Cater with Care project –A unique collaboration

• Problem identified by dietitians and geriatricians: difficulty to reach 1.2-1.5 g protein/kg/d

• Not enough tasty high-protein foods in small portions available

Consortium of university, care organisations, and food industry

Consumer-focused NPD: using nutritional knowledge, sensory science and consumer science

Common goal: to develop protein-enriched foods for elderly

No intervention effects on muscle function..Post-hoc: Muscle function of group (≥1.2g/kg/d) improved fasterReached intake of ≥1.2 g/kg/d:

72% intervention group (red) vs 31% control group

• Similar approach would benefit Australian elderly – requires adaption to local context

• Set up interdisciplinary collaborations for a holistic approach• Health care professionals, science, industry

• Consumer focused approach• Multi-cultural: variety of eating habits among elderly?

– Find commonalities to start NPD with, e.g. desserts, soups, sweet and savoury snacks

– Challenges due to changing population

• Set / increase protein content goal for snacks (in between meals) in care settings

• Combination of protein-rich foods and exercise is key to counteract sarcopenia and frailty!

• Geographical challenges in product development and logistics
