2.0l turbocharged TFSI four-pot that puts out 296hp, it’s not as powerful as the similar engine in the A 45 AMG, which boasts 360hp, but here’s the rub: the A 45 AMG hits 100km/h in 4.6 seconds, whilst the S3 does it in just 4.9, but the S3 is several thousand dinars cheaper than the Mercedes. Are the extra three tenths of a

second worth that much?When you climb into the S3 and take it

for a spin, the difference won’t matter at all, because it is simply an absolute blast to drive, with a superb soundtrack thanks to the racy growl from the quad exhausts. It was a wet and windy day in Bahrain when we hit the streets, but it made practically no difference at all to the excellent Quattro all-wheel-drive system.

Power is nominally sent to the front wheels, but the rear wheels come in to play whenever required to reign in any understeer, and thanks to the Quattro system, excellent balance, squat stance and light weight the levels of grip and agility are huge.

Despite this, the ride quality never becomes jarring – Audi have managed that delicate combination of agility and ride comfort that so many compact sports cars fail to achieve.

We were throwing the little sedan around on the slick streets with a level of confidence that very few other cars could inspire, and

we were enjoying every last second of it. We honestly challenge anyone to take this car for a spin and not hand it back with a smile on your face.

The interior does plenty of justice to the rest of the car – leather sports seats, the excellent Audi infotainment system with retractable screen, Bang & Olufsen stereo system with superb audio quality, rear parking camera, and just a really premium, stylish and well-built feel to everything. The only drawback is a lack of legroom in the rear seats that would be a problem for tall people on long journeys. In that regard, trunk space is somewhat limited too, so big luggage for four people is out of the question.

But the S3 isn’t a grand tourer, it’s a city car. The compact size and reverse camera make it a breeze to park, and it slices through traffic like a hot knife through butter. The Audi S3 makes a mundane commute or trip to the shops enjoyable, and that is why it’s worth every penny!

technology, but it isn’t traditionally known for simplicity. However,

that is exactly what they’re selling here with the CineMate 15 Home

Theatre Speaker System.

PLUGGED-IN

The system was designed for people who aren’t particularly bothered with having a super-accurate surround-

sound system, but do want to take a step up from their TV’s standard in-built speakers.

And a step up the CineMate 15 audio quality certainly is. The sound is full, crisp, and crystal clear, with excellent

bass from the big sub woofer. However, all this sound quality comes from an incredibly simple system, namely a

sub woofer, a soundbar that incorporates all the other speakers, and an easy-to-use and very versatile universal

remote. Aside from the sound quality and the simplicity of the system, the universal remote was one of the biggest

selling points for us, easily controlling the TV, DVD player and TV channel box – basically anything we tried it with.

Another bonus is that Bose includes the all-important HDMI cable with the set, so that you don’t get home and face

instant disappointment if you haven’t thought of purchasing that particular item and don’t have a spare.

Verdict: Although the Cinemate 15 is impressive, it doesn’t compare to a proper 5.1 Surround Sound System, but it completely

blows away anything comparable in terms of size and simplicity. It is pricey, but you won’t get better sound quality from any

other simple speaker system like this. If you have limited space in your living room, but want very high-quality sound, then

this is the system for you.

This month we took a trip to New York Steakhouse in Marriott Marquis City Centre Doha for a culinary feast with Executive Sous

Chef Pedro Arceyut. He’s a charismatic and easy-going Chef, whose food keeps Doha’s diners coming back to this beautiful venue.

As soon as we stepped inside the fabulous New York Steakhouse restaurant, famous for its meat and seafood dishes, we were quickly drawn into Chef Pedro’s fine cuisine. From his charming presence and friendly demeanor to his devotion to creative cooking, we knew that he was quite the perfectionist when it comes to taste and presentation.

So, what’s Chef Pedro’s favourite dish to make? “I love cooking seafood,” he says. “Today, you’re experience is all about seafood delicacies.” And we were sure ready for it! The first tantalising dish was coconut and tomato seafood stew. With an impeccable presentation we were in awe of

how delicious it looked.We were curious to learn more about the

Costa Rican culinary mastermind’s kitchen experience and skills. “I was born in Costa Rica and later with my family we moved to Guatemala at a very young age,” he recalls. “I was always involved in the kitchen; I took part in family BBQs, brunches, important meals, gatherings and other such meals.”

Chef Pedro has not only been involved with food, surprisingly, and for a short period of time, he studied electrical engineering back in Guatemala, but soon realised that food was his true passion. “I moved to Paris to truly understand what I wanted from life and that’s when I joined Le Cordon Bleu and knew right away that cuisine was my biggest passion,” he tells us. Paris was the first step of many projects that the young Chef would be a part of. He later moved to the United States to Florida Culinary Institute where he fulfilled more dreams and goals as a professional cook – graduating with qualifications in hotel and hospitality.

He’s been living in the Middle East for the past five years and has come to love Doha! “I’ve adjusted quite well with the culture,” he says. “Latin people and Arabs are quite similar when it comes to friendliness; we’re quite similar on a lot of aspects. I definitely see myself living in the Middle East for quite some time,” he adds. Chef Pedro finally brings his last creation; oyster vichyssoise. With a magnificent presentation, we tuck in almost instantly.

Chef Pedro not only is an impeccable connoisseur when it comes to knowing what ingredients work well together, he has a great knack for making every dish look colourful and appealing to the eye – his presentation and plating gets a huge tick! This was an exclusive tasting of recipes created specially for our Chef ’s Table - we loved every single one! As Chef Pedro reminisced, our second dish arrived; red snapper and scallops in saffron and ginger nage. At this point our bellies were rumbling to taste! The fish and scallops were cooked to tender perfection and packed with a pleasant saffron and ginger flavour that lingered long after each bite. Chef Pedro not only loves to experiment in the kitchen, but he debuted back in Guatemala as a food columnist; “I used to write for a newspaper and a magazine and what I loved to do was to write about my recipes, but mixing them with a story line,” he says. “I used to love to interact with the housewives that were loyal readers of my column – it was a very nice experience being a part of such a project.”

Up for a casual chat Executive Chef Ery Irmansjah was excited to talk about the exquisite signature restaurant Seasons. We got a little sneak peek of the behind-the-scenes scene at the restaurant with the man delivering the yummy bites.

The seafood lover that he is, Chef Ery shares:“I love cooking and preparing fresh seafood. In fact, sushi and Asian cuisine is a popular demand at the moment.”

We were excited to try the restaurants must-have mixed sushi dish with tuna, salmon, cream cheese and other yummy ingredients; it was the ultimate sushi-licious moment for us! We quizzed Chef Ery about his favourite ingredients and he was quick to reply, “fresh herbs and fish, especially the Sea bass.”

Chef Ery delighted the FACT team with a delicious hammour fish, with fresh vegetables, orange reduction and morel mushrooms. However if you’re a meat lover, we recommend the lamb fillet served with risotto cake and carrot puree. We fell in love with the Millefiori, a classic French patisserie with yummy raspberries. After trying an array of lip-smacking international dishes, we will surely be coming here again!

T he Oryx Rotana Doha offers guests a number of fabulous dining options, and it’s also home to one place that’s managed to remain the talk

of the town since it opened over four years ago. That place, of course, is The Cellar.

The Cellar really needs no introduction, but let us set the mood for those of you who are yet to visit this popular venue; as conveyed in the name, the restaurants décor is reminiscent of an underground wine cellar setting with its natural stone archways, large glass windows, and soft touches of dark wood. With edgy yet elegant chandeliers and cool art work on the walls, The Cellar is often packed with lively chatter from businessmen, groups of friends, colleagues having an after-work drink, and others for whom the venue was a pre-night-out stop for nibbles and drinks. We were in love with this place, instantly!

On this particular evening, we were here to try out the brand-new Pintxos Night, which truly champions the concept of tapas. Set in a buffet-style, the Mediterranean-inspired tapas is plentiful in choice – there are 12 varieties to be precise. With everything from veggies, meat, and seafood, there was something for everyone, and, of course, as this was tapas, the portions were very generous.

We tucked into one of everything – there’s no way you’ll want to miss out on

trying all the Pintxos Night menu options – and it was definitely the right decision! Some of our favourite food items to go for include the Spanish potato omlette, a simple but very tasty dish; the beef galician pie, perfectly crisp on the outside and packed with a delicious beef filling on the inside; then there’s the shrimp and avocado rolled with smoked salmon, fresh and full of flavour; and the chilled tomato cream with eggplant chips, we absolutely couldn’t get enough of those!

why The Cellar has become so popular; it’s all about the interactive and communal nature of tapas and vino (there’s a fantastic variety of fine wines and a wine tasting section too) teamed with excellent service, and friendly and efficient staff, that makes for an exquisite dining experience.

We weren’t done just yet. We couldn’t resist ordering something off The Cellar’s normal menu, and went for the Mussel Pot. When the sizzling pot made its way onto our table, napkins and spoons couldn’t have moved any faster – we

tackled the steaming mussels like no one was watching! The mussels were gratined with diced tomatoes and bell peppers, and every bite left us with a mouthwatering zingy kick – winner!

For dessert it had to be the warmed chocolate fondant with vanilla ice cream. To simply put it, this bowl of sweet goodness was the perfect ending to what will be a memorable evening for a very long time. The Cellar is a classy yet casual venue where it will be very easy to lose yourself in leisurely conversation, and great food and drinks, for hours. This place stays true to its tapas roots and we fell for it, completely. Now, it’s your turn.

CUCINA DE BADIR

As I quickly head over to Astor Grill – a beautiful rustic restaurant with an awesome open-kitchen, located at The St. Regis

Doha – I greet Chef Seetul and from his humor, I can tell this will be an incredible cooking session. We make our way to the kitchen, excited to see what Chef Seetul and his enthusiastic team have in store for Cucina De Badir.

Little did I know, we would start off with my all-time favourite dish: Butternut Squash Soup with Cinnamon Foam and Pumpkin Seed. We started off by adding some butter, onion, and celery, all together in a frying pan. We later added a pinch of salt and pepper to all the ingredients. For vegetable-lovers, Chef Seetul recommends adding your choice of fresh veggies to the frying pan too. As the ingredients in the pan sizzle to a nice colour, we cut some squash slices in thick, even pieces. The chef adds: “Cut the squash evenly, so at the time of blending all of the pieces will be properly cooked.” Next, we add our frying pan contents and squash pieces to a soup pot, with water – the chef recommends letting everything boil for about 15 minutes. As we continue with our foodie journey, we start prepping our delicious sweet touch to the dish; cinnamon and milk infusion. First up we put truffle butter, salt, and Parmesan cheese in a frying pan and mix well. At the same time, the delicious squash is blended and poured into a dish! The butternut squash soup is all ready; we add just a touch of milk foam and

pumpkin seeds on top, and voila! The soup was absolutely yummy, and we’d highly recommend ordering it to start off your dinner at Astor Grill.

For a delicious and tantalising main course, Astor Grill delivers one of the most delectable choices of beef in town. So, it was only fitting that next I was going to try my hand at cooking the herb roasted beef tenderloin with seared foie gras, whipped potato and truffle sauce – how good does that sound? As Chef Seetul explains a trick, or two, about the beef ’s quality and cooking techniques, he starts adding salt and pepper all over the beef – making sure the tenderloin is completely covered. We add some high burning density oil to the pan and let the beef fry, evenly. The charismatic chef let’s me take full-control of the situation and I add butter, onion, and rosemary to the pan, letting everything fry together for 15 minutes. We place the beef into the oven and let it sit. Next, we prep for the delicious whipped potato. We cut some thick slices of potatoes and let them boil.

Once they are ready we mash them all up! To the whipped potato we add butter and salt. The beef is then out of the oven and put aside to rest before plating up with the whipped potato side. The meat is tender, and every component on the plate complements each other so well – a mouthwatering main that we loved.

For a sweet end to a fabulous cooking experience, I’m treated to pecan pie. We immediately start thinning the dough, later placing it into the mold. As we clean the edges, Chef Seetul surprises me with a new technique that I’ve never seen before: blind baked pastry. It consists of adding a plastic wrap to cover the dough with some rice on top to create weight. The chef advises to make sure no plastic wrap is in

contact with the mould. We place it in the oven at 165 degree Celsius. I melt some butter with maple syrup and blanched some sugar with two eggs and vanilla extract in a bowl. Then we carefully pour the melted butter and maple syrup over the eggs and sugar mix. Once our pastry is done, we add some pecan nuts and we

gently pour our maple mix on top. We let it bake at 165 degrees Celsius for about 12 minutes. Every mouthful of this beautiful dessert is like a piece of food heaven.

From the appetiser to the main course and the lovely dessert – Astor Grill’s menu is palate-pleasing to say the least. The ambience is excellent, the food top-notch and the standard of quality ingredients is high. We also love the friendly staff and service – this place really nails it with an all-round great dining experience.We walked out with happy, full bellies… Hasta la próxima en la Cucina De Badir!

Being the foodie lovers that we are, we headed once again to a yummy restaurant for some tummy refill.

This time, FACT couldn’t resist tasting some luscious Arabic dishes. Kunafa Albisana located at Katara Cultural Village, has more to offer than just your typical Arabic sweet.

If you desire a relaxed environment, you might want to head to this tremendous place. We caught up with the restaurant’s charismatic chef, Abdelnaser Salim to try some of his delectable and one-of-a-kind recipes.

The Jordanian Chef has been living in Doha for the past five years and that piece of information led us to ask him about his thoughts on Doha’s food scene. “The culinary scene is great, I see a growth on a daily basis. Doha has a lot of great specialists,” says Chef Abdelnaser.

Kunafa Albisana has taken it up a notch by adding a variety of dishes to their menu, such as the Kunafa with Chocolate. That dish not only sounds good but tastes SO good! We also recommend you to try the Crispy Kunafa with cheese, which is a cheese lover’s dream! Enjoy the tasty goodness of their authentic Kunafa: a crispy, flour based batter, carefully created into noodle-length strips, served golden-brown with pistachio nuts over a gooey based on nabulsi cheese imported from Jordan – yum! CRISPY KUNAFAINgREDIENtS: Flour, corn starch, water, corn oil, milk, sugar, Nabulsi

cheese, sugar syrup, Jordan ghee, pistachio.

MEtHoD oF cookINg:Place Kunafa dough on a sauce pan; Set it on fire for

one minute and add ghee.

Add the Nabulsi cheese until it turns brown.

Dry the cheese from the water dew before plating.

Add sugar syrup and top it with pistachio. Ready to

serve.

SOFT KUNAFAINgREDIENtS: Flour, corn starch, water, corn oil, milk, sugar, turmeric

powder, Nabulsi cheese, sugar syrup, Jordan ghee,

pistachio.

MEtHoD oF cookINg:In a saucepan over medium-high heat, mix the dough

with the vegetable ghee. Add the Nabulsi cheese.

Mall. It’s similar to a couple of my favourite hangouts in London so it helps to go there and I feel at home again (minus the rain!).

My main objectives this year are to help bring together our traditional values and expertise

with modern day European techniques and innovation to create a base of sustained professional and personal development in the local and international market. As a

World Master Chef, I believe we have a big responsibility both within the profession as

well as to our customers to drive the standards of culinary excellence in every field of our

business. On a purely personal and fun level I want to try dune jumping in the dessert!
