MY FAVORITE DISH: WRINKLED POTATOES WITH MOJO
INTRODUCTION
My dish is wrinkled potatoes, it's
typical of the Canary Islands and I
chose it because I love it.
INGREDIENTS
• Small new potatoes
• 250g coarse salt
• A bunch of coriander
• 5 cloves of garlic
• 10 g Green pepper
• 10 g Cumin in grain
• 10ml vinegar
• 40 ml Olive oil
METHOD
1. Put the potatoes in a cauldron with half the water
and salt.
2. Boil for 30 minutes.
3. in the jug of the blender put : the green pepper ,
the cilantro bunch ,the garlic , the cumin in grams ,
the vinegar and olive oil
4. Beat everything.

INTRODUCTION Wrinkled potatoes with green mojo is a traditional recipe the from Canary
Islands and it is my favourite because it reminds me when I have a
barbaque with my family
INGREDIENTS (for four people)
Wrinkled potatoes 1 kg
Extra virgin olive oil
1 glass (200 ml)
Vinegar 30 ml
Garlic 2 cloves
Cumin 1 tsp
Green pepper (8 grains)
A pinch of salt
parsley 5/6 branches
METHOD
1 In a mixer glass, place the garlic cloves, green pepper, ground cumin, salt, vinegar and extra virgin olive oil and crush with the mixer until obtaining a
homogeneous sauce
2 Cook the potatoes that will be ready in about 20 minutes
3 Let the potatoes temper, cut them by hand in two halves and sauce with the parsley green mojo.
