Credit the revitalizing outdoors or the rustic

smell of the grill, it’s no secret that men love

to grill! For a fit and healthy lifestyle, grilling

is one of the leanest ways to cook, especially

when grilling lean foods like chicken, turkey and seafood.

But even burgers can be lean!

A common perception is that fat equals obesity. But

the truth is, our bodies need a certain amount of fat to

function properly. Knowing the best proteins that have the

least and healthiest fats can be a positive game changer

for your workouts.

One of the leanest and most flavorful proteins is bison.

Compared to beef, bison has nearly half the fat and none

of the trans fat that beef provides. At a whopping 40

percent protein per 4-oz. serving, bison is the superhero to

repairing muscle tissue from tough workouts.

THE LEAN GRILL

For the salsa and remoulade:• 3earswhiteoryellowcorn,inhusks,soakedfor40minutes• 3Romatomatoes,seededanddiced• 1redonion,diced• 1bunchcilantro,leaveschopped,stemsdiscarded• 1mediumSerranopepper,seededanddiced• 2pinchesseasalt• 2pinchesgroundblackpepper• 3redbellpeppers,whole• 2clovesgarlic• ½cupnonfatmayonnaise(orGreekyogurt)• Finezestof1lemon

1.Preheatgrilltohigh.Placecornandbellpeppersonhotgrill.Turnoccasionallytocharallsides.Onceoutsidesarecharredremovecornandsetonbakingsheet.Placeroastedpeppersinabrownpaperbag(orabowlcoveredwithaluminumfoil)andletrestfor10to15minutes.2.Placetomatoes,redonion,halfthecilantro,Serranopepper,onepinchseasaltandonepinchblackpepperinamediummixingbowl.Cutcornoffthecob,discardcobandaddcorntobowl.Tosstocombine.Setaside.3.Removeskinandseedsfrombellpeppersandplaceinafoodprocessororblender.Addgarlic,pinchseasalt,pinchofblackpepper,mayonnaise,remainingcilantroandlemonzest.Pureeuntilsmooth.Setaside.

For burgers:• 2poundsgroundbison• 3tablespoonspankobreadcrumbs• 3greenonions,whiteandgreenparts,diced• ½teaspooncumin• ½teaspooncardamom• 1teaspoonblackenedseasoning• ½teaspoongroundblackpepper• ½teaspoonseasalt• 1egg• 6wholewheathamburgerbuns

1.Preheatgrilltomediumhighheat.Inalargemixingbowl,mixtogetherbison,panko,greenonions,cumin,cardamom,blackenedseasoning,blackpepper,seasaltandegg.Forminto6equalpatties.2.Placepattiesonhotgrillandgrillononesideforabout6minutes.Flipandgrillanadditional4minutesoruntildesireddoneness.Removefromgrill.3.Spreadonesideofbunwith1½tablespoonsredpepperremoulade.Topwithburger,anadditionaltablespoonofremouladeand2to3tablespoonsofroastedcornsalsa.4.Topwithremainingbunhalf.Enjoy.
