Fall Fermentation (3 class series)

Saturday October 4th, 12:00pm – 2:00pm

Saturday November 15th, 12:00pm – 1:30pm Saturday December 6th, 12:00pm – 1:30pm

$81 General Public, $73 Friend of the Farm

This series will guide you through 3 different types of fermentation. Learn the techniques but also the benefits of this age long process. Session 1 - All Pickles Considered (Saturday October 4th, 12:00pm - 2:00pm). "What's the difference between a Bread & Butter pickle and a Full Sour? Can I make pickles without canning them? Is there actually a pickle made by burying vegetables in soggy rice bran and, if so, do I want to eat

it?" Learn the answers to these questions and much more in this comprehensive crash course on pickle-making. Topics covered will include acidified pickles, lacto-fermentation, canning, refrigerator pickles and Japanese nukazuke pickles. Participants will learn techniques, sample pickles, receive recipes and start their own batch to complete at home. Session 2 - Sauerkraut and Kimchi (Saturday November 15th, 12:00pm - 1:30pm). "Which types of cabbage are best suited for sauerkraut and kimchi? How much salt do I add to coax enough water out of the shredded cabbage? Is Kimchi a vegetarian dish or not?" The short answer to these questions is -- it depends. Long answers will be revealed in this class on the ins and outs of these Cross-Cultural Cabbage Condiments (CCCC). Participants will learn techniques, sample products, receive recipes and start their own batch of CCCC to complete at home. Session 3 - Dairy Ferments and Kombucha (Saturday December 6th, 12:00pm - 1:30pm) Creating your own cultured dairy products is a simple, fun and thrifty activity. With just a few ingredients and an understanding of the art of "watchful neglect", you can quickly transform milk and cream into delicious yogurt, kefir, buttermilk, cultured butter and crème fraîche. In this class, you will learn how to make all these products, sample them and receive both recipes and cultures to bring home. Also covered in this class: kombucha -- the tangy, fermented tea that everyone is talking about. Instructor: Jon Orren Location: Newton Community Farm
