Dizzy Tips: Browningand FlavorHumans have been browning food forages and ages, and for a very goodreason. Browned food almost alwaystastes better, and this fact is commonknowledge among most anyone thatloves food. But it wasn’t until 1912 whena French chemist named Louis­CamilleMaillard figured out what washappening to make browned food tasteso good. He was actually trying to getbiological cells to produce/synthesizenew proteins and learned that, whenapplied to heat, the sugars in the foodreact with the amino acids and theresult is dozens, likely hundreds, of new flavor compounds. There are many foods that benefitfrom the flavor produced by the Maillard Reaction. Everyone knows that toasted bread tastesdifferent that white bread, that french fries taste better than boiled potatoes, and that the morecoffee is roasted the more flavor it has. But a Dizzy Pig Cow Lick covered steak seared overcharcoal could be the ultimate example of the Maillard Reaction at work!

In addition to the Maillard Reaction, Caramelization is another process that can ramp up the flavorof your food. A less complex process, Caramelization is the browning of sugars and it also createsnew flavor compounds, many of which taste delicious and nutty.

DizzyFest 4, Another HugeHit!Wow! DizzyFest 4 was anothertremendously successful Eggfest. Held June1st at Dizzy Pig headquarters in Manassas,VA, the popularity of this event was so vast,we sold out of taster tickets and had to cutoff sales. If you were lucky enough to have aticket, you were treated to some of the bestBig Green Egg® enthusiasts cooking andsampling their skills and talents. Fifty newBig Green Egg owners had their EGGs

Dizzy PigCompetition Teamand Dizzy PigSponsored TeamsGet Rollin’ in 2013The 2013 season is the 12th yearof competing in KCBScompetitions for pitmaster ChrisCapell and the Dizzy Pigcompetition team. In 113 conteststo date, Dizzy Pig has captured12 grand championships, andseven reserve grandchampionships. Dig deeper, andyou realize Dizzy Pig has 60+ top 10 overall finishes and has competed in the prestigious JackDaniels World Championship six times and American Royal Invitational seven times. Dizzy Pigofficially kicked things off in 2013 at the BBQ Capital Cook­off in Lexington, NC, and have cookedin six competitions so far in 2013. The team has enjoyed great success highlighted by 3 top 10sand finishing 3rd out of 63 teams in Fredericksburg, VA at the BBQ Jamboree. Dizzy Pig took twotrips to the stage for 2nd in chicken and 4th in ribs. Then in our nation's capital, the team grabbed7th overall honors and came out on top of all the TV star "favorites" including Myron, Johnny andTuffy. Finally, in late June, the Dizzy Pig team reeled in calls in both Pork and Brisket for a 10thoverall finish in Covington, VA. Not a staggering start to the season, but the team is still hanging inthere with tougher and tougher competition.

Dizzycovery Rib Class,Bad to the Bone!On Saturday, May 18th, Dizzy Pigdebuted the first of three classes in itsnew Dizzcovery Outdoor Cooking Series.These classes are geared toward thebackyard enthusiast looking to take theiroutdoor passion to the next level andwow guests. Competition cooks can alsolearn a thing or two, though pitmasterand class teacher Chris Capell doesn’tdivulge all of this secrets acquired fromover 15 years of cooking and competing! For all the secrets, you’ll have to take his CompetitionClass!

Chris didn’t want to cook just one style, so he demonstrated multiple techniques as well asdifferent cuts of pork ribs. Among different ways to cook ribs, Chris taught class participants how tocook ribs direct over the flame with low heat, classic indirect set up, aluminum foil wrapping duringthe cook, and not foiling during the cook. Not only St. Louis style cut spare ribs were cooked, butalso baby or loin back pork ribs as well. Read more

Dizzy Pig Hires New TeamMemberDizzy Pig is excited to announce a new member of theDizzy Pig team. Brian Walrath joined the Dizzy Pigteam in mid­February. Brian brings a background inmembership recruiting and marketing in theassociation world where he worked for several non­profits for nearly 14 years. Working with associationmemberships is not the most exciting field to be in, sohe's very excited about a new career in something heis fully passionate about.

Brian is also an experienced Big Green Egger, longtime Dizzy Pig fan, and competition barbecue competitor, so naturally he fits in around here. Hewill be responsible for acquiring new dealers, maintaining Dizzy Pig’s social media sites,newsletters, and new web site, planning and marketing Dizzy Pig events, and working to build theDizzy Pig brand.
