SERVES 4

Melt oil and butter in a medium-sized pot. Fry onion and cook until softened.

Add garlic and cook for 2 minutes more. Stir in curry, cumin and coriander and

cook for 1 minute. Add potato, orange juice, zest and stock, cover and bring to

the boil. Reduce heat and simmer for 10 minutes. Blend until smooth using a

stick blender. Stir through the chicken, chilli and coriander. Season to taste.

Serve with bread.

1 tbsp (15ml) oil

1 tbsp (15ml) butter

1 onion, chopped

2 cloves garlic, crushed

4 tsp (20ml) curry powder

1 tsp (5ml) each ground cumin

and coriander

3-4 cooked sweet potatoes, sliced

Juice (80ml) and zest of 1 orange

4 cups (1 litre) chicken stock

1 part roast chicken, shredded

Chilli and fresh coriander for

serving (optional)

Salt and milled pepper

Crusty bread for serving

LEMONY ROAST CHICKEN

Preheat oven to 180 °C.

Rub 1 large (1.2kg)

chicken (giblets removed)

with ¼ cup (60g) softened

butter and season. Place

2 lemon wedges and

4 thyme sprigs inside

chicken cavity. Place

breast-side up in a roasting

pan and squeeze over juice

(60ml) of 1 lemon. Drizzle

with 2 tbsp (30ml) olive oil

and season. Scatter with

fresh thyme and roast for

60-90 minutes, basting

with pan juices every

15 minutes until cooked

through. Garnish with

fresh thyme and serve with

a green salad on the side.
