“ As the Executive Chef of F3 I wish to see only the best quality ingredients, cooked with care and skill, simply done, without too many fiddly garnishes, and

overall, food that people will enjoy and will enhance their matchday or special occasion.

My food revolves around flavours people will understand, taking classic dish ideas and cooking them with a mix of modern techniques and traditional

methods, not by using additives and chemicals to enhance flavours.

I love nothing more than pairing a well-seasoned, beautifully cooked piece of quality meat or fish, say Halibut for instance, poached in fennel and lemon butter, with the best of seasonal produce. Samphire, spinach, velvety potato puree and Gnocchi, a seared diver scallop, along with a little smoky charred

sweetcorn and some fresh dill... it makes me hungry just thinking about it!

Follow that with sharp fresh raspberries, brown sugar semi freddo, torched meringue and candied pistachios…
