How to Use This Guide to Protect Your Health

As the dangers of genetically modified foods (GMOs) become more apparent, many consumers have become desperate to find ways to reduce their consumption of these lab-created products.

In this reference guide, one of the nation’s top nutritional researchers, Russell Blaylock, M.D., uses his decades of expertise to recommend strategies that will allow you and your family to avoid these “Frankenfoods.”

Because GMO foods are so widespread, it is almost impossible to avoid them entirely, but this booklet will help you and your family reduce your risk by lowering your intake of gene-manipulated products.

Here’s how to use this publication:

• Take this booklet with you when you shop for food. Asyougothroughthestore, checkthedifferentsectionsoftheguidesoyouknowwhichfoodscontain GMO ingredients.

• Learntodecodefruitandvegetablestickersbyfollowingtheinstructionsonpage10.

• Check page 12, which lists ingredients that are geneticallymodified.

• Consult page 20 to GMO-proof your shopping list.

• When you eat at restaurants, check page 22 to order food that is less likely to contain GMOs.

• Find the best places to buy non-GMO foods by looking at page 23.

Introduction

Dangers of GMOs: What You Need to Know

By Russell Blaylock, M.D.

“GMO” is an abbreviation for “genetically modified organism,” a phrase that describes foods and food additives that are genetically engineered. It means that a foreign gene has been introduced into a plant or animal. Studies show that eating GMOs can be harmful to our health, having been linked to cancer and premature death. What’s more, GMO ingredients are now in more than 75 percent of foods in America. Here’s the worst part: GMO foods are not required to be labeled. This means that most of the time, we don’t know that we are eating them even though they are virtually everywhere in the supermarket.

GMO’s Silent Supermarket TakeoverGMOs quietly began to appear on shelves in 1994

and they slowly infiltrated supermarkets. For years, there was little public outcry because customers didn’t know they were eating lab-created food. Food manufacturing giants were able to stop legislation requiring GMOs to be labeled as such.

More ChemicalsGMO crops are genetically altered to resist insects,

produce higher levels of certain nutrients, and resist the toxicity of herbicides. The stronger herbicides are more effective in killing weeds, but they also leave a more toxic residue within the plant, which is passed

Russell Blaylock, M.D., is a nationally recognized board-certified neurosurgeon, health practitioner, lecturer, and nutritional researcher. He has written four best-selling books on nutrition and wellness and has served as clinical assistant professor of neurosurgery at the University of Mississippi Medical Center.

on to us when we eat it. In addition, the genetic alteration of the plant has been shown to cause serious health problems and early death in animal studies. The evidence is clear: GMOs harm our health.

Scary ResearchA study by French and Italian researchers,

published in the journal Food and Chemical Toxicology, found this: Death rates were five times higher among male animals fed GMO corn, and six times higher among GMO-fed females. The GMO-fed animals, especially females, very rapidly developed massive cancerous tumors.

Studies also show that it may take decades for the effects of eating GMOs to become evident in humans. Animals eating GMO corn pass on fertility problems for three generations. In people, that would mean children and grandchildren have fertility problems because their parents ate GMO foods. The impact of GMOs on human health is not fully known, but what we do know is terrifying.

Banned in Other CountriesIn 30 other countries around the world, including

Australia, Japan, and all of the countries in the European Union, there are restrictions or outright bans on GMOs because they are not considered proven safe. In the U.S. on the other hand, the FDA has approved commercial production of GMOs based on studies conducted by the same companies that created them and profit from their sale.

TheOnlyProtectionThe only way to protect yourself and your

family against the effects of GMOs is to eat as few of them as possible. In America, it has become almost impossible to avoid them altogether. But by using smart strategies you can dramatically lower the grave risks associated with lab-created, DNA-manipulated foods.

Avoiding GMOs

Remember the 2 S’s and 3 C’s

Most GMOs come from only these five plants. About 90 percent of these crops are genetically modified.

SOY

Used in soybean oil, lecithin, protein powders, and vegetable protein added to many packaged foods.

SUGAR BEETS

Refined into sugar.

CORN

Used to make corn syrup, corn oil, and feed for many animals.

CANOLA

Made from the rapeseed plant, this oil is a common ingredient in salad dressings, mayonnaise, and snack foods.

COTTONSEED

Oil is used to fry processed foods such as potato chips. Common ingredient in baked goods and margarine.

5 Ways to Avoid GMO Foods

1. Buy OrganicBy law, organic foods may not contain GMOs, so buying organic products is the best and simplest solution.

2. Look for the Non-GMO SealThe Non-GMO Project is a nonprofit organization that certifies non-GMO foods with a Non-GMO Project Verified seal. (See image of seal on page 9.)

3.AvoidSyntheticHormonesLook for beef and dairy products without the synthetic hormones rBGH or rBST.

4. Avoid Obvious GMO IngredientsOn labels, the top 5 GMO ingredients — soy, sugar, corn, canola, and cottonseed — are often obvious. Corn syrup, soy flour, and cottonseed oil are examples. Avoiding the 2 S’s and 3 C’s will drastically reduce your GMO intake.

5. Recognize Hidden GMOsMany food ingredients are derived from the 2 S’s and 3 C’s but their names obscure the fact. For example, citric acid, a popular preservative, typically comes from GMO corn or sugar beets. Use the A-Z list of common GMO ingredients on page 12 to eliminate more GMOs.

OrganicOptions

Organic Labeling: YourBestProtection

Organic CropsMust be grown without the use of synthetic

pesticides, herbicides, or fertilizers. Organic crops are not allowed to be genetically manipulated.

Organically Raised AnimalsMay not be given hormones or antibiotics, must

have 100 percent organic feed or pasture, may never eat animal parts, and must have access to the outdoors year-round.

The Organic SealAny product certified with

this seal contains at least 95 percent organic ingredients and is 100 percent GMO-free.

Organic Products Labeled Other Ways

100% OrganicContains 100 percent organic ingredients and is GMO-free.

Made With Organic IngredientsContains a minimum of 70 percent organic ingredients and must not include any GMOs. May not carry the USDA organic seal.

Non-GMO Seal

Look for the Non-GMO Seal Another easy way to avoid GMOs is to buy

products with the “Non-GMO Project Verified” seal, sometimes described by food manufacturers as “Non-GMO Verified.” The seal does NOT mean that a food product is organic, unless it is also certified organic.

The seal is awarded by the Non-GMO Project, a nonprofit organization created by the organic and natural products industries.

It is the only independent organization that certifies products as “non-GMO” according to a strict set of standards.

The certification process includes ongoing inspections and testing of ingredients for genetically engineered DNA, and tracking the production of every food ingredient to ensure that there is no contamination with GMOs.

The Non-GMO Project uses the most advanced available scientific methods to detect GMOs and follows a rigorous set of standards, described in detail on its website at www.nongmoproject.org.

CrackingtheStickerCodeThe little stickers on produce can help you make

smart choices. They have a series of numbers, called PLU codes, which can tell you if a fruit or vegetable is organic, conventional, or GMO.

Remember: “Starts with 9, it’s fine.”

CONVENTIONAL

[ MAY BE GMO ]Starts with 3 or 4.

GMO FREE

“Natural” means only that a food product must be “minimally processed” and contain no artificial ingredients. This label can be on food from animals raised on GMO feed or given GMO hormones.

“All Natural” has no legal meaning. Products described as “all natural” may contain GMOs.

Surprisingly, foods labeled “GMO-Free” may contain GMOs. The term has no legal meaning.

The term “Pure” also has no legal meaning and there are no standards that support “pure” products being non-GMO.

DeceptiveLabelingMarketers have become skilled at making a

product sound healthy when it’s really no better than anything else on the shelves. Unlike organic labels and the Non-GMO Project Verified seal, the terms below don’t have clear definitions and are not backed by any standards that indicate absence of GMOs.

Decoding GMOs on Labels

GMO ingredients are often buried on food labels, so it’s important to educate yourself about where they hide. Ingredients that contain the names of the 2 S’s and 3 C’s — soy, sugar beets, corn, canola, and cottonseed – are easy to recognize as GMOs. But other ingredient names give little hint of their GMO content. The highlighted ingredients on this label of au gratin potatoes are very likely GMOs. Listed below are the “stealth” GMO ingredients in this product and the raw material from which they are made.

Meat, Poultry, Fish

Meat, Poultry, Fish: Not Always Safe

Animals and fish for human consumption are not yet genetically engineered. However, because GMO crops, such as corn, are widely used in animal and fish feed, conventional meat and farm-raised fish are adulterated with GMOs. In addition, cows and sheep may be given GMO hormones. This is how you can avoid such GMOs:

Buy Organic Meat and Poultry: Regulated by the USDA, the organic label means that meat and poultry was raised on 100 percent organic, non-GMO feed, and was not given hormones.

Buy Wild-Caught Fish: Fish are not genetically modified, but farmed fish typically eat GMO crops. Wild fish are not likely to contain GMOs. Beware: Canned fish, such as tuna, can be packed in GMO oil, such as soybean oil.

Buy (or Hunt) Wild Game: Wild game animals forage for grass and other natural plant foods and typically don’t eat GMO crops. However, in certain parts of the country, deer and other animals may feed in GMO cornfields.

BuyCertifiedGrass-FedMeat:The American Grass-fed Association certifies and allows use of this seal for beef, bison, goat, lamb, and sheep that have been raised exclusively on grass and other natural forage without GMOs. No hormones may be given to the animals.

Buy 100% Grass-Fed Meat: Unlike certified grass-fed meat, there is no legal definition for the label “100% grass-fed,” but there are many farmers who produce such beef without GMOs. It may or may not be certified organic, but farms often describe exactly how they raise their animals without hormones.

Misleading Meat Labels

As with other foods, the labels on meat, fish, and poultry can be misleading and make products sound healthier than they really are. None of the labels below legally prohibit GMOs.

• Naturally Raised • No Hormones

Dairy

Dairy Aisle GMO Land Mines

Beware of these hidden sources of GMOs in the supermarket dairy section:

• Nondairy milks: Soy milk, unless it’s organic, likely contains GMO soy. Almond, rice, or coconut milks are generally GMO-free unless they contain emulsifiers and added flavorings that are GMO. Look for the organic label or Non-GMO Project Verified seal (see next page) when buying nondairy milks.

• Nondairy creamers often contain multiple GMO ingredients, such as soybean or cottonseed oil, corn syrup or corn solids, and sugar (from GMO sugar beets). Look for organic ones.

• GMO whey is a common dairy-based food additive used as a binder to improve texture. Watch out for it on labels of processed cheeses, spreads, meats, chili, sausages, soups, gravies, and other sauces, stews, salad dressings, snack foods, candy, beverages, bakery products, mixes, and frozen desserts.

• Protein powders and shakes have become popular in recent years among athletes and other people who want to put on healthy weight. A staple ingredient in these products is GMO whey. Soy protein, also usually GMO, is another common component. Look for organic or non-GMO versions, which are often made with proteins derived from rice, peas, or hemp (non-narcotic version).

DairyAlternatives

GMOs get into dairy products through animal feed and artificial hormones (rBGH or rBST) given to cows that produce milk. The label below is from hormone-free milk. Be sure to look for this type of language when shopping for dairy products.

Avoid GMOs by choosing organic dairy products, including cheese, yogurt, butter, and whey. Or, next best, choose those that come from cows not treated with hormones. Also look for the Non-GMO Project Verified seal (as shown below). Hormones given to cows to increase milk production, rBGH and rBST, are produced through genetic modification.

Processed Foods

Packaged Foods and Drinks: Teeming With GMOs

Any food in a box, bottle, can, carton, or wrapper is a likely GMO source if

it isn’t organic or doesn’t carry the Non-GMO Project Verified seal. Processed foods are the primary residence of GMO foods.

When you can’t buy organic or certified non-GMO products, these

are pitfalls to avoid:

• Cereals: Avoid corn, soy, and sugar ingredients. Look for non-GMO grains such as oatmeal and wheat. Look for non-GMO sweeteners such as cane sugar or honey.

• Nutritionbarsoften contain soy or corn, and either GMO sugar or, if sugar-free, aspartame, which may be derived from GMO corn and/or canola.

• Snacks: Avoid corn and soy snacks. Chips, even if made from non-GMO vegetables such as potatoes, usually contain GMO oils.

• Crackers: Almost all non-organic crackers contain GMO ingredients, most often soybean oil.

• Cookies: The GMO ingredients typically include high fructose corn syrup and soybean oil.

• Canned vegetables: If the ingredients include anything but vegetables, water, and salt, GMOs are likely in there. Canned corn is almost always GMO.

• Canned soups: Likely GMO ingredients are corn and anything other than recognizable vegetables, water, salt, and clearly stated names of herbs or spices.

• Condiments: Mayonnaise and most salad dressings contain GMO soy, cottonseed, or canola oil. Non-organic ketchups typically contain high fructose

Page 19: Dr. Blaylock’s GMO€¦ · Dr. Blaylock’s Guide to Avoiding GMO Foods 3w to Use This GuideHo 4 ers of GMO Foods: Dang What You Need to Know 6op GMO SourcesT 7 ays to Avoid GMOs5

corn syrup, corn syrup, or sugar (from GMO sugar beets). Soy and teriyaki sauces contain soy. Other condiments vary, depending upon ingredients.

• Soda contains GMO-laden corn syrups, sugar, aspartame (diet drinks), and flavorings.

• Chocolate and other candy often contain GMO sugar or corn sweeteners, and flavorings. Lecithin from soy is common in chocolate or other creamy candies, and milk is another GMO source.

• Cooking oil: Soybean, corn, canola, cottonseed, and oils labeled “vegetable” oil are almost always GMO.

Safer Bets

• Sweets and Soda: Look for products sweetened with stevia.

• Pasta is generally GMO-free.

• Baking: Use non-GMO buttery baking sticks, goat butter, organic butter or lard, coconut or palm oil.

• Frozen vegetables are safe bets, as long as they aren’t corn, soybeans, zucchini, or yellow squash.

• Fruit and vegetable juices, if they are unsweetened, ordinarily do not contain GMOs. Caveat: Citric acid, a common preservative, can add GMOs.

• Snacks: Look for organic corn chips, popcorn (it isn’t GMO if you pop it on the stove top without GMO oil or in a hot air popper), or potato, rice, oat, or wheat snacks made without GMO additives.

• Homemade salad dressing made with olive oil and balsamic, cider, rice wine, or organic vinegars is GMO-free. Non-organic vinegar is usually distilled from corn and contains GMOs.

• Cooking oil: Choose olive, coconut, or red palm oils.

Shopping List

4StepstoGMO-Proofing Your Shopping List

Planning your next food shopping trip will help you reduce GMOs in your diet. Here’s a four-step strategy:

1. Make a list of everything you plan to buy.

2. Check ingredients. Do this for each item on your list that comes in a package, can, or bottle (check the labels of the staples in your kitchen): If it is certified organic, labeled “made with organic ingredients,” or carries the Non-GMO Project Verified seal, put a check mark next to it. If not, look at the ingredient list for any of these words: soy, sugar (not cane sugar), corn, canola, and cottonseed. Mark those items with an X. If your list has any remaining foods or beverages without a check mark or X, compare ingredients in those items to the list on page 12. If a product contains any of these, mark an X next to it.

3. When buying fresh corn, zucchini, yellow crookneck squash, edamame, or Hawaiian papaya, make a note to choose organic or ask if the store has verified that it’s non-GMO. These are usually GMO.

4. Whenshopping,findanon-GMOalternative to all the items marked “X” on your list. And, buy organic or hormone-free dairy products, organic or non-GMO meats, and wild fish. This should significantly reduce your GMO intake.

Non-GMO Swaps

If you can’t fill your shopping cart with organic products or those that carry the Non-GMO Project Verified seal, study the following table so you will be well-informed to make appropriate non-GMO swaps.

Page 21: Dr. Blaylock’s GMO€¦ · Dr. Blaylock’s Guide to Avoiding GMO Foods 3w to Use This GuideHo 4 ers of GMO Foods: Dang What You Need to Know 6op GMO SourcesT 7 ays to Avoid GMOs5

Instead of Choose

Corn oil or vegetable oil

Peanut oil or red palm oil for deep frying or other high-heat cooking such as in a wok, and coconut oil for medium-heat cooking.

Vegetable shortening

Non-GMO buttery baking sticks or margarines, organic butter, coconut oil, organic palm oil, or organic lard.

Corn chips and snacks

Organic corn chips, popcorn (it isn’t GMO if you pop it the old-fashioned way or in a hot air popper, at home), or potato, rice, oat, or wheat snacks made with olive, sunflower, or safflower oils, without GMO flavoring or additives listed on page 12.

Breads, pastries, and cookies with GMOs

The longer the ingredient list, the more likely that the product contains GMOs, such as soybean oil, cottonseed oil, canola oil, soy flour, lecithin, sugar (cane sugar is not GMO), high fructose corn syrup, other corn ingredients, or other additives listed on page 12. Look for short ingredient lists without GMOs.

Dining Out

Dining Out Without GMOs

1. HIGH ALERT: Fast-Food & Casual-Dining Restaurants Restaurant chains use many prepared foods, such as

premixed hamburger patties, and premade sauces or sauce mixes full of GMOs. GMO oils (most often soy or canola) are a major and inescapable source of GMOs in chain restaurants. Exception: In 2013, Chipotle Mexican Grill, which has more than 1,300 restaurants nationwide, became the first restaurant chain to start eliminating GMOs. It provides information about GMO ingredients on its website at www.chipotle.com.

2.CAUTION:TraditionalGourmetEstablishments Higher-end restaurants often prepare food from

scratch that has fewer GMOs than chain eateries. However, you will still likely get some GMOs. For example, top steakhouses may serve USDA prime, aged steak that is delicious, but the cattle are raised on GMO corn, with GMO hormones. More high-end restaurants, however, are offering organic items.

3. BEST CHOICE: Organic and Local Food Movements There is a growing trend of restaurants striving to

build menus around local, organic, and seasonal foods, and this approach automatically reduces GMOs. These restaurants use ingredients from local farmers, including organic ones whenever possible. Organic eateries range from pricey to budget-friendly. They are likely to offer organic or grass-fed meat, organic produce, and wild fish. There’s no way to automatically tell if they use GMO soy or canola oils, but you can ask or check the restaurant’s website. Search for these restaurants at www.localharvest.org. There are hundreds of them around the country, and they are most common in urban areas.
