ithout question, breakfast is the meal thatmakes champions, which is why Eggs ‘nThings has a winning recipe for success.

This hot spot for both kamaaina and tourists hasgained a cult-like following since its inception in 1974,when founders Jan and Jerry Fukunaga opened theinitial restaurant on Ena Road in Waikiki. Fast-forwardalmost 39 years later and the premise of the restau-rant hasn’t changed a bit. The goal of Eggs ‘n Thingsremains the same: to incorporate the use of the fresh-est ingredients into all its dishes, keep prices reason-able and treat everyone like ohana. The fact thatbreakfast is served well into the evening is just anadded perk for breakfast enthusiasts.

Located throughout Waikiki, you’ll currently findthree Eggs ‘n Things establishments available for yourdining pleasure — one conveniently located onSaratoga Road, Waikiki Beach Eggspress on KalakauaAvenue, and the most recent hatching on Piikoi Streetnext to Ala Moana Center.

“The Fukunagas did an excellent job in creating abrand that is recognizable,” says Jonathan Redman,manager of Eggs ‘n Things Waikiki Beach Eggspress.

“Our basic culture focuses on providing fresh foodand fresh produce to our guests. We want to

give our customers the best dining experiencepossible, from the moment they step foot

through the doors to when they leave. Cus-tomer interaction is very important to us,”adds Eggspress manager Lance Oshima.

More often than not there’s a line ofhungry diners waiting to be seated atEggs ‘n Things on any given day, but thatdoesn’t deter people from wanting todine here — a good indication that what

you’re about to experience is worth thewait. Servers sporting aloha wear and

aprons (designed by Jan and her mothermany years ago) greet customers with a smile

and are ready to serve you what will hopefully bethe best breakfast you’ve ever had, as the restaurant

is renowned for its award-winning pancakes, omelets,crepes and more.

Eggs ‘n Things boasts a menu that suits all palates,and according to Redman and Oshima, StrawberryWhip Cream with Nuts Pancakes ($12.75) holds thespot as the restaurant’s No. 1 best-seller. The intoxicat-ing aroma of fresh pancake batter is enough to hookyou in, yet once you bite into the tall stack of light andfluffy pancakes topped with a tower of fresh whippedcream, morsels of sweet strawberries and a sprinkle ofnuts, you’ll be quick to call this your favorite.Macadamia Nut Pancakes ($10.25) also have createdquite a buzz among the international breakfast circuit.

“We have a special machine that whips the whippedcream fresh for us,” Oshima explains. “You can’t imaginehow much whipped cream we go through on a daily

basis as well as pancake batter and eggs!”Speaking of eggs, the possibilities are endless. For

a big old slice of Americana, dig into the Spinach,Bacon and Cheese Omelet ($11.95). Made with threefresh eggs, this omelet features fresh spinach, bacon(or turkey bacon) and your choice of cheese, whetherit be Cheddar, mozzarella or pepper jack. The mealalso is served with pancakes, rice or potatoes.

And for a classic taste of Hawaii, a local delight isfound in Eggs ‘n Things Hawaiian Loco Moco($12.25). This dish of mouth-watering goodness of-fers up everything your typical loco moco wouldbring to the table and more. In addition to the tra-ditional hamburger patty and egg of choice on abed of rice, sauteed mushrooms, onions and dicedPortuguese sausage are added to the mix anddrowned in a beef-based gravy.

“The Portuguese sausage adds a nice kick of fla-vor. There’s a little bit of spice and a little bit ofsweetness,” Oshima says.

Island-Style Fried Rice and Eggs ($11.45) alsohas been reeling in the masses, grabbing hold of ap-petites with its myriad of flavors. There’s ham, Por-tuguese sausage, bacon, kamaboko and an array of veg-etables thrown into the fried rice, and it’s finished offwith two eggs of your choice.

Then, delve into dinner options with the famous FreshAhi Steak (market price), a generous serving of freshtuna steak served to your liking, whether sauteed, Ca-jun-style or Furikake-Macadamia Nut-style, and accom-panied by potatoes, pancakes or rice, and your choiceof potato or tossed salad.

“We support local as much as possible. Our eggs arelocally sourced from Ka Lei Eggs,” Redman says. “And

here at Waikiki Beach Eggspress, we are envi-ronmentally conscious and use compostablepackaging. Waikiki Beach Eggspress has thesame quality food, but it’s proudly served withearth-friendly takeout-ware.

“At our Eggspress location, you take a look atthe menu and place your order at the top of thestairs with our host, pay at the cashier area and apager will indicate when your order is ready. Wegladly accommodate dine-in and takeout,” headds, noting that Waikiki Beach Eggspress seatsabout 65 people comfortably.

Make sure to take a bit of Eggs ‘n Things homewith you. When you dine at the restaurant onSaratoga Road, visit the retail shop while you’re atit. The establishment’s very own buttermilk pan-cake mix, plus syrups, Waialua coffee, eco-bags,T-shirts and more are available for purchase.

“There’s a long-lasting legacy here at Eggs ‘nThings, and we can only hope for further successand expansion,” Redman exclaims.

Fans of Pho Five-O cancredit their feedbackand encouragement

as inspiration for KimNguyen to open HiSandwich & Drink.

“I receive a lot of supportfrom Five-O customers, so Iwant to say ‘thank you,’”shares owner Kim Nguyenwho opened Hi Sandwich &Drink in December 2012.

The restaurant has 20listed sandwich items on itsmenu, but that doesn’t meanthere aren’t more. Servedwith French bread or a crois-sant, sandwiches can haveup to three different meatsin them ($6 for one choice,$6.50 for two choices and$6.75 for three choices).

One that Nguyen recom-

mends is the Pastrami Sand-wich ($6), which she re-cently added to the menubecause it is leaner and hasapproximately 95 percentless fat.

Another is the Hi Special($6.75), which includes threemeats: steamed pork, pateand char siu pork.

Both sandwiches, like allthat are offered, are servedwith cucumber and parsley,and carrots and white onionthat Nguyen seasons dailywith sugar and vinegar. Ifyou’re a fan of the addedcrunch the veggies provide,and want more, all you haveto do is ask; additional veg-

the fish is locally caughtand distributed daily by

Tropic Fish Hawaii.

This seafood sanctuary of sortsalso features an array of the

freshest Manila clams, black tigershrimp and scallops. “Seafood

lovers go crazy for this dish.There’s so much to it that it’s

perfect for sharing,” Betiong says.

A homemade marinara cream saucesoaks into every crevice of this dish. Infact, secret ingredients of roasted garlicand a blend of ’Nalo Farms tomatoes,basil and balsamic vinegar accent thesauce perfectly. However, Betiong makessure the sauce isn’t too overpowering asnot to mask the authentic flavors of theseafood. “I also blended the marinarasauce with a cream base to expose aricher taste while also cutting down onthe tartness of the tomato.”

Nothing says “fresh” more than’Nalo Farms’ locally grown

white mushrooms, spinach andRoma tomatoes, which also

add a bit of nutritional valueand a burst of color.

A favorite on the menu since therestaurant’s humble beginnings, Betiongwhipped up Ocean Seafood Pasta withthe hope of impressing locals andvisitors alike. “The texture of theseafood, the variety and the spices bringthis dish to life. If you love pasta andseafood, you’ll love this dish,” he says.

With a menu that hasretained many of the sameitems since the 1930s,

Sekiya’s Restaurant and Delicatessenis like a portal into the past.

Serving what owner Joy Moriharacalls a blend of local favorites andJapanese food, the restaurant haslong been a go-to locale for platelunches and saimin.

“A lot of people say it is the same since

back in the old days,” Morihara says.

Now with an extensive menu thathas grown throughout the years,Sekiya’s includes tasty items such asPork Tofu ($11.95), which featurespork, tofu and onions all in a home-made broth and served over rice.

“That is kind of a traditional, every-day Japanese cooking that you mightmake for lunch or dinner at home,”Morihara says. “It is a light dish, but itis very full and tasty.

“We make our broth from scratch

Sekiya’s Restaurant and Delicatessendates back to the 1930s when currentowner Joy Morihara’s grandparents, the

Sekiya’s, founded the restaurant’s first location on School Street.“They started it as just a small saimin stand,” Morihara says,

“and they were just selling saimin, barbecue sticks and platelunches.”

The restaurant then moved to Kapahulu Avenue, where it beganto expand its menu to include full meals and sukiyaki. In the 1950s,Sekiya’s relocated to its current location in Kaimuki. Throughoutthe years, Sekiya’s has been a family-run establishment. In addi-tion to her grandparents, Morihara’s mother and aunties also haveworked in the restaurant.

Morihara, who grew up on Maui, began working in the restau-rant when she moved to Oahu for college.

Sekiya’s has come a long way from its saimin-stand roots, andnow features a full menu, but it hasn’t strayed too far from thosedays. The restaurant still features many of the same dishes and iseven attracting many of the same families.

“We have generations of people coming in,” Morihara says. “Wehave customers where their grandparents brought them in as chil-dren, or their parents did.”

every day,” she adds. “It has shrimp and chicken andvegetables in it.”

For a simple, yet filling dish, try Oyako Donburi($9.95).

“Aiyoko means ‘parent and child,’” Morihara explains.“So we have the chicken and egg over rice.” The dishalso features mushrooms and long rice.

Another popular dish is Sekiya’s flavorful take onlocal favorite Oxtail Soup ($14.95). The dish, which isflavored with ginger and Chinese parsley, is madefrom scratch and is served with rice.

“We cook (the oxtail) for several hours until it isvery tender,” she says.

One of the restaurant’s reigning items when itcomes to customer favorites is Marinated FriedChicken ($13.95), which features boneless chicken thatis marinated in a light teriyaki sauce and then deep-fried.

Since Sekiya’s initially began as a small saimin stand,saimin is one thing you better try on your next visithere. One tasty noodle dish is Karai Saimin ($8.95),topped with charsui and green onion.

“We serve it with karai sauce, which is a spicy sauce.So if you like a little bit of heat in your meal, you willlike it,” Morihara says.

Panya Bistro’s got great buns.Panya started as a bakerybefore evolving into a bistro,

so it’s no wonder that baking pas-tries, sandwich bread and burgerbuns is still one of its strengths. Theburger buns are sprinkled withsesame seeds and made freshdaily. They are generously por-tioned, soft, chewy and never dry.You could call them voluptuous.

It only makes sense that a greatburger bun would be the vehicle fora great burger, such as the signaturePanya Burger ($15.95). “This is oneof our very popular items under ourburger category,” says Kiana Huang,operations manager at Panya.Huang also explains that customersare surprised to see how well Pa-nya’s owners, originally from HongKong, are able to succeed in makinga real American burger.

Panya Burger is the go-to if youare craving a hearty burger with allthe fixings: grilled Angus beef patty,Portobello mushroom, Americancheese, bacon, lettuce, tomato,onion, ketchup and mayo. Despiteall the ingredients, the burger isstraightforward. “We try to make it

simple and not too out of the box,”Huang explains. The Portobello, anentire cap that is the size of thepatty, is grilled with salt and pepper.With regular mayo, regular ketchupand a slice from a ripe tomato, it’ssimply a juicy, flavorful burger.

But back to the bun, the founda-tion of the burger. It’s light fluffinesswell complements the substantialingredients, yet it has enough tex-ture to soak up the burger’s juicesand deliver the payload from plateto mouth. The sesame seeds add atiny crunch and subtle flavor.

After a cheeseburger, a cheese-cake is the logical choice fordessert. While it may seemoverindulgent, Huang assures,Japanese Cheesecake ($5.25) islighter both in texture and in calo-ries. “It’s not heavy at all, even if youhave the entire piece,” says Huang.The Japanese recipe yields a cloud-like texture held aloft by spongecake and a co-conut crust. Theslice is accompa-nied by crèmeanglaise, whichcan be drizzledover to add atouch of deca-

dent moisture. As with the burger,there is nothing overly fancy aboutthe ingredients in the cheesecake.They are fresh, simple, with nopreservatives, and adroitly com-bined in-house to produce an ex-traordinary product.

At Panya, you can have yourcheeseburger and cheesecake, andeat them too.

The best news I’ve heardrecently is that KoreanHibiscus BBQ is back in

business. You see, my brothersand I grew up frequenting thehomey takeout window in AinaHaina Shopping Center before itclosed in 2010. With a widerange of authentic dishes, thebest in Korean-style vegetablesand kim chee as well as gor-geously succulent meats that aregood enough to dream about,this mom-and-pop shop was myfamily’s go-to spot.

After taking time off to traveland spend time with their grand-children, husband-and-wife own-ers Raymond and Shirley Kodanire-emerged on the dining scenea little more than a year ago tore-open their eatery in KaimukiShopping Center next to TimesSupermarket on the lower level.

Though the new location issomewhat hidden from the maindrag, returning regulars — includ-ing yours truly — are rediscover-ing the flavors they missed, whilea whole new set of patrons arecatching on.

So on that most important ofdays, when I finally had thechance to eat what I’ve beenlonging for since 2010, an over-whelmingly vital question cameto mind: What was I going tohave? With so many classics tochoose from, I wondered whatwould satisfy my craving? Wouldit taste as good as I remembered?

Given that the weather hasbeen chilly lately, I knew takingsolace in an old favorite, one of the eatery’s warm Soup Snacks,

was the perfect way to reacquaintmyself with Hibiscus.

Each Soup Snack features a 32ounce bowl of a wonderful home-made, slow-simmered beef boneand brisket broth that’s filled withegg, beef strips and green onion,and served with a side of kimchee. If you choose Mandoo Soup($8), you’ll also receive 10 piecesof beef and vegetable mandoo inthe soup, while Hot KooksooSoup ($8) presents a separatebowl of thin kooksoo noodles andbulgogi (marinated beef ribeye),bean sprouts, head cabbage andchoi sum.

I settled on Mandoo KooksooSoup ($8), which gives you thebest of both worlds with fivepieces of mandoo and a separatecontainer of kooksoo noodles.Since the establishment is primarilytakeout, serving the noodles sep-arately ensures they will not getsoggy or absorb too much broth.

With the utmost anticipation, Itook my first sip. As soon as thecomforting, flavorful and pureblend of ingredients hit my tastebuds, I knew everything would beall right. The dish was even betterthan I remembered!

As Raymond and Shirley dowith all their customers, they en-couraged me to discover whichflavors I like the best in the soup,so I can customize my experienceevery time I come in. As a result, Iadded some Korean hot sauce(available upon request) to spicemy dish up to perfection.

The owners also suggest shar-ing Soup Snacks as an accompa-niment to any meal.

With a happy belly and my loveof Korean food fully reinstated, Ihope you’ll soon experience thejoy of Korean Hibiscus BBQ, too.

aka Chef JJ. That’s the beauty ofloving what you do, and thehighly creative and innovativechef epitomizes that sentiment.When asked what he’d like toshowcase this week, the ownerof JJ Bistro and French Pastryponders a bit, throws out a cou-ple of recommendations andthen pauses.

"I can make a Vegan Lasagna($11.95)," he announces.

It’s how his mind works. Whenyou love to cook, any challengebecomes a pleasure — and thatgoes for modifying your menuto meet people’s dietary require-ments and/or preferences.

"We can make most of ourpastas vegetarian," he notes. Allyou have to do is ask. And tomake things even easier, youdon’t even have to do that. Someof the menu’s pasta offerings arelisted with (Veggie) options, suchas Southeast a la Maison (Veggie$7.95), a mouthwatering mix offlavors and textures with egg-plant, bamboo shoots, red bellpeppers and zucchini in a greencurry sauce. According to ChefJJ, if you see something enticingon the menu but would like it al-tered to fit your taste — whetherit’s an appetizer, entree, pizza,salad or sandwich — he’ll try hisbest to make it your way (withinreason, of course).

But let’s get back to thatlasagna. "I use look fun noodlesto wrap the vegetables," henotes. Those vegetables includeeggplant, zucchini and shiitakemushrooms, and the lasagna isfinished with a tomato-basedsauce. And depending onwhether or not you choose toeat cheese, it can be topped withsavory Parmesan.

With a successful first yearof business behind her,Yong Tom, owner and

cook of the popular Korean restau-rant 808 Yong’s BBQ in Waipahu,could have easily kept the same menu.However, when she overheard somediners inquiring if the restaurant offeredbreakfast, she began to think.

“I found more and more customerslooking for breakfast options,” says Tom.“So right away I wanted to start a break-fast menu, one with lots of options.”

Such dedication to meeting the de-sires of its customers is just one charac-teristic out of many that makes 808Yong’s BBQ a true culinary gem.

The eatery now offersan all-day breakfastmenu as well as local-style dishes in addi-tion to its belovedKorean menu. Tohelp with theexpandedm e n u ,which

has almost tripled in size, Tom hashired chef Glenn Salvador, previ-ously a chef at Joe’s Grill Ex-press downtown.

Although customers may orderfrom the breakfast menu at anytime, early risers will be happy tolearn the restaurant now opens at6 a.m. daily. Breakfast options includea variety of omelettes including the Den-ver Omelette ($5) as well as the SpinachOmelette ($5). Other morning meals in-clude Pork Adobo and Eggs ($5) andJoe Moco ($5.75), a popular dish con-sisting of corned beef hash, two stripsof bacon, two eggs and rice with gravy.

“Even though our menu is bigger, our

prices are still very reasonable,” says Tom.

“At the same time, we make sure to still

give big portions and spend enough time,

so everything tastes homemade.”

Along with breakfast, 808 Yong’s BBQpatrons also will find more local-styledishes on the menu. Favorites includeNew York Steak with Onions and Mush-rooms ($7.50) and New York Steak

and Garlic Shrimp ($8.50). “Now people who enjoy local-

style food as well as Korean foodcan get both from one place,” saysTom.

Diners also can choose from aplethora of island-style plate

lunches ranging from SpicySweet Chili Katsu (starting at

$5.75) and Teriyaki Beef(starting at $5.75). All

plate lunches comewith rice and achoice betweenmacaroni salad or

tossed salad. Addition-ally, regular plate lunches now

come with a free drink.

The restaurant features a vari-ety of daily specials, allowing cus-tomers to choose from a multi-tude of local staples such as TopSirloin Steak and Eggs ($6.50) andGarlic Shrimp and Eggs ($6.50).
