• 1/4 cup fresh squeezed orange juice

• 1/4 cup Lucini Balsamic Vinegar

• 1 Tbsp. HT Traders Extra Virgin Olive Oil

• 1 tsp. minced garlic

• 1 Tbsp. finely chopped fresh thyme

• 1/2 tsp. sea salt

• 1/8 tsp. HT Black Pepper

• 4–6 oz. salmon steaks

• HT Cooking Spray

Place orange juice, Lucini Balsamic Vinegar, olive oil, garlic, thyme, sea salt and pepper in a sealable plastic bag. Shake well. Add salmon steaks and refrigerate 1 hour to marinate. Remove steaks from bag and pat dry with a paper towel. Coat pan with cooking spray and heat on high. Cook steaks, turning once halfway through, until no longer translucent in the center, about 4 minutes per side. Garnish with thin orange slices and thyme.

• 2 lbs. large red beets, peeled

• 2 Tbsp. Lucini Extra Virgin Olive Oil

• sea salt; to taste

• HT Black Oepper; to taste

Preheat oven to 350°. Line several baking sheets with parchment paper. Thinly slice beets. In a large bowl, toss beets with Lucini Extra Virgin Olive Oil to coat evenly. Place beets in a single layer, arrange without crowding. Bake for 15 minutes, then rotate pans. Bake for 15 more minutes until crispy. Allow chips to cool. Blot with paper towels to remove any excess oil if needed. Toss chips with sea salt and pepper to taste.

Salted Sunflower Spread Fudge

Add all ingredients into a medium saucepan and heat over low heat, constantly stirring. Once the mixture starts to warm through and comes together, remove from the heat. Pour into a small lined square pan and let set in the freezer for two hours. Once fudge is set, sprinkle with extra salt, and cut into squares.
