BLACKENED SALMON WITH GRILLED MAPLE BUTTERNUT SQUASH
GRILLED CLAMS WITH SPINACH AND CELERY
1½ pounds wild salmon fillet or Arctic char, skin on
1 large butternut squash, washed
1½ teaspoon salt
1½ tablespoon maple syrup
Cooking spray as needed
20–24 clams, shucked and chopped (shells reserved)
2 garlic cloves, finely chopped
2 tablespoons extra-virgin olive oil
½ cup baby spinach
½ cup finely diced red bell pepper
¼ cup peeled and finely diced celery
2 slices turkey bacon, crisped and finely diced
½ cup whole-wheat bread crumbs
Salt and pepper to taste
Cedar planks, soaked in water or wine (optional) as needed
1 lemon, wedged
BLACKENED SEASONING
1 teaspoon ground white pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground chili powder
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon ground black pepper
1½ tablespoons canola oil (so salmon does not
stick to grill)
Serve this tasty dish with a vegetable and salad.
You can always eat these clams
as an appetizer instead of an
entrée. If you keep the dish as an
entrée, then make it a complete
meal with a starch or vegetable.
Sauté the garlic in the oil until it starts to
brown. Add the baby spinach, peppers, celery,
and bacon, and cook until the spinach wilts and
most of the excess liquid evaporates. Transfer
the mixture to a bowl to cool for 10–15 minutes.
Add the bread crumbs to the bowl; adjust
the seasoning; add the raw chopped clams; and
mix one last time.
Preheat grill to high. Divide the stuffing
among the reserved clamshells. Place wood
planks on the grill and then place the stuffed
clamshells on top of the planks. Cover the grill;
cook until the clam filling is fully cooked or to
your desired doneness; and serve with
lemon wedges. 5
Preheat grill to medium high. Peel the squash, and cut off the top
and bottom. Slice in half lengthwise; scoop out pulp and seeds;
and discard. (Keep the seeds, and roast them for a snack!) Slice
the squash into long slices from top to bottom about 1 inch thick;
season with salt; spray with cooking spray; place on the grill; and grill each side for 5–10 minutes or until fork
tender. Take the squash off the grill; cut it into ½-inch cubes; and drizzle it with maple syrup.
Combine and mix all of the ingredients for the blackened rub in a small bowl. Brush the salmon with 1
tablespoon of oil, and rub the entire salmon filet with the blackened seasoning. Before putting the salmon on
the grill, brush the grill grates with the remaining oil. Place the salmon on the grill, skin side down.
Close the grill (so it acts like an oven for even cooking); grill for 4–5 minutes; then gently turn the salmon
over and grill for another 4¬–5 minutes. Take the salmon off the grill, and set it aside to rest for 10 minutes. If
the salmon seems slightly raw in the center, don’t worry; it will continue to cook while resting.
Remove the skin from the salmon before serving it with lemon slices. 5

• Orpingtons are stunning and are often featured in magazines. They have
lovely personalities and are calm and inquisitive. Because of their size they
are not flighty nor escape artists, but they need larger houses with low
perches. Their feathers are gorgeous and soft. They come in black, blue, buff,
and white. They do go broody and make lovely mothers. For a pure breed
their eggs are large and they produce around 160 in a season, but because of
their placid nature they can be bullied by other breeds.
• Polish are lovely and have a huge ball of feathers on their heads (crests).
They are very comical to watch, extremely good pets, and a reasonable layer
of small white eggs. They do need extra care because of their head feathers;
they can be prone to eye infections and are best kept with their own kind.
Their crest also impairs their vision, which makes them slow to react,
so they are best kept in runs.
• Welsummers are traditional farmyard chickens that lay lovely dark
brown eggs, and lots of them. They are hardy and spend a lot of time foraging.
They don’t go broody too often, but when they do they make fabulous
mothers. I had several Welsummers a few years ago and they often used to
trot into my sunroom to share my after-dinner desserts!
Bantams are the smallest chickens, with no large counterparts, and are very popular when space is an issue. Examples are:
• Japanese Bantam are really elegant chickens with very upright tails and
slightly drooping wings. Their legs are very short and can hardly be seen.
They are not very good in the cold or in wet weather as their chests can get
very wet due to their tiny legs, so they are better suited to a sheltered area or
being indoors. They make great, friendly pets so are extremely well suited to
small children. However, they are not very good egg layers at all.
• Bantam Cochins are my favorite small chickens. They walk like Charlie
Chaplin and have personalities that would suit a lion. They do need a dry run
as their short, feathery feet can get very wet and muddy. They are hardy and
robust, and mix well with most breeds if given enough space. They are good
broodies and make very protective moms. Expect around 120 small-sized
eggs a year, although this number really does depend on how much time
they spend being broody. You will see Bantam Cochins in a vast array of
colors.

What can you expect on this adventure? As I spoke
with scores of backyard homesteaders, consistent themes
popped up. Most are pleased to achieve a degree of
self-suffi ciency in growing their produce, unhampered
with doubts about what went into the food they put on
their tables. They’re glad to fi nd ways to be kinder to
mother earth, sustaining their food supply with minimal
dependence on petroleum products, building up the soil
as they take from it. Most love the honest toil involved
in a farmstead, away from the fl ickering screen of a
computer. Tilling the soil and turning compost strikes
them as much more sensible exercise than a trip to the
gym. They enjoy the friends they make along the way,
especially the old hands whose passion for farming is so
contagious. Lastly, they’re fascinated by animals and love
the adventure of partnering with other creatures.

And of course, they love engaging with the mystery
that is life itself. Even a simple 4 × 8-foot garden plot
can be loaded with discovery—the wonder of tiny pea
sprouts emerging from the soil, the momentous presence
of a gigantic zucchini lurking under a plant’s canopy.

provide even more wonder. My friend Ernie Schmidt,
a veteran backyard farmer, recalls listening to a hive of
happy bees on summer evenings. “It is just uncanny,”
he says. “They sound like the wind in a forest canopy.
There is something magical about that noise.”
And maybe that is the greatest allure—being part
of the magic. Life, rather than being packaged in plastic
wrap, is there in all its rich variety, surprise, and gener-
osity. Right in your own backyard.

These structures are often attached to a
house or garage wall to train climbing
plants, but they can also stand alone to pro-
vide vertical landscaping in the middle of your
yard. In either case, be sure to select a trellis
that can adequately support the plants that
you choose to grow.
Many homeowners use trellises to screen
an unwanted view or as a divider. In design-
ing your trellis, choose exactly how much pri-
vacy you want. Lattice pieces that are woven
tightly together effectively block views even
when plants are dormant during the winter
months. They also serve as a windbreak.
Open lattice patterns do not provide as much
privacy, but they do give the structure a light,
airy appearance. When used as a fence, a trel-
lis is a more friendly way to separate your
property from that of your neighbors.
Be sure to match the size of the trellis that
you are installing with its location and use. A
large trellis can overpower a small area, such
as an herb garden, just as a small structure
plopped in the middle of a large lawn will
look out of place.

APPLYING FINISHES
You can apply any type of finish or preservative with a
brush, roller, or spray gun. While brushing is the most
time consuming, it is often the best method for painting
or staining fences with spaced boards or pickets. Rollers
work well for fences made with solid boards or plywood,
but you’ll still need a brush to reach areas that the roller
misses.
Spray guns can work well for designs that would be
time consuming to paint with a brush and roller, such as
those with latticework or basket weave design. But a
spray gun will not save much time when painting an
open design, such as a post-and-rail fence, and you’ll end
up wasting more paint than you would with a brush and
roller. You will also need to spread drop cloths or drape
plastic sheeting to prevent overspray from damaging
nearby plants.
Redwood and cedar are expensive, elegant woods, so
they’re often stained or left to weather naturally. But
some people paint these woods, especially if they’re
using cheaper or rougher grades. Both species bleed,
which means that brownish-red tannins in the wood will
seep through light-colored paints and discolor the finish.
To prevent bleeding on freshly milled redwood, cedar, or
even pine, apply one or two coats of stain-blocking
primer to all knots and other areas that might bleed. Fol-
low with a coat of alkyd primer to thoroughly seal the
wood. If bleeding is not a concern, simply apply an alkyd
or latex primer to all sides of any bare wood. Semitransparent stain offers an evenly weathered look.

T - in Springfi eld, Massachusetts,
had been slowly restored over the years, and it was now the
bath’s turn for a modern update. Interstate Custom Kitchen
& Bath, Inc., gutted the room to the studs and completely
reframed the shower and tub areas.
Because of the hip roof, the room’s confi guration
presented a small challenge when the project was started.
However, special planning and custom cabinetry solved
the problem. Th e dark wood used for the cabinets was the
perfect complement to the rest of the home.
Th e homeowners also wanted to keep the glass-block
window, which had previously been boarded up and,
therefore, did not allow natural illumination to enter the
space. Th e designer also removed a closet, which opened
up the room and allowed for the addition of the walk-in
shower. Th e radiator was also removed and replaced with
an alternative warming device: radiant
heating, which was installed under the
fl oors.
Th e designer took future maintenance
needs into consideration as well and
created access to the whirlpool mechanics
with a removable panel. A framed mirror
adds to the elegance of the bath, as does
the lovely granite whirlpool tub deck.
Now this formerly outdated space has the
contemporary renovation it deserved. «

Wood Decks
If you want wood decking for your outdoor kitchen and
dining area, you’ve got three choices: pressure-treated
(PT) wood (the most common), untreated woods that you
must treat yourself, and woods that are naturally resistant
to insects and decay. Pressure-treated wood, typically
made from pine, hemlock, and fir (with southern pine and
Douglas fir being the most common species) is a practical,
inexpensive, and durable choice for flooring. It will require
a yearly cleaning and sealing to keep it looking good,
however. Skip a year or two and you may have to contend
with warping, checking, and splintering.
PT wood is no longer plagued by concerns about toxi-
city. Today’s PT lumber processors have replaced arsenic
with copper compounds, such as alkaline copper quater-
nary (ACQ types B and D) and copper azole (CA-B). The
new formulations pose no known threat to humans but
may affect marine life. However, copper compounds are
highly corrosive to other metals, so hot-dipped galva-
nized or stainless-steel fasteners are recommended. Steel-
framing hardware, such as joist hangers, must also be
shielded from contact with ACQ- and CA-treated wood,
typically with a self-adhering membrane. PT wood color
ranges from dark greenish-brown to light brown, and it
can be stained or painted once it’s dry.
Untreated woods, such as fir, pine, and new-growth
cedar, should be treated with a preservative and require
