Hats off for the 2014 “Where East meets West” Annual Wagyu Conference San Antonio, TX

More than 230 enthusiastic Wagyu breeders gathered in San Antonio for the annual conference of the American Wagyu Association to hear reports of breed growth, positive return on investment and to cap off a multi-day program with a James Beard Celebrity Chef dinner focused on the entire Wagyu animal. The out-standing dinner featured a gastronomic line-up of fine food that you would only experience in the Five Star restaurants of New York, Paris or London.

Well done to all the participating chefs, you have certainly done the Wagyu Industry proud by showcasing this wonderful beef!

The 2014 Annual Wagyu conference featured a myriad of subjects designed to make life a lot easier for the Wagyu cattle producer. From a

thorough explanation of DNA through EPD’s, and animal husbandry to a solid explanation of the beef grading system and the creation of the many new and different cuts that are available to the meat fabricator. Another interesting presentation was a detailed look at the weather and how it affects us as ranchers.

Dr. Jimmy Horner of Protocol Technologies who has long interfaced with Japanese breeders on the feeding and han-dling of Wagyu cattle presented a very inter-esting discussion on the role of low stress handling and proper animal husbandry in the raising of the Wagyu feeder steer. Studies have shown that animals with virtually the same DNA could vary tremendously in the production of the final beef product based on the handling they received and specifically the very positive effect of stress or the lack thereof. “It’s not just about DNA “was a message that was well received by the enthusiastic audience.

Michael Beattie, the executive Director of the Ameri-can Wagyu Association reported, at the Association’s AGM that wagyu bulls are more in demand than ever.

“As the National cattle herd is rebuilding, following the drought, the need for low birth weight, calving ease bulls has never been greater, and Wagyu bulls are ideally suited to fill this need. These bulls also pass on increased value associated with the sale price for all percentage type Wagyu cattle.”

Topping it all off was a presentation by Wagyu breeders from Australia, who described the many similarities and also the differences between our two beef raising operations. Wagyu simply means cattle of Japan or Japanese cow. These cattle, imported in limited numbers to the United States in the early 90’s, have expand-ed significantly as their reputation for superior marbling has spread literally around the world.

Following a most successful Wagyu Conference many of the attendees moved down the road to Floresville for the 2014 Alamo City Wagyu Sale where highest lot sold for $14,500 to gross $209,300

THE WAGYU LEGACY

CARCASS CONTEST

All of our members who attended our annual meeting in San Antonio received a copy of our program, it’s titled “The Wagyu Legacy”, and is really a document to remember. I was looking for some sale information and had a stack of prior meeting hand-outs and I have to say that on weight alone this year’s offering far out-weighed prior editions. If you haven’t done so, take the time to look through this “reference” work. The program really does have everything, from the many outstanding advertisements, to a complete members roster, and AWA Guidelines. The program also includes a great article by Jimmy Horner, a gestation table, a list of beef cuts and even a calendar. Nice Job Staff.

Don’t forget to start planning now for the fed beef contest which will be judged in conjunction with the National Western Livestock Show in Denver in January 2017. Grant Robinson has done a lot of work putting this together and asks that you begin formulating your plans now. We have contacted a most comprehensive feedlot operation in Ault Colorado. Double J has the capability to feed your entry all the way through, or to finish your animal or to hold it for a couple of days or weeks till the kill date. They’ll also host the contest and handle all packaging shipping etc. Grant reports that we’re currently looking at a couple of venues for a gala wagyu dinner. More later but begin planning now.
