PROJECT DESCRIPTIONDesign a restaurant that brings a new and unique dining experience to the Downtown Lafayette food scene. Located in the historic Guaranty Bank Building, this restaurant will become a new dining destination for Acadiana natives and visitors alike.

CONCEPT STATEMENTThe Farm to Table Eatery & Bar features fresh ingredients cultivated from Acadiana farms and breweries. Locally sourced ingredients support Louisiana farmers and offer a more sustainable and environmentally friendly food supply. This conservative spirit is echoed in the wholesome simplicity of Farm to Table. The design of the eatery brings the sense of wide open spaces and the fresh air of the countryside to Downtown Lafayette. From the linear organization of the dining room to the fresh, natural color palette, every aspect of the restaurant is inspired by the landscape of Louisiana farms.

VIEW: THE EATERY

The Farm to Table Eatery evokes the freshness and simplicity of the Louisiana countryside. Guests congregate at long zinc tables, reminiscent of picnic tables and family gatherings, to indulge in dishes crafted from fresh, local ingredients. The “Living Wall”, a hydroponic vertical growing system, is a captivating feature that reinforces the connection to the cultivation process. With the capacity to grow a selection of herbs and vegetables, this Living Wall places the farm a few feet from each table.

Page 6: Dold Interior Portfolio

The Bar features drinks mixed with locally grown produce as well as regionally sourced wine and beers. The same wholesome aesthetic is continued from the Eatery. The whitewashed barnwood ceiling wraps down into a lapboard wall treatment, creating a rich backdrop for a sculptural installation of antique weather vanes. The bartop is highlighted by unique grass planters, inset with coaster-like pavers, which bring the color and texture of the farm into the space.

The Vault is an integral part of the Farm to Table experience as the setting for a Tasting Bar sampling beers sourced from local brewers. This unique space also serves as gallery space to showcase the work of Acadiana artists.

The BONOBOS Pop-Up Store is an opportunity to introduce the culture, style, and most importantly, the pants, of the BONOBOS brand to new customers. The design of the store is the backdrop to and the embodiement of each of these, including the machismo and cheekiness of the brand. The primary goal of this physical retail location is to provide ninja-fast service, fit guys in awesome pants (and shirts, suits, ties, etc.), and point customers to the BONOBOS website, the heart of the operation. Emphasis on the transient, soon-to-be-gone nature of the pop-up store is a must; this creates an excitement and exclusivity around the location. Boxes provide easy transport and assembly and also communicate that the BONOBOS POP UP will go justas quickly as it came. Incorporating the BONOBOSshipping boxes into the modular box design reinforcesthe online ordering customers will interact withfor their future BONOBOS purchases.

Fluosystem modular shelving is a freestanding unit that is easily configured without any structural modification to the existing space. The system also offers virtually limitless flexibility in unit arrangements and organization.

All connections in the system use the same clamps, which requires only an allen wrench for assembly/disassembly.

These modular lanterns fold flat and are made from Tyvek which makes them durable and easy to transport.

The Nomad wall system, breaks down to flat cardboard modules that are lightweight and take up minimal space.

Lanterns easily connect to pre-wired, suspended grid modules that fold in half for quick installation and portability.

Our Lady

Catholic Retreat Center

of theBayous

CONCEPT STATEMENTThe majestic oak trees that grace the site of the Our Lady of the Bayous Retreat Center provide a perfect allegory of the Christian Life: rooted in the Sacred, supported by knowledge and community, and crowned by a canopy of reflection and solitude. Much like a tree depends on its roots for sustenance, the Christian Life is rooted in the Sacraments and God’s Word and depends on this foundation for nourishment and life. The tree’s trunk and the network of branches provide stability and strength, in the same fashion, the Christian Life is supported and strengthened by knowledge of the Faith and interaction with Christian community. The canopy springs forth from this system of roots, trunk, and branches, intimately connected yet set apart. Like the leaves of the canopy reveal the presence of the wind, solitude and contemplation reveal the presence of God in the Christian Life.

PROJECT STATEMENTThe experience of Our Lady of the Bayous Retreat Center is a dichotomy of sharing and contemplation, solitude and community. The rich simplicity and naturalism of the interior create a setting that is peaceful and intimately connected to the outdoors. Natural light strengthens this connection to nature and unifies the interior, which transitions from open, communal spaces to enclosed individual quarters. The retreat center offers flexible gathering spaces able to accommodate the needs of large and small retreats. The four structures composing the retreat center are joined by extensive porches and a walled courtyard, framing the beautiful grounds in a peaceful, quiet setting that encourages contemplation. The use of natural finishes and a muted, nature-inspired palette throughout the interior create an environment that is calm and understated yet rich in texture and warmth.
