Combining contemporary elegance with a highly sophisticated concept and exceptional service, The Library’s award-winning restaurant, The Page, is designed to be a refreshingly modern take on Koh Samui’s upscale dining scene. With an open-air deck terrace which runs alongside a vividly red swimming pool and a grandstand view of Chaweng Beach in front, it is easy to get amazed with the wondrous charm the restaurant provides.

As evening falls, one can move to the deck’s romantically lit tables and bask in the soft glow of illuminated trees indigenous to the setting. Furthermore, brilliantly placed orange lanterns and flickering candle lamps add an air of magic to an atmosphere already full of superlatives.

The Page is all about unique experiences, which are found nowhere else on the island. From the delightfully original Breakfast Culture by the beach to an extensive cocktail selection at the beach bar (101 in total + 10 tapas and 10 snacks), The Page is a restaurant destination that stands out in the crowd.

Menu offerings are of Thai and international fusion and are an all-day dining affair. The

Fresh Tuna Salad with Spicy Thai Herbs is an ideal local starter as recommended by the resident chef, followed by a healthy serving of Grilled Lobster with Cashew Nuts and Dried Chili - an ultimately sublime cuisine worthy of a special trip to Chaweng.

The delicious international dishes are equally arresting. Seared King Scallops with Red Pepper Coulis, a popular starter, seems to fit perfectly with the bright and breezy surroundings. The star of the show is the Tenderloin of Wagyu Beef MBS9+. With top marks on the Marbling Score, this is undoubtedly the best beef on the island and is unique in its velvety melt-in-the-mouth texture and juicy tenderness of meat. The Page also features a walk-in wine cellar displaying a wide range of excellent Old and New World choices to complete the evening. Indeed, the whole resort deserves a walk around with its sleek minimalist architecture, beautifully manicured gardens and old trees and tastefully arranged “Reader” sculptures – a signature of the location.

The Drink Gallery seems to have stepped out of an extremely cosmopolitan city to suddenly grace the beach road in Chaweng. Vibrant and modern, it’s more of a chilled-out venue rather than being a self-conscious one. Step in and be welcomed by staff who are friendly and truly professional; they quickly appear when you need them but don’t hover. The atmosphere is most definitely laid-back. Everything is spotlessly clean and the restaurant has a neat, uncluttered feel to it. The place is designed by The Library, which is situated next door and is known for its minimalism and chic interiors. The Drink Gallery is less minimal, though most visitors will be immediately aware of its spaciousness. It must have one of the highest ceilings of any bar in Thailand – two stories high! A glass wall, meanwhile, separates all the hustle and bustle in the street. Outside there’s an enormous terrace where you can enjoy the night air.

The drinks menu is varied and strikingly original, thanks to Dhasan Prabhananda. He jokingly describes himself as a “mixultant” and says his inspiration comes mainly from the kitchen and from cooking. Many of his drinks are creative and uniquely blended. Try Jarhead – vodka mixed with mint, lime, apples and kiwi served in a mason jar, or Blushed – rum with watermelon, lime, vanilla caster sugar and fragrant Italian basil. Drink Gallery opens from 1PM till 1AM. There’s nightly entertainment too with a special Jazz session every Saturday. Food, of course, is dependably good, tasty and portions are ample. Signatures include Samui Rangoon, Roasted Garlic Ravioli and Seared Australian Veal Steak among others

The View from the Top

Easily one of the most sophisticated of Koh Samui’s venues for eating and drinking, 9GEMS Lounge Restaurant appears to be ahead of itself in time. It looks as if it’s stepped right out of an interior design magazine. The chic minimalism of the setting with to-die-for interior design gives 9GEMS both a relaxed and a spacious feel at the same time.

Thanks to its location, perched right on top of a hillside, you’ll experience some of the best views on the island. The whole of Chaweng is spread out before you, making this an ideal place to watch the sun go down while you enjoy a long drink or cocktail.

When it comes to dinner, you can expect the dishes to be every bit as sophisticated as the décor itself. Enjoy contemporary takes on Thai and European cuisine. For starters, try fusion chicken tandoori salad, with the dish subtly nuanced by soy sauce and balsamic vinegar. Tagliatelle comes with pesto or tomato sauce but you can also try it with Thai-style massaman curry. The bread, by the way, is home made, as is most of what you’ll find at 9GEMS with very little in the way of any outside processing at all.

When it comes to main courses, enjoy a roasted aurora rack of lamb marinated in pesto and tandoori spices or if you’re a fish lover, try grilled tuna with pepper turmeric on

an asparagus bed with egg risotto. Tastes at the restaurant cross effortlessly between east and west, and have been created by the chef-owner who grew up in Thailand but lived for years in Europe.

With its excellent food, décor and views, recently-opened 9GEMS Lounge Restaurant is definitely worth heading for.

Want an Italian pizza that’s as close to perfection as you can get? Long for the great tastes of that only a wood-fired oven can provide? Well here it is - Chef Lorenzo Belloni serves up pizzas a-plenty, both traditional and with some new takes.

If you like your pizza base thin and crunchy, and topped with some amazing creations, Lorenzo provides them. Try Margharita di Bufala – a 400 year old recipe is enhanced by the ultra-delicious buffalo mozzarella. Naturally, if you would like a great-tasting calzone, you’ll find it here: try the misto funghi with porcini mushrooms and truffle cream. Lorenzo’s also come up with some special pizzas he’s named after Italian fashion designers. All sound mouth-watering. Try the Gucci, which is goat cheese, for di latte mozzarella, wild boar sausage, broccoli and gruyere. An unusual mix, you’ll agree – but it works. If pizza isn’t your thing, there’s a whole gamut of other dishes: pasta, risotto, filet of beef,

pan-fried salmon, and of course, to round the evening off, some highly decadent desserts.

Waitstaff are wonderfully discreet yet friendly, and you can watch Lorenzo himself work in the open-plan kitchen. This is the kind of place that oozes unfussy attention to detail: you know that every square millimeter of the restaurant, every smidgen of taste has been thoughtfully and lovingly considered. The restaurant also features a procession by Thai dancers on Wednesdays, when the weekly night market is held in Choeng Mon, and crowds flock to the area.

Ciccio is blended in with Samui Sailor Grill & Restaurant, which offers excellent Royal Thai cuisine (the chef worked for the royal family and had her own TV show) so it’s ideal if you want to mix and match cuisines. Since there’s no real divisions between the restaurants, you can sit where you like, whether it’s a pizza you’re after or a Thai treat.

Samui Sailor has a landmark tower with two upper floors for dining, or you can eat inside on the ground floor. Ciccio is an outdoors kind of place with tables and chairs arranged underneath the trees of a patio. Children will also love it, thanks to the sense of space and freedom. They, and you, will soon be hankering for a second visit – even more so as Ciccio turns out to be extremely affordable given the superb quality of the food.

Beach Republic is more than just a restaurant. A native of Canada, Stephen began his culinary career as an eighteen year old apprentice, at the famed restaurant Les Halles in Quebec under the leadership of Dominic Crovosier. After working in Singapore, Bangkok and Malaysia he spent two years in a unique assignment as Private Chef to His Majesty the King of Jordan where he catered for many high profile dignitaries and visiting Royalty. His love for Thailand saw him return to Bangkok where he spent five years at the Lebua at State Tower Bangkok (also known as the Dome). He started out as Chef de Cuisine of their Sirocco restaurant and within a few years became the Executive Chef. Chef Chai’s roots stretch beyond the shores of Samui to the northern capital of Chiang Mai where his passion for Thai cuisine was born in the comforts of his family kitchen. As a youth, he delighted in helping his mother in the preparation of the family’s meals and became inspired by the sights and smells which surrounded him.

This curiosity for all things culinary was nurtured during his formative years until he took on apprenticeship roles at local Thai eateries in Pattaya and Bangkok following his education. As a means to expose himself to service operations, he assumed a position at Vertigo, Banyan Tree Bangkok’s al fresco rooftop restaurant and bar, where he remained for five years under the guidance of Banyan Tree’s Director of Cuisine.

As Banyan Tree Samui was set to launch in 2010, his desire to return to the kitchen was fulfilled when he joined the pre-opening team at Saffron. Under the tutelage of Banyan Tree’s Corporate Chef, he refined his skills to swiftly rise to become head chef at the resort’s signature restaurant where he serves delectable dishes from all regions of Thailand. Having paid his dues at some of Samui’s well-known resort-restaurants including The Library, Beach Republic and Rockpool, Martin recently took a leap of faith and opened his very own restaurant in Chaweng, The Larder.

With his cooking philosophy centred around simplicity, Martin was keen to share his ethos with both locals and tourists alike and so began The Larder nearing the end of 2012. Working with the same principles and execution, The Larder is just as Martin always envisioned. Simple. Good. Honest. Food

Chef Carlos Gaudencio recently joined Anantara Lawana Resort & Spa, bringing his modern take on Asian and Western cuisine to Koh Samui.

“I always aim to impress with new and exciting dishes,” he said. “I have to be very creative in the kitchen to craft distinctive dishes that will delight guests.”

Some of his captivating creations include Canadian lobster with red radish petals, red radish shavings and apple marshmallows; velvet legume cappuccino with truffle oil emulsion; and roasted corn-fed chicken breast with chocolate cassis sauce.

Chef Carlos earned a Culinary Diploma from France’s Lycée Hôtelier de La Rochelle and fine-tuned his culinary skills under three-star Michelin chefs Guy Savoy, Alain Passard and Guy Martin in Paris before journeying to Asia, where he worked with the Mandarin Oriental Bangkok and its French fine dining restaurant, Le Normandie, and the Farang Ses restaurant at the Dhara Dhevi Chiang Mai hotel.

Before presiding over the kitchen at Anantara Lawana, he worked alongside three-star Michelin chefs such as Santi Santamaria, Thomas Keller, Marc Haeberlin, Juan Amador, Annie Feolde, Klaus Erfort, Sebastién Bras, Christian Le Squer, Michel Roux, Pierre Gagnaire, César Troigros and Cristian Bau.

“The thing I most wanted to do was be an architect,” says chef Sathit Muangprom. “I always wanted to create something special, something that would stand out.” He then discovered he also loved cooking. However, he didn’t choose one dream over another. He combined both and the result is 9GEMS Lounge Restaurant. Both the architecture and design of the restaurant are all his creation and are impressive in their own right. And what you eat here is equally as good, making this a dining experience to remember. Sathit has had plenty of cooking experience. He originally learned in Thailand, where he began providing dinners for his brothers and sisters, but then went to Europe. After spending two decades in Switzerland, where he learned European cuisine, plus traveling all over the world, it’s not surprising his tastes are very eclectic.

“My favorite dishes,” he says, “are fusion tandoori chicken salad and Home-made potato gnocchi. I also love Thai-style sea-bass with chili and basil. I make lots of Italian dishes as well as French patisserie. I’m not one for ready-made food from a shop – I prefer to make everything by myself.”

Sathit is a great believer in multi-culturalism and aims for his food to be like the restaurant he’s built and designed – a combination of both Thai and European. With both quality design and food, he’s succeeded in combining very different creative dreams.

Chef Ik, Bunn Borriboon, cannot contain his excitement in being once again a part of BEYOND THE SEA, Siamese Brasserie, this time as its Culinary Stylist. He is known as a culinary trend setter from the Krua Indy TV Program. Recently, he had kept himself busy as an ingredients specialist for Iron Chef Thailand, which is aired on Channel 7.

In 2012, Chef Ik with Thailand’s gastronomic team, won the Silver Medal during the International Food Fair Korea which was held in South Korea. He was handpicked by Chef Willment Leong, the Founder Chairman of Thailand Culinary Academy together with other 10 very talented chefs for the said competition. Aside from this, he was also a part of the GASTRONOMIQUE 6 project 2012 of ShaSa Resort & Residences in Koh Samui. Whenever he visits ShaSa Resort & Residences during vacation, he acts as the consultant for BEYOND THE SEA, Siamese Brasserie. Chef Woothigrai, also known as Chef Woody joins the Conrad Koh Samui team from one of the luxury resorts in Phuket, the Pullman Phuket Arcadia Naithon Beach Resort, where he held the position of director of culinary.
