Chocolate Chip Cookie Bars -1 cup butter, softened to room temperature -1 cup brown sugar -1 tsp vanilla extract -2 cups flour -1/4 tsp salt -1 cup semi-sweet chocolate chips -1 cup chopped walnuts or pecans 1. Preheat oven to 350°. Line a bakers quarter sheet or a 9X13 pan with parchment paper. 2. Beat butter, sugar and vanilla together until well blended. Add in flour and salt and mix until blended. 3. Stir in chocolate chips and nuts. 4. Press mixture into the prepared pan. 5. Bake 20-25 minutes, until edges are lightly browned. Cool 5 minutes and cut into squares. Remove the mixture from heat and add the pudding mix, stirring well until combined. 3. Add the pumpkin pie spice and vanilla and mix well. Mix in the oats and then let the mixture sit for about 5 minutes. 4. Use a cookie scoop to drop the mixture by tablespoonfuls onto a cookie sheet lined with wax paper.
