What Is Cancer?
Cancer begins as a single abnormal cell that beginsto multiply out of control. Groups of such cells form
tumors and invade healthy tissue, often spreading toother parts of the body.
Carcinogens are substances that promote thedevelopment of cancerous cells. They may come fromfoods, from the air, or even from within the body.
Some vitamins in plant foods are known to be
inhibitors. Dietary fat, on the other hand, is known tobe a promoter that helps the abnormal cells growquickly.

Food Preservative is natural or synthetic
chemical that is added to food products to
prevent decomposition by microbial growth or by
undesirable chemical changes. Food preservatives may be :
a) Antimicrobial (inhibit the growth of bacteria and
fungi and mold growth)
b) Antioxidants such as oxygen absorber(inhibit theoxidation of food constituents)
Food additives are substances added to food to
preserve flavor or improve its taste and
appearance.

1.CARCINOGEN
Definition:
Any substance, radionuclide or radiation, that is
an agent directly involved in the exacerbationof cancer or in the increase of its propagation.
Several radioactive substances are considered
carcinogens, but their carcinogenic activity is
attributed to the radiation, (gamma rays andalpha particles.)
Examples : inhaled asbestos, certain dioxins, and
tobacco smoke.

There are many natural carcinogens.
Aflatoxin B1, which is produced by
the fungus Aspergillus flavus growing on
stored grains, nuts and peanut butter, is anexample of a potent, naturally-
occurring microbial carcinogen.
Certain viruses such as Hepatitis B and human
papilloma viruses have been found to causecancer in humans.

SATAY
Research has shown that grilling causes
certain foods, particularly fatty meats, to
create a carcinogen. Eating satay together with carbon after
barbequing can cause cancer.
However, the risk is low and can be reduced
even further with some healthy grillinghabits and eat cucumber (anti-carsinogenic)
after eating satay.

2.SODIUM NITRITE
Definition:
Sodium nitrite, with chemical formula NaNO2, isused as a color fixative and preservative in meats
and fish. When pure, it is a white to slight yellowish
crystalline powder. It is very soluble in water.
As a food additive, it serves a dual purpose in thefood industry since it both alters the color of
preserved fish and meats and also prevents growthof Clostridium botulinum, the bacteria whichcauses botulism.
Examples :Bacon, ham, hot dog, luncheon meats,smoked fish

Found naturally in tea, coffee, and cocoa. Also addedto many soft drinks. It is one of the few drugs astimulant added to foods.
Promotes stomach-acid secretion (possibly increasingthe symptoms of peptic ulcers), temporarily raises
blood pressure, and dialates some blood vessels whileconstricting others.
Excessive caffeine intake results in "caffeinism," withsymptoms ranging from nervousness to insomnia.These problems also affect children who drink
between 2 to 7 cans of soda a day. Caffeine may alsointerfere with reproduction and affect developingfetuses. Experiments on lab animals link caffeine tobirth defects such as cleft palates, missing fingersand toes, and skull malformations.

4.ACRYLAMIDE
Definition:
Acrylamide is a chemical that is formed when
certain starchy foods (like potatoes and flour)are heated at high temperatures. It is also
formed on coffee beans as they are roasted.
Researchers estimate that if you are a heavy
consumer of the foods that contain acrylamide,the exposure will give you about a 15 in 10,000
chance of contracting cancer over your lifetime.
Other health risks for acrylamide exposure have
not yet been quantified.

The Dutch study found that women who absorbed
more acrylamide were twice as likely to developovarian or womb cancer as those who ingested a
smaller amount.
The findings show a positive association between
an increased acrylamide-haemoglobin level and the
development of breast cancer after adjustment forsmoking behaviour.
The risk of breast cancer doubles with a tenfold
increase in the acrylamide-haemoglobin level.
The study also shows a stronger association forestrogen receptor positive breast cancer.

hydrogenated oils and acrylamides, they're one
of the worst cancer foods you can possibly eat.FRENCH FRIES
The amount of acrylamide found in a large
order of French fries at a fast food restaurant
is at least 300 times higher than what theEnvironmental Protection Agency allows in a
glass of drinking water.

The time has come to reconsider the causes
of cancer
Food does not seem to play a big role in the
cause of cancerMan-made chemicals could play a much
bigger role in the cause of cancer than
suspected
Human exposure to man-made chemicalscould be through food, drink, inhalation.
