Our government is simply a tool that allows us to achieveour goals in a civilized and organized manner.September 11, 2001 proved to us and the world that when the chips aredown it is individuals who make a difference. To us, hero is a termmore appropriately attributed to the actions of Todd Beamer, Thomas EBurnett, Jr, Jeremy Glick and Mark Bingham, the people who took itupon themselves to take down United Flight #93, fully aware of the con-sequences. But, they did it, and in so doing, saved countless lives. Indi-viduals like these men are the ones who have built this country and madeit great. They didnt wait for any directive from a government agency.They didnt beg for help or anguish over what they knew they had to do.They simply did it, and in doing so the terrorists were denied.

    So, never forget!It is during times like these that many of us feel that our contributions are inadequate or not important. But, every effort we make on our own behalf or on behalf of others solidifies the foundation upon which our system of government sits. It is not the politicians, nor the media pundits, nor the bureaucracies that make this

    country great. No.. its we, the people. Celebrate our freedoms, and be vigilant so that we dont lose them.

    Have you given any thought to milking camels? Camel milk is hitting the mainstream courtesy of Americas drome-dairies.Were all used to cows milk alternatives, including goat, sheep and even legume and nut milks likesoy and almond. Another milk alternative is gaining traction with curious American consumers:camel milk. Technically, camel milk isnt new. Milking and riding camels is extremely commonelsewhere, particularly in native camel habitats. There are two main types of camels, the dromedaryor Arabian camel, the one-hump camel found in Africa, the Middle East, and Australia; and theBactrian, the two-hump camel found inCentral Asia. Milking either type, the resultis the same. Camel milk has 2 percent milkfat, a creamy white color and a sweet,slightly salty aftertaste. There are only sevencamel milking facilities in the U.S.Regulation on camel milk varies widely, withmost camel milk drinkers still buying fromsmall farmers or within membershipassociations.In June, a camel milk dairy and distributor,Desert Farms in California, started sellingcamel milk in California Whole Foods storesfor $18 a pint.

    Michigan farmer Marlin Troyer says The camel is the one of the most misunderstood andunderestimated animals in the U.S Camels milk is definitely a benefit to anybodys diet.Camel milk advocates reference studies demonstrating that the anti-inflammatory beverage willsoothe symptoms of Crohns disease, IBS and diabetes thanks to its low sugar content and highlevels of protein and vitamin C. Some have even suggested camel milk can improve autism-relatedsymptoms (though the science remains up i n the air on that claim).In many ways, its strange that its been hard to get camel farming over the hump in terms of mainstream acceptance. Despite their unshakably bad rap for kicking and spitting, camels areextremely sensitive, intelligent creatures.Camels dont have natural predators, and accordingly, theyre more curious than combative. Theyalso dont have teeth on t heir upper mandible, just a jagged underbite and a few molars. A camelsloose, split top lip seems like an extension of its big, curious nose.Even with a gentle disposition, milking a camel is no small task. Unlike cows, which can be separatedfrom calves immediately after birth and keep producing milk, camels must be encouraged by theirbabies to let down their mi lk. When a calf nuzzles its mother s udder, the release of oxytocin inthe mothers brain triggers muscle contractions, which causes the milk to drop. The calfs tail willgo up in anticipation, and all four of the mother s teats will fill up like water balloons. The musclecontractions also cause a camel to suddenly become very still and blink hard several times, sometimeseven shedding a tear or two. (If youve seen the 2003 German documentary, The Story of theWeeping Camel, you know how true this is.) Its one of the only ways to tell when its possible tomilk. You must be quick. The milk is available for just 90 seconds at a time. Theres no limit to theamount the mother will produce, so as long as the baby can prime the mother, milking can continue.Raising a herd can take considerable time. Mother camels gestate their 75 lb. calves for 13 months.All that waiting, and when its finally time, the birth tends to take just 20 minutes. Typically, camelslive 35 to 40 years old. Despite difficulty procuring the milk (and some sidelong glances from fellowfarmers), the milks benefits and a growing population seeking another alternative to traditional cowmilk means camel milk may finally make it over the hump in the United States.
