HOW TO BREW A DECENT CUP OF TEAFollow these simple guidelines
to find out what works best for you.
Use fresh tea.Tea should be kept sealed in a cool, dark and dry place
and used within six months of opening. There’s just no way to make a good cup from stale tea!
Measure well.Start with a heaping teaspoon of whole leaf tea per cup or a level teaspoon of broken leaf tea and go from there. For stronger tea add more leaves, not more time, so the
brew doesn’t become bitter.
Use fresh water at the proper temperature.For black and herbal teas, bring freshly drawn cold water to a rolling boil and pour over tea in a pre-warmed pot or mug.
Cover, add a tea cozy, and set your timer for 5 minutes. If you used an infuser or a you-fill tea bag, remove the tea;
if you’ve brewed leaves loose in the pot, decant the tea into another warmed pot or serve it all immediately.
For green and oolong teas, use water brought to a boil and then cooled for a minute or two. Steep green teas
for 2-3 minutes, oolong teas for 3-4 minutes. Remove tea leaves or decant as above.
Settle in and enjoy!

northern regions of India and prized as the “Champagne” of teas. Lovely
amber color and slightly sweet notes.
Earl GreyOur classic from Copenhagen, this
superior Earl Grey is blended with natural oil of bergamot for
that signature citrus finish.
English BreakfastA traditional morning wake-up
blend and universal favorite, with a fullness that packs a punch. New tea drinkers can try this one first.
Formosa OolongHalfway between a green and a black. A coppery-hued blend with smooth nuttiness and apricot undertones. Treat oolongs gently (see over).
Garden AfternoonA special blend by our secretive
Seattle tea broker. We taste rich malt, something floral, a bit of nuttiness
and a slight whiff of smoke.
Irish BreakfastRich and hearty, with the underlying
characteristics of other popular breakfast teas. For those who want
our strongest blend.
KeemunThe blackest of our black China teas,
with complex notes and notable character. Just the right balance
between quality and price.
Russian CaravanA great way to warm to the world of
smoked teas. A delicate, lightly smoky and satisfying Ceylon-based blend.
DragonwellA classic, high grade green that
has all the characteristics of Chinese tea—smoothness with corn notes
and a pleasing vegetal flavor.
GunpowderGreen breakfast tea that’s rolled and compressed. Unfurls in brewing to yield a rich, relatively hearty liquor.
JasmineFlower buds imbue this high grade
delicate green with a seductive exotic fragrance. Delicious hot or iced.
SenchaJapanese green tea harvested from
broad leaf bushes and steamed before drying. Compelling notes of grass,
honey and delicate seaweed.
ROOIBOS TEASRooibos (Afrikaans for ‘Red Bush’) is an herbal caffeine-free tisane from South Africa. Dried and fired like black tea,
it has a tannic ‘bite’ you don’t find in most herbals. Steep 5 minutes in
water brought to a rolling boil.
Rooibos EveningA perfect—and our most popular—late night cuppa. Combines floral
and fruity bouquets with calming lavender notes.
Rooibos GingerThe ideal after-dinner drink,
with ginger to aid digestion and no caffeine. A perfect pairing with
spicy Asian dishes.
Rooibos MangoBright and fruity, snappy without
bitterness, this blend is a gem. We love it iced, too.
Rooibos VanillaA favorite among all ages;
vanilla adds a pleasing sweetness without sugar. A hit iced or hot.
GREEN TEAS Steep 2-3 minutes in hot, not boiling, water.
