Much of the chef’s uniform has developed out of necessity. The jacket, for example, is double-breasted so it can easily be
reversed to hide stains that may accumulate throughout the day; the double layer of fabric is also designed to insulate their bodies against the intense heat of the stove or an accidental
splattering of hot liquids.
Even the knotted cloth buttons were fashioned for a reason-cloth will withstand the frequent washings and abuse from contact
with pots, pans and other heavy equipment.

Tradition indicates that the number of pleats on the headdress indicates the experience of the chef. Of course, this means the head chef, who is the one with the maximum experience gets to
wear a hat with a hundred pleats. Supposedly, he could cook an egg 100 ways! Although a hundred pleats are not found on a head chef’s hat these days, these hats do contain the most
number of pleats still.
The height of your hat usually corresponded with your rank, the taller indicated more experience or education.

One of the first references to an apron was in the Bible in a passage in which Adam and Eve sewed together fig leaves to make aprons
to cover themselves.
Occupations such as butchers, welders and bakers have always used aprons to protect both their clothing and bodies from their work.
It was not until the 1940s and 1950s that society started to see the stereotypes of the "perfect mother" who always wore an apron, no
matter what.
