Toby Baxendale was running a restaurant in London in the early nineties but became disillusioned with the produce being supplied at the time. A stickler for perfection, he started to source the best quality produce himself and soon a business was born.

Today Direct Seafoods encompasses the whole of the UK. We are Britain’s largest fresh fish supplier to the catering industry; a national supplier with strong local heritage. Our eight regional depots are run by the best men and women in the business; fishmongers with the finest artisanal skills and expertise. We regularly supply Michelin-starred restaurants, hotels and pubs, retail outlets and contract caterers so no matter what you need or what size business you are, we ensure you get the best fish and seafood six days a week.

Seafood Holdings was acquired by Bidvest www.bidvest.com in December 2010. Toby retired on the sale to pursue his many other interests but the main Board, all Depots and Managers remain in place so preserving that heritage, local knowledge and experience that have served so well. Bidvest one of the largest catering companies in the world and owns many fish and seafood businesses across the globe so the UK catering industry can look forward to Direct Seafoods continuing to source the finest and widest available range of seafood well into the future.

As the largest fresh fish supplier to caterers throughout the UK we take our responsibility very seriously. Our two greatest responsibilities are to the fish stocks around the UK and from foreign seas, and to the people who make up the fishing and catering industry.

We work closely with the Marine Stewardship Council (MSC), an independent non-profit organisation, whose role is to recognise sustainable stocks via a certification programme. MSC certified products are identified in the Species Availability Section. We commit a lot of time to sourcing the most sustainable fish, whether from MSC-certified wild stocks or from the best fish farms and we work closely with companies developing improvements in the larger aquaculture industry. Please do ask us for recommendations for a sustainably sourced menu.

Just as we take responsibility for the fish we sell, and have close relationships with the people around our coastline who are running ports and auctions and of course catching the haul, we are also keen to engage with the people who are cooking and eating the fish. That is why we support the Roux Scholarship. Michel Roux and his brother, Albert, are not only two of the most revered chefs in the UK but the family have also established a generous scholarship for emerging young chefs. The scholarship is designed to provide an incentive for young chefs and reward them with world-class opportunities. We are thrilled to be associated with a venture which reflects what we hold dear as a business: individuals with passion and potential.

Colchester is the oldest recorded town in England. Historically famed for its oysters it is believed to have the oldest recorded oyster fishery in the world. The Romans in fact recognising the quality of the local shellfish, would drag oysters in nets behind boats when they left the Colchester Garrison to return home.

In 1983 Barry Gower did something quite similar. He left the army having been stationed at Colchester Garrison and started selling locally-landed fish back to his friends and colleagues in the army.

The reputation of his business grew quickly as Direct Seafoods Colchester became synonymous with quality and service; these remain the cornerstones of our business today. As the reputation travelled so too has the Gower family. Barry has been instrumental in setting up Direct Seafoods Scotland while his son Paul is now our Sales Director.

Iain Webb is now at the helm in Colchester. Iain has over 20 years experience in the fish industry, having been a fishmonger in the Midlands, from where he also supplied the local hotel trade. He brings even more expertise and experience to the company. Barry Gower, synonymous with Colchester is still involved in the day to day running of the business he created.

For the last 20 years Les and Jackie Ironman have built up Southbank Fresh Fish business to one well respected by top restaurants in London.

They major on Quality of Michelin star standards, as they supply many of Londons Michelin Star Restaurants.

The depot is now run by John Ewing who has 25 years in the industry, many serving the London market. Les and Jackie still retain a strong ties with the business however and help maintain customer relationships and contribute to sourcing of products.

Since 1926 the Taylor family have been in the fish business. Initially working for locally owned fishmongers in the Newcastle area. Taylor’s own business was built on delivering freshness with products chalked up and presented to the public on ‘catch of the day’ specials boards. The combined expertise of Phil Coultard and Darren Leason have now taken the helm at Taylor’s and are building on it’s heritage of freshness and quality.

Taylor’s is now one of the largest employers in the fishing industry in the North East. They are the major buyer on the North Shields auction, and are considered amongst the best fish wholesalers in the area.

Direct Seafoods Scotland began trading in Edinburgh in 2007. It is run by a highly experienced team of fishmongers lead by Paul Keen who personal expertise includes the running of a smokery.

The Team source as much fish locally as possible, from Scottish ports such as Peterhead, Aberdeen, Fraserburgh, Buckie and Eyemouth. Additionally, understanding the customers requirements for provenance, Direct Seafoods Scotland seeks to source speciality products such as Finnan Haddock and Arbroath Smokies from both the mainland and the isles – which are home to some fantastic producers.

C & G Neve’s is synonymous with the North West but Lancashire in particular.

With the experience of three generations behind them Chris and Gerrard Neve started selling door-to-door to local households and at local markets. They then started selling to local restaurants and word spread. Soon they counted many of the top caterers in the North West among their customers.

Chris and Gerrard Neve retired in 2009 but their name and heritage is still a presence in the North West and indeed the operating area has reached as far north as Carlisle and south to North Wales and Anglesey.

Gary Apps who has over 20 years experience selling fish in the North West now heads up the depot which currently employs over 80 people, many of whom are ex-fishermen and have worked for C&G Neve for 20 years or more.

And so the story that started in the 1840’s continues.

The gulf stream provides the South West with some of the richest fishing grounds in Europe, offering an unrivalled variety of species landed anywhere in the country.

Brixham has been a fishing port since the 1500s, developing the first trawl nets in the 18th century to catch turbot and sole. At its peak in the 1850s it was home to nearly 300 fishing boats.

The man behind Kingfisher Nick Summersby grew up in Brixham and his family’s involvement in the fishing industry began when his father moved there after the war and started fishing for crab and lobster off Lundy Island in the late 1940s.

At the first opportunity, armed with a small bank loan and the share of a work unit in town, Nick started supplying local pubs and restaurants.

Nick is now semi retired but still plays a role as part time buyer. Marc Shipton now runs the site, and is assisted by Kevin Weyman the head of sales , and Les Daniels head of buying.

25 years on, and now occupying a pre-eminent position within the industry, Kingfisher has become a kite mark for quality fish known throughout the country. Besides Brixham, the company buys direct from Plymouth, Looe and Newlyn markets trading some of the finest produce the West Country has to offer.

Yet it has retained its roots. The heart of the business is, and will always be, its provenance, people and loyalty to the local fishing community.

In 1984 from its modest beginnings in Exmouth Market Daily Fish Supplies has become a major supplier of fish to the Catering industry.

Established for over 25 years, Daily Fish Supplies specialise in both fresh and frozen fish including shellfish and other speciality produces from around the world.

Bobby Lea and Rennie Corradi who set up the company were later joined by Steve Vella. After selling the business to Direct Seafoods in 2007 all three are now Main Operations Board Directors and run the Daily Fish Supplies from a purpose built EEC approved unit in Kings Cross.

There aren’t many fishermen in London but there are plenty of fish eaters!

Direct Seafoods London was set up to source the very best fish from around the country and the world for London’s discerning chefs. Gary Hooberman who runs the site has been buying fish for nearly 30 years and sources only the finest.

Few kitchens in London will be unfamiliar with the name Laky Zervudachi. Welcomed into kitchens armed with the freshest fish since he was cycling round the city with a box of oysters in the early 80s. Known all over the capital for his epicurean expertise and his willingness to advise Lacky is Direct Seafoods point of contact on all issues of sustainability and aquaculture, an vital role in an ever-changing and challenging industry.

Round FishRound fish, as the term suggests, are basically round in cross-section, such as the cod. But more accurately they can be defined as those fish which have a central spine yielding either fillets or loins.

This section contains a variety of different species, typically sourced from the colder waters of the Northern Hemisphere.

Hake

Cod

The most well known fish in the Northern European Market, cod has been a staple on the UK menu for many years and we continue to be one of the largest consumers of this specie in the world. Stringent quotas around the UK restrict over-fishing and availability, so today much of the wild cod sold in the UK comes from well managed Icelandic, Norwegian and Faroese fisheries.

The relatively new process of cod farming is developing in Northern Europe; although it is not yet on the same scale as salmon farming, farmed fish is now available throughout the UK.

Cod Fillets

Haddock

Haddock is an important commercial fish, both fresh and smoked. A smaller species than cod, haddock is primarily used in fillet form; interestingly it is more widely consumed within Scotland whereas cod is widely eaten with in England.

As with cod there are quotas around British waters, so much of the haddock sold in the UK comes from well-managed Icelandic, Norwegian and Faroese fisheries.

Coley (also known as Saithe), is related to both cod and haddock. In the past this North Atlantic fish was underrated, due to its darker flesh tones; it is gaining in popularity as it is an excellent alternative to cod and haddock with year round availability and good sustainability.

Whiting

Smallest of the cod family and historically overlooked. As with coley and pollock this fish is gaining in appeal, due to its good availability and sustainability record, as an alternative to other cod related species.

Hoki

Hoki is not caught in the Northern Hemisphere: this deep water fish is found in the colder waters around New Zealand. It is not usually available fresh within the UK but readily available as a frozen product.

Hake

This slow growing, deep water fish is found in waters around the world; available all year round as hake spawn at different times from North to South.

Increasingly popular in the UK, hake is a long slender fish which produces great steaks and loins, when cooked the flesh is firm and meaty. Careful handling is required at all times as the fish can damage easily.

Mackerel

This most northerly member of the tuna family is readily available in UK waters; local fish are best from the South West from May to September and from Scotland from October to April. Imported fish is readily available from France and Spain. Mackerel is best received during the first 24 hours of catch, as condition alters rapidly with age. Mackerel are an excellent source of Omega-3.

The Herring Family

HerringsOccasionally sourced from around the UK and readily imported from Norway, availability is good between April and October. The herring start to roe-up during July; the male roe (melt) is considered a very tasty part of the fish. A gutted and smoked herring is a kipper.

Sardines and PilchardsThese are the same fish: smaller, younger fish are known as sardines and are predominantly caught off the South West and Southern coast between July and April. They are also imported from southern Europe to ensure year round supply. Pilchards are mature sardines commonly caught in the North Atlantic. Historically consumed in the UK as canned fish they have become increasingly popular as a fresh fish.

Anchovies and Sprats Small, oily fish both are available in many processed forms including salted, marinated, canned and even smoked.

WhitebaitWhitebait is the fry of small species such as herrings and sprats. They are readily available frozen.

Monkfish

This deep water fish, found all around the British Isles, was historically thrown overboard with other by-catch, but it has become a popular fish in the UK over recent years.

The large, wide head accounts for approximately 60% of the fish’s weight and it’s the tail, skinned, trimmed and with the membrane removed, that yields the firm, meaty flesh.

Between December and January prices can rise considerably as demand outstrips supply.

Flat FishMost of our flatfish are caught in European waters. They provide immense variety, from delicate texture of plaice to the more meaty texture of halibut.

All species are wild caught, turbot and halibut are also farmed. All flatfish spawn or are ‘roed-up’ for a period of time. They use their body weight for fuel, becoming thinner and wasted during this period.

Turbot

Turbot is only found in European waters, with the main fishery being on the sandbanks of the North Sea. Highly prized and often regarded as the best of the flatfish year round availability of wild fish is good; they are also now farmed successfully. Farmed turbot is distinguishable by its lighter skin. Also available from fisheries in the South West; where it is at its best between September and November. Turbot tend to roe-up between April and May in all catch areas.

Brill

Brill

Similar to turbot, brill is fished around the British Isles and Western Europe. Landings are plentiful around the country and quality is good. Prime South West coast caught fish is most readily available September to November. Unlike most of the flatfish brill usually retain their quality when roed-up.

Halibut

Halibut are the largest of the flatfish and are found in the North Sea, North Atlantic and Pacific Oceans. British halibut is largely farmed in or caught off Scotland. As halibut migrate to deeper water to spawn, generally they are not caught when in roe.

Don’t confuse Atlantic or Pacific halibut with the mock, black or Greenland halibut. The former have a dark side and a light side, while the latter are dark on both sides.

Yellowtail Kingfish

Tuna

Tuna with its firm, rich red meat has become increasingly popular in the UK due to its versatility. Although available throughout the year, during the summer supply can be interrupted due to the monsoons around the Pacific.

Sashimi TunaWhen tuna are landed they are graded to identify those fish suitable for serving as sashimi. A sample is taken from the core of the fish, the colour determines whether the fish can be sold as sashimi grade (suitable for consuming raw) or a non-sashimi grade (must be cooked before consumption). This is produced and stored in line with current legislation.

Marlin

A prized game fish of repute, this meaty fish provides a great point of interest as an alternative.

Yellowtail Kingfish

The yellowtail (hiramasa) kingfish is a natural inhabitant of the waters of Southern Australia. This fish is now successfully farmed in The Spencer Gulf, Australia ensuring a ready supply to the UK. Crayfish

Lobster

Native lobsters found in the waters around the UK are regarded to be some of the finest in the world. Sometimes referred to as ‘blues’, availability is seasonal, generally from May to October.

There is, however, a year round ready supply of Canadian and Americanlobsters from Canada and the east coast of the USA. These are generally larger than their European counterparts and are brown in colour. Both variants turn red when cooked.

Crabs

There are many variety of crab available, the brown crab is the most usually consumed within the UK. Caught in baited pots around the Northern European coastline, cock crabs (males) weigh up to 3kg and are larger and contain a higher white to brown meat ratio than hen crabs (females). There are many other varieties of crab available with the spider crab being a popular option.

Crab is readily available in several prepared formats for ease of use; fresh whole, picked and dressed. Alternatively blue swimming crab meat, imported from the Far East, is a popular choice.

Crawfish

Often confused with crayfish, the crawfish (also known as spiny or rock lobster) is a seawater crustacean similar to a lobster but without the large claws. As a result, only the tail meat is eaten. Readily available crawfish are found in most European waters and frozen rock lobster tails are imported from Central America and the Caribbean ensuring a year round supply.

Cold Water Prawns

A significant proportion of prawns sold in the UK are of the cold water variety. Sourced from the cold waters around Canada, Iceland, Norway and Greenland these prawns are translucent, turning pink when cooked.

Available in a wide variety of sizes they are always sold cooked and frozen, either peeled or shell-on. Peeled cold water prawns are usually glazed to prevent dehydration during storage; premium quality will have a 8-10% glaze (cheaper prawns will have a higher glaze, this can be up to 40%).

Mussels

The common or blue mussel is found all around the British Isles. They are available all year round, however not at their best in the summer months when they are spawning or spatting. The UK is home to a significant mussel farming industry; rope grown, suspended above the sea bed ensures that the mussels remain grit and barnacle free.

Mussel meat is readily available frozen, alternatively try frozen greenlip mussels from New Zealand which are larger & meatier.

Shellfish

Scallops

Scallops are available all year round within the UK. Found in deeper water than most shellfish they are either dredged or diver caught (these scallops command a higher price than the dredged alternative).

King scallops or jumbo scallops are either sold in shell or as scallop meat. These scallops are available soaked (scallops absorb water which adds weight and produces a cheaper alternative) or un-soaked (which is a more premium product). UK scallop meat is generally sold roe-on (the roe is also known as the coral) but scallop meat imported from North America is always roe-less.

Queen scallops are a much smaller variety usually only sold as meat.

Squid

Squid

Squid is the most widely consumed cephalopod found in UK waters.

Whilst the body, arms and tentacles are edible watch out for the transparent quill which needs to be removed before cooking.

Cuttlefish

Similar to squid but with a tougher texture, cuttlefish is not widely consumed within the UK, and most local catches are sold to Europe. The cuttlefish is unusual in having an internal bone or shell, this has a variety of uses, the most familiar being in bird cages.

Octopus

Octopus is common through the English Channel and the Mediterranean. The firmest eat of the cephalopods the tentacles are the best bit for consuming.

GoujonsGoujons are small strips cut from a fillet lengthways. These are usually prepared by being coated and then fried. Goujons are typically produced from white fish such as plaice or lemon sole.

LoinLoins are cut from large fish such as swordfish, tuna and cod. Large loins will typically be cut into boneless supremes.

Pin bonedOnce fillets have been cut they may still contain small bones – pin bones – these can be machine removed or in the more traditional method removed by hand with pliers. Salmon fillets are usually pin-boned.

Pocketed fish Smaller sized flat fish such as sole and plaice can be prepared as a pocketed fish. This means they are de-headed, trimmed and filleted without cutting into the top or bottom sides and leaving the tail on, creating a pocket that is ideal for filling.

Quarter-cut fillet Two fillets taken from a flatfish are then cut in half lengthways producing quarter-cut fillets.

Butterfly fillet Smaller whole fish, typically 300-400g fish, can be prepared by removing the head and cutting through either the back or belly side of the fish. The two small fillets remain joined along one side creating a butterfly fillet when opened. Mackerel and trout are ideal for this type of preparation.

Canoed fillet The fish is filleted in a similar way to butterfly fillet, however the head is left on. This leaves a ‘canoe’ style fillet which is ideal for filling.

FilletFillets are the most commonly used cut. Salmon, sea bass (see below) and cod are some of the many fish prepared in this way. The fillet is taken off the bone although pin-bones may remain in round fish. Fillets cut from larger fish can subsequently be cut into portions.

Steak, darnes or tronconsSteak, darnes or troncons are terms for cutting portions from a round fish, such as cod and salmon. The portion is cut through the bone of the whole fish.

SuprêmeSupremes are cut from large fillets or loins from fish such as salmon or tuna. This cut yields a thick boneless portion.

TailsThis is a term commonly used for monkfish. The meat comes from the tail of the fish; it can then be cut from the bone to provide fillets.
