une and its time again for those winter woolies and hearty soups. With the chill in the air we decided to take you on a journey to warmer climes, Thailand. Exotic, mysterious and frenetic, this is one of my favourite holiday destinations and I hope you enjoy the thrills and spills that go with a visit to Thailand. We have included some authentic Thai recipes from a unique Thai restaurant called Kung Thai, these will have you off to buy that lemongrass in no time. Celebrated SA Chef, Jackie Cameron of Hartford House in the Natal Midlands has also shared some of her recipes with us and we’re so excited to have you try them out. June also means Father’s

Day so our this edition is in tribute to our Dads. We have some neat ideas for dad to have his ‘own space’ in the house as well as some really unusual and funky gift ideas that will ensure that Dad loves and uses his gifts, no more weird ties and belts. Our Book Club recommendation this month is bumper value for money and even this as a gift for dad will have him still thanking you next year.We take a closer look at “Cupping” and try and de-mystify this unusual healing therapy and discover the Art of raising a Bonsai. Muay Thai has become a popular means of self defence but did you know it is also excellent as a fitness regimen?

As always the magazine is full of interesting ideas and articles and of course we have a great competition for you this month. Creation wines is giving away a sublime gift and we look forward to receiving your entries. Congratulations to all the winners of the Mangwanani Competition, let the pampering begin. Fathers DayA celebration of male parenting and fatherhood and the one day to make dad feel extra-special.

In honour of Fathers Day, the day when dad gets to take a break from ironing – we give you our list of dads who have shown exemplary virtue (or not) and guided us through our many trials and tribulations (or not)

1. Adam – the first father…He had two sons, one of which murdered the other, a difficult wife who convinced him to do the wrong thing and no friends to complain to.

2. Brad Pitt – father to the united nations. If the acting thing doesn’t work out he can always buy a bus, paint it and start a traveling family choir, Von Trapp style.

3. Jamie Oliver – father to Petal Blossom Rainbow, Poppy Honey Rosie, Daisy Boo Pamela and Buddy Bear Maurice. Well, at least the kids wont go hungry.

4.Frank Zappa with his kids – Moon Unit, Dweezil, Diva and Ahmet – I guess he sang them pretty songs?

5. Will Smith, this dad says he’s son Jaden can leave home when he has a movie that’s bigger than dad’s – Guess Jaden’s gonna be in dad’s house for a long time still.

Somehow, despite having different interpretations of right and wrong, the father and son (Luke Skywalker) eventually come to accept one another for what they are – an old man in fancy dress, and a smug Jedi with mad skills.

8. Dexter Morgan (Michael C. Hall) from DexterBeing a good dad is about doing the best you can with what you have—

even if you’re a serial killer. Sure, he had a hand in the death of his stepchildren’s biological father, but he (like every other good dad) was

just trying to do what he thought was best for the kids. He’s the kind of dad who takes the time to get down on the floor and play with his kids, even after a long day of staring at blood splat-ters and making a few of his own.

9. Peter Griffin (Seth MacFarlane) from Family Guy:The pride of Rhode Island would never let a giant anthropomorphic chicken hurt his progeny. Meg, Chris and Stewie may not benefit much from having Peter as a dad, but the rest of us certainly do.

It is debatable as to whether this is a good or a bad phenomenon. Some argue that suits belong in the past, with a small minority feeling it to be vitally important.

A point to consider though, is that your clothing is a direct reflection of your profession in many instances, and may be critical in ensuring that the correct level of respect is received. Could a judge be dressed in jeans and a smart shirt? (…and would James Bond be quite so heroic were he not fitted out in the best Armani suits?) A graphic designer on the other hand has no need for a formal suit in his day-to-day dealings.

Society does have a level of expectation which is why I refer to outerwear as "your silent sales team". The “7 second” first impression can be a possible make-or-break factor in sealing a deal, which begs the question, “Are you happy with what you are saying”?

When you are well dressed, you feel as good as you look, so you radiate confidence, which in turn comes across positively to whomever you may be meeting witd. In the business world, you need to dress for success!

Whether you are a Barney Stin-son “suit up” kind of guy, or have a preference for a more casual image, it is how you wear your look that is essential.

So, how casual is “business casual”? Interpreted in many way : for some men it could be as simple as not wearing a tie, for others it is a matter of dressing-up jeans. Keep it simple and don’t over-think it too much. Streamline your choices in order to create a simple wardrobe that you can mix and match easily. Remember the saying: “less is more!”

While most men's “work wear” wardrobes generally consist of a few pairs of chinos and checked or striped collared shirts, with a “funeral” suit hidden somewhere in the corner, our “deal maker or breaker” advice will guide you in making the right statement within your professional realm.

MAKE THE DEAL• Invest in separates.

• A navy blazer always works! Keep it trim, with high armholes and slim sleeves that reveal just a bit of your shirt cuff.

• Mid-grey trousers and a tonal striped shirt is a good place to start.

• Shirts need to fit well. Collar points should touch the shirt, button stand must lie flat and the shirt must be long enough to tuck in properly. The lighter the shirt the more formal, so choose mid-tones for business casual. Pat-terns should be kept to a mini-mum, and remember if you do wear a tie it must be plain.

The corporate environment is no longer the stoic institution of yester-year; it has relaxed a great deal with open plan workspaces; paperless environments and tech-nology reducing the need to have face-to-face meetings (whether with the boss or the client). So, naturally the need for the “boys” to be in suits on a daily basis has changed too. • A leather strap watch completes your look and takes the 'casual' to where it needs to be.

• A briefcase or messenger bag needs to compliment your shoes. Leather is your best option here, but a good nylon/canvas can also work.

BREAK THE DEAL• Watch out for very big checks, as this is too casual.

• No distressed denim or skinny jeans.

• Casual shoes such as running shoes; trainers; slip slops or san-dals are a no-no!

• Socks need to be long enough so you don't have skin sticking out when crossing your legs! Keep the “fun” socks for weekend wear!

• If you are boasting weight loss, and you use your belt as the proof....don't! Those old used holes are generally well worn and very visible, rather buy a new one.

• Your sports watch you wear to the gym does not fit this look.

• Chinos are a must. They do come in various fabrics and colours, but neutral is the safer bet for ease of styling. Flat front chinos are generally suited to a bigger build whereas a pleated front would be better on a trim-mer build.

• Jeans are not off limits, but make sure they are as dark an indigo as possible. Length is crucial.

• A smart V-neck is an alterna-tive for the guy who chooses comfort above all else. It must be a thin gauge and fit to the body. Layer with a shirt and jacket. An understated solid colour is best.

• Shoes change with fashion but you cannot go wrong with a good pair of chocolate brown brogues, which are just as versatile as black.

• Socks should blend with the colour of your shoes and pants.

• Belts need to match your shoes!

Over a thousand years ago Thai warriors fought with crossbows, knives, swords, spears and battle-axes. When the time came to teach the young men the art of combat, the warriors used the body instead of the weapons. The shinbone became the spear used to block and strike. The arms became the twin swords of defence, the fist the stabbing tip of the spear. The elbow and the knee, the battle axes to smash and crush. The foot a spear, arrow and knife. Each part of the body became a weapon and a new close combat fighting skill emerged. A new martial art... Muay Thai was born.

Today Muay Thai is the national sport of Thailand and this martial art has become popular all over the world; more recently it became accepted as an Olympic discipline. Also known as Thai Kickboxing Muay Thai is much faster than traditional boxing, and in Muay Thai fighters can utilize their fists, elbows, knees and feet. It is because of the use of the various parts of the body that Muay Thai is called “the art of the eight limbs”.

SO, WHY GO TO THAILAND?Well, whether you’re on a budget or have the cash to splash, Thailand offers great value for money and you will be assured of a great holiday no matter what you choose to do.Some of the most beautiful beaches for swimming and just about any kind of wa-tersport can be found.The massages are to die for…..You can get the best of both worlds in one trip, Bangkok for the big city life and shop till you drop experience and either Phuket or Koh Samui for that idyllic beachside relax and do nothing but sip cocktails and enjoy massages all day holiday.

PHUKET:The largest of the Thai islands, hedonistic, busy and extremely popular with tour-ists, Phuket offers mile upon mile of sandy beaches, exciting restaurants and of course decadent resorts. Often it can feel like the tourists outnumber the locals, such is the appeal of Phuket but with so much on offer a trip to Thailand would be incomplete without a visit to Phuket.

THINGS TO DO:

1. Well, of course the watersport is a MUST…

with jetskiing, parasailing, banana boating just about any water activity you can think of on offer, at reasonable prices.

2. Whilst lying on your deck chair sipping your cocktail of choice you can get quite a cool tattoo (temporary of course) and a mas-sage and it won’t cost you the earth.

3. The number of massage parlours lining the roads are quite astounding but you should

be careful when choosing one, my sugges-tion is pick one with a roadside entry, unless of course you’re keen on that ‘happy ending’, because yes, this is Thailand and yes, you can get one of those as well.But, you can try as many as you like, with the prices being so reasonable you could treat yourself to a massage or two a day. My sug-gestion is the Savrana Spa right on the Beach road.

4. “Boy-Girls” abound and the Simon Show is a favourite among visitors…just don’t forget that if you want a picture with them after the show, you need to pay (I didn’t know…and you don’t want to hear the rest)

5. Eat a banana pancake…off the side of the street…wow!! I’d go back just for these.

6. Along the Beach Rd you will find tons of vendors selling trips to (Krabi) Phi Phi island and James Bond island etc…this is a must.

7. A visit to these islands either on a speed boat or ferry…There are two islands Phi Phi Don and Phi Phi LehPhi Phi Don is inhabited and you can stay overnight or even spend your whole holiday here. Phi Phi Leh is uninhabited but offers beautiful beaches such as the one on Maya Bay where the movie “The Beach” was filmed. The island of Ko Phi Phi Don was severely damaged in the tsunami of 2004 but a visitor to the island today would never tell, massive

rebuilding and reconstruction has rapidly seen the island return to its former glory as “The Shangri-La” of Thailand. The day trip will take you to both. But there are other day trips to other islands like the James Bond Islands, famous for where the movie “The Man With The Golden Gun” was filmed. The Muslim fishing village is also a very popular stop. The boat trip offers the opportunity to go snor-keling, swimming and stops at quite a few beaches, and if you choose the right one…the ‘entertainment’ is excellent…We had “Beyonce”

8. And of course, that ultimate jun-gle experience, Flying Hanuman, a 400 meter zipline through the jungle.. Cannot say more except you’ve gotta try this.

9. The nightlife of course is great. Something for all tastes, bars, restaurants and clubs are just about everywhere with lots of them employ-ing foreigners on a gap year, so language is never a problem.

10. And of course a walk down Bangla Road, is a MUST…you can-not go to Phuket and NOT do this..Yes, be prepared to be accosted at every step by someone offering a “show” or a service of a different kind but you cannot go to Phuket and then be offended, expect it….even if you’re with a partner. The two clubs popular among visitors on this road are Hollywood and Tiger. Although Bangla Road takes on a different character by day it is still crazy and hectic…..Ping Pong anyone?Just be careful if they say the Ping Pong Show is FREE, you would have to buy a drink and that will be the most expensive drink on your holi-day..you will drink every drop.

In 1971 two tourists stumbled upon this tiny piece of paradise and its never been the same since.Less touristy, quieter and definetly way more relaxing, Koh Samui has a reputation as a hippy island paradise that remembers to provide the best of the creature comforts. The airport is just beautiful and sets the tone for the rest of your time there.It does offer similar activities to Phuket but with a little less frenzy.Koh Samui’s quickly growing reputation has seen an influx of visitors recently and the Full Moon parties held at Ko Pha-Ngan are legendary.

THINGS TO DO:

1. As little as possible but relax on the beautiful beaches and drink in the hospitality of the islanders.You can find a secluded beach if its privacy you’re after or you can enjoy the hustle and bustle of the ‘trendy’ beaches with the peddlers selling their man-gos and coconuts.

2. Visit Big Buddha Beach, this is often the first thing you see when arriving by plane.

3. Book a bungalow and just take some time to relax away from the madding crowd

4. Make sure you treat yourself to a massage a day, the people are interesting and you cant help but feel warm and comfortable here.

5. Be careful now, many have come for 2 days and 2 years later still haven’t left, such is the appeal and magic of the island.. I’m not saying its for everyone, but I can see how this can happen.

BANGKOK,

Wow, this city NEVER sleeps…. Now you will notice I never mentioned shopping on the islands, and of course you can definetly shop till you drop there BUT when you get to Bangkok, you’d better have space in your suitcase.Steamy, pulsating with a life of its own this en-igmatic city can become addictive. Bangkok is intense, it is cosmopolitan yet you’re surround-ed by its history, it is frenetic yet you can move at your own pace, it is modern yet traditional…It is just Bangkok and you have to experience it your way..

THINGS TO DO:What isn’t there to do, in fact Bangkok may require a trip just to Bangkok without the islands and you will still need to go back because you didn’t have enough time.

1. Well of course, shop till you drop at Siam Square and almost across the road MBK Mall…Cannot even describe what’s on offer, you name the brand they have it, you name the item they will find it.

2. Of course temples abound, and you have to see at least ONE of the magnificent Buddha’s..So visit the Grand Palace, official residence of the King until 1925 and the complex includes The Temple of the Emerald Buddha.. A strict dress code applies, no visible body parts.Or The Temple of the reclining Buddha (Wat Pho) rated as the one thing you “must see” in Bangkok

3. Take the ‘sky train’ and visit the area of Sukhumvit, trendy and some would say “the heart of Bangkok” has plenty of places to drink, eat, shop and everything in between.

4. Thailand is known for their precious stones

so visit, the Jewellery District and you will be sure to find a stone that suits you at a reason-able price.

5. Hire a tuk tuk for the day, the driver will be happy to recommend other places of interest and rates are negotiable.

6. Visit Baiyoke Tower, Thailands tallest build-ing with a revolving bar at the top, great views of the city.

7. Khao San Road, but just to say you were there, its hectic, full of tourists and can get quite manic.

8. A visit to Damnoen Saduak Floating market is a must and my favourite, go early to avoid the crowds but it is quite a distance from the city so make a day trip of it….lots to see along the way too. Colourful and vibrant, alive with chatter, the vendors love to bargain and you will not be disappointed.

9. Watch a Muay Thai boxing fight or even take lessons from the pros at the Muay Institute just north of the airport.

Durbanites have good reason to celebrate. parc Café has opened its doors in Glenwood. This little culinary sanctuary has found the perfect home right next door to the Glenwood Bakery and just a few hundred meters away from Colombo Coffee, two of Durban’s foodie hot spots.

Chef patron, Brett Gentles, who honed his already sharp culinary skills whilst working with Graham Neilson of 9th Avenue Bistro, explains that the food at parc is not bistro, it’s not café, it is just parc. He uses sea-sonal ingredients and supports local artisanal producers and when he says local, he means it. Brett is in the process of negotiating vegetable supply from a small farm which empowers local women; the bread at parc is supplied by the Glenwood Bakery; the coffee is from Colombo Coffee in Umbilo Road and his cakes and pastries are made by his good friend and previous boss, Lucy Markewicz from Lucy’s cakes.

“We were tired of going out to eat and finding the same things on every menu” says Lara Gentles, Brett’s sister and business partner. So they have created a seasonal menu which offers something different. Try the stack of sweet potato cakes, tomato relish, brown mushroom, rocket, poached eggs, crème fraiche and toasted pumpkin seeds for breakfast. As a light lunch option the Wintermelon and coconut gazpacho with ginger and chocolate is a fabulous combination of flavours. Sand-wiches include the likes of Hummus, grilled aubergine, onion sprouts, watercress, goats cheese with preserved lemon and French roast garlic chicken, onion pickle, herb and garlic mayo with fresh tomato served on a choice of artisanal breads.

THE RED TABLENOW OPEN ON FRIDAY NIGHTS

The Red Table restaurant, run from Neder-burg’s historic Cape Dutch manor house, is now open on Friday nights from 18:00 till late from now until the end of September.

On Friday nights, the bistro-style eatery offers patrons a choice between regularly-changing set seasonal menus, and à la carte dishes. Set menus offer two courses for R125 a head (with a glass of wine at R140 a head) and three courses for R175 a head (with two glasses of wine at R215 a head). Expect hearty winter dishes and decadent desserts! Booking is essential.

The à la carte menu features food for every-one, with prices for starters ranging between R45 and R65. Mains are priced at around R100 per dish. Kids are also catered for. The focus is on fresh-flavoured, light dishes, using mostly locally-sourced ingredients for relaxed enjoyment in a gesellige atmosphere.

Nina is now the proud chef/proprietor of Kung Thai in Durban North and as usual the standard of food is excep-tional.The décor of Kung Thai is red and white with signs of ‘home’ throughout. Pictures of the King and Queen of Thai-land take pride of place and as Nina explains, the monarchy are seen as the “Parents of the Thai nation”…In fact in Thailand Fathers Day and Mothers Day are celebrated on the birthday of the King and Queen.

The ambience is cheerful and Nina often pops out of the kitchen to chat with the customers and offer menu suggestions. In fact the diners all seem to be regulars and Nina knows many of them by their names.

The name Kung Thai, “City of Thai” and the logo of the dragonfly was inspired by the fusion of eastern tastes from every Thai city and the dragonfly symbolizes freedom. With all the wars with Burma, Laos and Cambodia as well as bandit invasions most Thai people were afraid to travel with the dragonfly seemingly the only creature that was able to move around freely.

The menu is true Thai inspiration and most of the herbs used in the dishes are grown by Nina in her garden at home. These include lime leaves, galangal (a staple in Thai cuisine) and turmeric. A meal at Kung Thai is a meal that

There is a standard menu with all the Thai favourites but as Nina explains she gets bored easily so she has an additional Specials menu, which changes regularly. These specials I must tell you are so spectacular, like the Phad Phed Neua Gha (Lamb) that they really should be added to the regular menu. However, Chef is quite flexible and if a diner requests something no longer on the menu she will hap-pily make it up for you. When asked what her

‘signature dish’ is, with absolute humility and total lack of vanity, Nina answers ”Everything. I can’t say” because people return time and again and always try different menu items, so much so that all items are as popular as each other.

Nina is a tiny bundle of fiery energy and runs a brilliant ship, her staff love her and the customers seemingly cannot get enough of the stunningly crafted dishes she prepares.Many of her staff have moved with Nina as she’s gone from one restaurant to another, surely this is a testament to both the chef and the person.

There are now a total of 3 chefs including Nina in the kitchen. The success of Kung Thai has now given birth to what Nina calls her “new baby” in the village in Umhlanga. Kung Thai will now share its original brand of Thai flair with so many more diners, I’m pretty certain that this new venture will be as successful as the original Kung Thai in Durban North.

Over the years, she perfected the art of mosaic, which she taught to dozens of students. Wanting to expand into another medium, she picked up her paintbrushes at the beginning of 2006 and started to experiment. So well received was her early work with a group of Durban decorators that her art helped win both Lianne Van Niekerk and Lisa Walters best stand on the show Durban Decorex.

Bron had found her niche and as her passion developed so did her art. Bron was approached by a top Interior Design company in Umhlanga in 2007. They commis-sioned her to paint a custom designed piece of art for a Post Production House co-owned by Madonna, in Soho, London.The brief from the Decorators / clients was very specific, but restrictive from an artists crea-tive point of view! They asked for two 4m long pieces using only green and white paints and in-corporating the theme of the company - movies! Well, the challenge was set and so began her many sleepless nights! After a while, not only were the trees and grass green, but so was everything else!She came up with the idea of a film reel gradu-ating from light to dark green, heavily textured paint and was even able to use the company logo to give it a personal touch.The final product was beautiful - 2 paintings, mirror images of each other running in opposite directions. They were then put on a ship and set sail for London!

“I won a scholarship to study viticulture and winemaking at Stellenbosch University and was on my way but then the donor went bankrupt after my first year. Luckily, the De-partment of Agriculture was extending op-portunities to students and I could continue my studies. But before I did, I thought long and hard whether this was where I wanted to be. It was only then that I discovered how much I wanted this career, and I’ve never stopped wanting it!

“Something my dad taught me is that the world doesn’t owe you anything. You have to work for what you want. Neither of my parents was in a posi-tion to complete their schooling but that’s never stopped them encourag-ing their kids all the way. My father instilled in us a thirst for knowledge and an awareness of the world. My mother has always motivated us to be the very best we can. They are my biggest fans!”

Why wine? “My mother’s a really great cook and works with aromatic Asian spices and layering of flavours every day of her life. I guess the taste for flavour, if you like, came from growing up in her kitchen. But also, growing up in Stellenbosch, the heart of the Cape Winelands, makes wine a key part of many people’s lives here.”

Her grandfather also played a major role. “He applied the same rule to all the grand-children. When we came of legal drinking age, he introduced us to wine. He wanted

Of all the wines she makes, she loves Sauvignon blanc most. “Like a woman, it must be handled with care. It’s a very fragile variety and super-sensitive to its environment in the vineyard but

also the cellar. It’s very hands-on. Actually, make that high-maintenance! It demands your utmost concentration. It stretches you and that’s what I love: a really good chal-lenge.”

She’s hungry to keep learning and extend her skills and her repertoire. Once a month, she and her colleagues take part in benchmark tastings. “We taste wines from all over the world, accross the style and pricing spectrum to keep us in touch with international trends. It’s a fantastic opportunity to try wines we might otherwise never have access to. It’s a brilliant – and most enjoyable! - part of the job.”

It’s also what spurs her on to try different concepts like making white wine from red grapes or white wine the way red wine is traditionally made. “You learn so much when you work outside your regular parameters and it helps to relook the way you do routine things. Experimenting like this has helped me focus on optimising colour in our Pinot Grigio, for instance.”

She doesn’t mind the long hours or the road shows, in fact she loves it all. “When you meet the people drinking the wine you make, you feel proud and humble at the same time. It’s such a massive responsibility to create wines they will enjoy and remember. When you get it right, it’s hugely satisfying.”

And when she’s not working? “What luck to live in one of the most beautiful parts of the world: magnificent white, sandy beaches, two different coastlines with different landscapes, different currents, dramatic mountain views. From when we were kids, we used to spend our holidays on the beach, fishing, collecting mussels, picking up shells. There’s nothing like a vigorous, bracing swim to give you back your mojo!”

When she’s not thinking about food and wine pairings (“I love Two Oceans Pinot Grigio with four seasons pizza and sushi, and our Cab-ernet/Merlot blend with Malay-style curries”), she likes to relax with music. “I like a fusion of sounds. Give me instruments and vocals, jazz with a modern sound and I’m happy!”

Midlands born and raised Jackie Cam-eron’s heart is in KwaZulu-Natal where, since 2002, she has filled the position of head chef at Hartford House, a five-star boutique hotel in rural Mooi River.

Having only recently reached 30 years old, her list of achievements is what most aspir-ing chefs dream of.

She graduated from the Christina Martins School of Food and Wine in 2001 and cut her teeth at Mount Grace Country House and Spa.

For the past 10 years Jackie has been reaping the rewards of her commitment to her career. Under her guidance the Hart-ford House restaurant, having achieved national Top 10 status four times in recent years, is mentioned regularly in magazines such as Food&Home, Taste, Eat Out and House and Leisure; and it has achieved many accolades including Top 10 Eat Out,

American Express Platinum Fine Dining Programme and People’s Choice awards. The latter was in the La Motte Restaurant of the Year competition. With her input, Hartford House was recently presented with the Inspirational Award in the Top 100 SA Short List Wine List for 2013 awards; Top 10 in the 2012 Eat Out/DStv Restau-rants Awards as well as a Diamond Award for its 2012 wine list, as recognised by Diner’s Club International.

In her personal capacity Jackie has the distinction of being “one of Victor Strugo’s three favourite woman chefs”. She was voted by South African Tourism as one of the Top 10 Young South African Chefs and has appeared on TV programmes such as Top Billing and with Justin Bonello in The Ultimate Braai Master. Jackie was a part of the Real Food Movement, is a Chaine des Rotisseure member, and is on the KwaZulu-Natal committee for the South Africa Chefs’ Association.

Her culinary career has taken her to Germany, France, Switzerland, Czech Republic Australia, England, Dubai, Shanghai, Spain, Copenhagen and Denmark where she has represented South Africa at exhi-bitions, enjoyed work experiences, or - for the benefit of her career - experienced eating in restaurants such as Nobu, Le Gravoche, Fat Duck, Gordan Ramsay’s Hospital Road and River Café, Noma and El Bulli.

In her endeavour to share her knowledge, Jackie writes a monthly column for The Witness newspaper where, through her stories and her recipes, she encourages readers to experiment with food – and to enjoy culinary feasts, however simple.

Makes a 18 × 14 cm tray

Ingredients115 g chunky peanut butter60 ml cream4 egg yolks60 ml castor sugar1 cup cream½ cup crème fraiche

MethodHeat the peanut butter and cream over a double boiler.Whisk the egg yolks and sugar in a double boiler until light and frothy.When you can form a figure of eight above your mixture, and coat the back of a spoon it is ready. If a double boiler isn’t available, place a pot of water on the stove and put the egg yolks and castor sugar into a stainless steel bowl that will sit over your pot. Ensure your bowl does not touch the boiling water below.Combine the two mixtures.Whisk the cream and crème fraiche together to form stiff peaks.Fold into the peanut butter mixture.Place in a deap tray and put in the freezer.Serve with maple syrup ice cream and fresh or cara-melised bananas.

BORAGE CREAM CHEESE50ml Cream Cheese15gr Borage Flowers and Leaves, chopped•Mix the cream cheese and chopped borage together

Makes 4 loaves

Ingredients1 kg nutty wheat flour175 g digestive bran210 g pecan nuts100 g white sesame seeds130 g sunflower seeds155 g raisins3 tablespoons bicarbo-nate of soda1 tablespoon fine salt1½ litres plain yoghurt or amasi1 cup honey or golden syrup

MethodMix all the dry ingredients together. Make a well in the centre, add yoghurt and honey. Combine all ingredients.Spoon into greased loaf 12 × 22 cm bread tins, ensuring that all the raisins have been pushed into the bread mixture to avoid them getting burnt.Bake at 180°C for 50 minutes. Take the bread out of the tins and bake at 160°C for 20 minutes.

Makes 1 loaf or 10 mini portions

Ingredients1 can sweetcorn, cream-style3 eggs, lightly whisked3 tablespoons melted butter60 g white sugar140 g cake flour, siftedpinch salt and pepper3 teaspoons baking powder

MethodMix the sweetcorn, eggs and butter in a bowl. Add the dry ingredients and season to taste.For mini breads, put a greaseproof paper base into a small tomato paste can. Grease well and half-fill with mealie-bread mixture. Bake at 180°C for about 10 minutes.Otherwise put all of the mixture into a well greased standard bread tin and bake for about 40 minutes.

Ingredients1 ½ cups steamed and

mashed Amadumbi560 ml Water, warm

2 packets Instant/Dry yeast

1 kg Cake Flour45 ml White Sugar

20 ml fine Salt30 ml salted Butter

ExtrasFlour for dusting and

bakingSunflower Oil

1 Egg, lightly whisked - for glazing

MethodSprinkle yeast over ½-cup

warm water and allow standing

Sift the flour, sugar and salt together

Rub in the butter amount using your fingertips

and then rub in the yeast mixture. Follow this by

rubbing in the Amadumbi mash

Then start cutting in the remaining liquid, little by

little, remember this is a guideline but you want a dough with moisture that is easy to knead

Knead on a lightly floured surface for about 6-8 minutes until smooth and elastical

Place dough into an oiled bowl and prove for about an hour or until double in size

Knock down and cut the dough in half, shape the dough into two present-able loaves

Dust two trays with flour, place bread dough on top. Glaze the dough with egg wash and dust the dough with flour. Take a sharp knife or blade and

score the topCover with a damp cloth and allow rising until double in size about 35

minutesBake at 180˚C for 20 minutes. Reduce temperature to 150˚C for 15 min-

utes and then remove oven tray and cook for a further 15 minutesCool on a cooling wrack and serve

Commenting on the winning wines Creation co-owner and cellar master Jean-Claude Martin contends that Pinot Noir is the ultimate test in winemaking. He adds that Creation’s virus-free vines coupled with cooler night time tempera-tures and long ripening result in great fruit with excellent natural acidity.

The 2012 Creation Pinot Noir shows delicate whiffs of violet with hints of raspberry and a generous pinch of spice. The gorgeously silky palate delights with lush red berry flavours beautifully balanced by lithe tannins.

The 2012 Creation Pinot Noir Reserve is described as ‘a special vineyard selection’ and rewards with multiple lay-ers of rose petal, dried apricot, cherry and spice on the nose. The luxurious, velvety palate is in harmony, also offer-ing deep tones of spicy liquorice on the lingering aftertaste.

And then there’s the 2011 Creation Syrah, Grenache. This full-bodied Rhône-style blend is richly endowed with flavours of ripe plum, black pep-per, tapenade and umami.

Hat trick at sa top 100 wines

THE GOOD NEWS IS OUT:

o less than three Creation wines were selected for the prestigious SA Top 100 Wine Challenge. A glittering performance indeed, especially since this small farm on the Hemel-en-Aarde Ridge near Hermanus was established just over a decade ago.

The SA Top 100, now in its third year, boasts a highly qualified panel of judges, mainly UK Masters of Wine. This year saw a record entry of 440 wines (that producers regard as their finest) and the results were announced on Thursday, 11 April at a stylish event held at Rodwell House, St James.

Creation’s ‘top three’ are the Pinot Noir 2012, Pinot Noir Reserve 2012 and Syrah, Grenache 2011. Needless to say co-owner and marketing director Carolyn Martin is thrilled with this achievement. “Since the establishment of Creation in 2002, we have been the proud recipients of a growing number of sought-after accolades. To have three of our wines selected for the highly esteemed SA Top 100 List however signifies our coming of age,” says Carolyn. “To make our achievement even more remarkable

is the fact that Creation is the only winery with two 2012 red wines on the 2013 Top 100 List. Having developed a passion for cooking at an early age Nina learnt how to cook from her dad. But went on to study in Chiang Mai for 6 years to hone her skill as a profes-sional Thai chef. She came to South Africa in 1999 after successfully running her own restaurant in Bangkok for 8 years. South Africa was a little more challenging though, especially in light of the language barrier so she started by doing private dinner parties for about 25 guests at a time. These proved so successful that the requests for Thai cooking lessons soon followed. But after about a year of these it was time for Nina to head back to a professional kitchen and so it was off to “Goochi” in Florida Road. After a while Nina became involved in a partnership in what was to become the highly popular Yum Thai in Glenore Centre in Glen Ashley. The partnership was to last almost 2 years and then it was time to venture out on her own. Method

CRISPY DUCK BREASTSTo a pot of boiling water add 1 stick of lemongrass, 250g ginger, 10g salt and about 30mls of dark soya. (The dark soya gives the duck its beautiful colour)Add the 4 duck breasts – with the skin left on and boil for about 30-40mins or until duck is tender and soft.Rest the duck for about 20 mins or until cool.Then deep fry for about 10 mins in palm oil. Slice as preferred.

Thai Food is generally cooked quickly and on very high heat, hence the use of palm oil as this oil can withstand very high temperatures.

TAMARIND JUICEPour boiling water over a regular sized block of tamarind. You can either simmer gently on a low heat to extract all the juices or just let it steep in the boiling water.Pass through a sieve to avoid getting the seeds into the juice.

TAMARIND DUCKHeat 50mls Palm oil in a wokAdd the garlic and chillies. As soon as the aroma liftsAdd the Bok Choi, ginger and mixed pep-pers. Stir fry for a minuteAdd the light soya sauce, oyster sauce & sugar Give it a quick stir then add,The duck, cherry tomatoes, tamarind juice and lemon juice.Stir well and then add the water and corn-flour mixture.

Serve with jasmine rice/noodles.Serves 4

Tom Yum Soup Highly popular Thai soup served with either Prawn (Goong) or Chicken (Gai)

Ingredients800mls Chicken Stock* 1 stick Lemon Grass (slightly bruised)* 100gr Galangal* 6 Lime leaves* 3 Chillies* 1 TBS brown sugar/palm sugar* 2tsps Salt* 60 mls Lemon Juice* 2TBS Tom Yum paste* 6 Cherry Tomatoes* 100gr Mushrooms

200mls Milk500gr Prawns/chickenCoriander

MethodBring chicken stock to the boilAdd all items marked * to the boiling stock. Cook for about 5-10minsAdd the prawns or chicken , cook for a further 5 minutes or until meat is cooked.Turn off the heat and add milk just before you serve.

Garnish with coriander.

Chuchee Prawns (Medium)A wonderful blend of hot, sour, saltiness and sweetness

Ingredients20mls palm oil1kg Tiger Prawns (cut and deveined)* 1 red onion (chopped)* 50gr Coriander root (the base of the bunch)* 4 chillies* 50gr ginger* 50gr lime leaf1 can coconut milk200g red curry paste3TBS brown sugar/palm sugar30mls fish sauce

* Blend together in a liquidizer

MethodPan fry prawns until cooked

SAUCE: (low heat)Put palm oil into wok and stir in red curry paste, for about 2mins

Add coconut milk and cook until it bubblesAdd the * blended ingredientsAdd brown sugar and fish sauceSimmer gently for about 8-10minutes and a smooth consistency is reached.

Pour sauce over cooked prawns, and serve immediately with jasmine rice/noodles and steamed veg.

Serves 4

Red curry paste is readily available at all eastern shops.
