CHIPOTLE SLIDERS

•  1lb extra lean ground beef •  2T minced chipotle chiles in adobo sauce •  1tsp chili powder •  1tsp coriander •  4oz reduced-fat cheddar cheese, grated •  8 dinner rolls •  4 Romaine lettuce leaves, thinly sliced •  salt + pepper to taste

1.  Prepare griddle or stove-top pan with cooking pray and preheat on medium-high

2.  Combine beef, chiles, chili powder, coriander, salt and pepper in a large bowl. Mix well and shape into 8 sliders, each about ¾” thick.

3.  Add sliders to hot griddle or pan and cook for 3min per side for medium, adding cheese on top for last minute or so of cooking.

4.  Arrange sliders on rolls and top with lettuce.
