Sopa de Pedra (Stone Soup)
Ingredients:
1kg Red bean
1 blood sausage
1 meat sausage
1 smoked pig’s ear
150g bacon
750g potatoes
2 onions
2 garlic cloves
1 bay leaf
Coriander
Salt and pepper
Preparation:
Place the beans, the scalded and
scraped ear, onions, garlic, the bay
leaf and streaky bacon in a pan. Season
with salt and pepper and water up to cover
the ingredients. Bake about 30 minutes.
Then remove the meat aside, add the
potatoes diced add chopped coriander and
bake. Remove from heat and add the meat
finely chopped.
