The 7 gadgets you need for holiday food prepHandy tools that will get you out of the kitchen soonerThe cooking season is here and with it comes hours

of slicing and dicing to prepare meals for the holidays and other large gatherings. To help you speed through your food prep, Consumer Reports found some great gadgets and countertop appliances that did well in our tests. Use them to do some of your chopping ahead of time. Depending how far you work in advance, you can freeze or refrigerate certain ingredients until you’re ready to assemble your dishes (check the recipe first). Here’s some low-cost kitchen gear that’ll speed up your work so you can enjoy your guests.

Best chopper for onionsThe Cuisinart Mini Prep Plus DLC-2A, $40, is a

3-cup chopper that combines very good value with solid performance. In our food processor tests, it was particularly adept at chopping almonds and onions, and at grating hard parmesan cheese. Other machines were better at puréeing. The Cuisinart Mini Prep is perfect for kitchens with limited counter space.

Kyocera Perfect PeelerThe Kyocera Perfect Peeler,

$18, has a comfortable handle and sharp ceramic blade that adjusts to left, right, and center positions. While vertical blades are tried and true, some of our testers prefer horizontal blades such as the Kyocera’s for right- or left-handers. The Oxo Good Grips Serrated Peeler, $8, has a more familiar vertical blade. Testers described a smooth cutting action with the two-sided serrated blade on the swivel peeler.

Knife sets for slicing and dicingOur top-rated kitchen knife sets can cost up to

$600 but for $75 you can buy the Ginsu Chikara. For some, the name Ginsu is synonymous with hammy 1970s-era infomercials, but this is a serious cutlery company. Its 8-piece set offers incredible value, providing the cutting performance and handle comfort of knives costing three and four times as much. The set includes a chef’s and santoku knife, but not a slicer.

Better Blade ZestNestAlthough it’s shaped like

a lemon, the Better Blade ZestNest, $15, was a winner in our tests. It has a sharp blade and easy-grip case that holds one-third cup zest. Conventional zesters, with a handle and curved metal end, are easy to use and a grater-style zester can work fast. The ZestNest combines both virtues and stores extra zest. The downside: You can’t see how much zest is in the nest.

Garlic press that doesn’t clogThe Oxo Good Grips garlic press, $16, has a large

garlic chamber, ergonomic grip, and built-in rubber pad that cleans the small holes. The lever-style garlic press lets you mince cloves with minimal pressure. We also tested the Joseph & Joseph one-piece garlic rocker that eliminates moving parts but it can trap garlic in its mincing holes as you rock it over the cloves.

Zyliss mandolinYou can pay $100 or

more for a mandolin but the slicers in our tests ranged in price from $18 to $25. In our tests slicing tomatoes, onions, cucumbers and zucchini, we preferred the Zyliss, $20. We found the Zyliss easy to use and clean and it produced slices of a consistent size. To protect your fingers from the blade, it has a retractable blade guard and a safety lock. And the Zyliss is dishwasher safe.

Graters for cheese and moreOxo Good Grips also makes an $18 box grater that

our testers found convenient. It has multiple grating surfaces, a soft grip, nonslip base, and an optional storage container with measurement markings. Box graters offer the best combination of stability and grating options but can be bulky. Consider adding a smaller, handheld rotary grater for tableside grating of hard cheese. Models with a sealed cap let you store cheese inside.

3 medium-sizefresh beets3 Ruby Redgrapefruit1/4 cup olive oil2 Tbsp. maple syrup2 Tbsp. white wine vinegar1 tsp. kosher salt1/4 tsp. freshly ground black pepper6 cups loosely packed arugula1/4 cup coarsely chopped pistachios

1. Preheat oven to 350°. Trim beet stems to 1 inch; gently wash beets, and place in an 8-inch square pan. Add 1/4 cup water, and cover with aluminum foil. Bake 1 hour and 10 minutes or until tender. Uncover and cool completely (about 30 minutes).

2. Cut a 1/4-inch-thick slice from each end of grapefruit using a sharp, thin-bladed knife. Place, flat ends down, on a cutting board, and remove peel in strips, cutting from top to bottom following the curvature of fruit. Remove any remaining bitter white pith. Holding peeled grapefruit over a bowl, slice between membranes, and gently remove whole segments. Reserve 1/4 cup juice.

3. Whisk together olive oil, next 4 ingredients, and reserved 1/4 cup grapefruit juice in a bowl.

4. Peel beets, and slice into wedges. Arrange arugula on a large platter; top with grapefruit and beets. Drizzle with vinaigrette; sprinkle with pistachios. Add salt and pepper to taste.

Makes 8 to 10 servings. Hands-on 30 min.; Total 2 hours, 10 min.

Treat your guests with these dishes from Foster’s MarketSay’s Coconut Cake withSeven-Minute Frostingby Leigh EdwardsNothing finishes a meal quite so regally as layer cake; for Southerners, at least, it is the epitome of fine entertaining. This towering confection, draped in glossy white frosting and scattered with coconut, was one of my mother’s signature dinner party desserts. You can make the cake layers two days in advance, but make the frosting no more than two or three hours before serving; it doesn’t keep its silky-smooth texture very long.

MAKES ONE 8- OR 9-INCH 3-LAYER CAKE / SERVES 10 TO 12

CAKE1 1⁄2 cups canola oil3 cups sugar6 large eggs2 teaspoons pure vanilla extract3 3⁄4 cups all-purpose flour1 tablespoon baking powder1⁄2 teaspoon kosher salt1 1⁄2 cups milk

CAKE | Preheat the oven to 350°F. Lightly grease and flour three 8- or 9-inch cake pans. Have all the ingredients at room temperature before you begin.

Place the canola oil in a large bowl and beat with an electric mixer on high speed; add the sugar and beat until light and fluffy. Add the eggs one at a time, beating well and scraping down the sides of the bowl after each addition. Add the vanilla and stir to combine.

Combine the flour, baking powder, and salt in a separate bowl and stir to mix.

Add the flour mixture to the oil mixture in thirds, alternating with the milk and beginning and ending with the flour mixture, stopping to scrape down the bowl several times and stirring just until all is incorporated. Do not overmix.

Divide the batter evenly between the prepared pans, filling each about halfway, and bake for 30 to 35 minutes, or until the cakes are springy to the touch and a wooden skewer inserted in the center comes out clean.

Remove the cakes from the oven and let cool in the pans for about 15 minutes. Run a small knife around the edges of the pans before turning the cakes out onto baking racks to cool completely before frosting.

FROSTING | Do not start the frosting until the cakes are completely cooled. Place the sugar, egg whites, corn syrup, water, salt, and cream of tartar in a double boiler set over simmering water over low heat and beat with a handheld electric mixer on low speed for about 1 minute, until the mixture is frothy.

Increase the speed to high and beat for 5 to 7 minutes more, until the mixture becomes glossy, triples in volume, and forms soft peaks.

Remove from the heat, add the vanilla, and continue to beat for about 2 minutes longer, until the mixture becomes thick.

ASSEMBLY | Once the cakes have cooled completely, use a long serrated knife to slice off the rounded top portion of each cake to make a flat, even surface. Discard the trimmings.

Place one layer, cut side down, on a large plate or cake stand. Spread evenly with a quarter of the frosting and sprinkle with about 1 cup of the coconut. Repeat with the second and third layers. Spread the top and sides of the cake with the remaining frosting and sprinkle with the remaining coconut. Slice and serve.

Provencal-Style Beef and Bean Soupby SaraThis is a hearty, chunky soup

that’s perfect for using leftover cooked beef or steak. Sun dried tomatoes, garlic, rosemary and basil give this soup a South of France flavor. It freezes beautifully, too. It’s also great served with Crostini.

Makes 2 1/2 to 3 Quarts Soup;Serves 6 to 8

1 1/2 cups dried navy beans, picked over and rinsed1 tablespoon unsalted butter2 tablespoons olive oil1 red onion, cut in halflengthwise and thinly sliced2 ribs celery, sliced 1/8 inch thick1 head garlic, roasted and peeled2 pounds chuck roast, cut into 1-inch cubes6 plums tomatoes, cored and chopped8 cups beef broth3 bay leaves2 teaspoons salt1 teaspoon freshly ground black pepper1/2 cup sun dried tomatoes3 tablespoons chopped fresh rosemary or1 tablespoon dried rosemary6 fresh basil leaves, cut into very tin strips (chiffonade)

1. Quick-cook the beans; Place the beans in a large pot with water to cover by 3 inches and bring to a boil. Reduce heat and simmer uncovered 45 minutes. Remove from the heat, drain, rinse, and set aside.

2. Heat the butter and olive oil in a large, heavy saucepan over low heat. Add the onions and cook and stir 15 minutes or until light brown. Add the celery and cook and stir 10 minutes longer.

3. Add the garlic and the beef and cook and stir until the beef is brown on all sides, 8 to 10 minutes. Add the tomatoes, broth, bay leaves, salt, pepper, and beans and simmer 1 1/2 to 1 3/4 hours, uncovered, until the beans are soft and the beef is fork-tender.

4. Add the sun-dried tomatoes and rosemary and simmer about 10 minutes longer. Discard the bay leaves. Add the fresh basil and serve immediately.

Note: Cooked, leftover roast beef can be used instead of the chuck roast; add it during the final 30 to 40 minutes of cooking.

If you’re heading to the mall for some holiday shopping, consider buying a few extra gifts! The Salvation Army provides children and families with Christmas gifts every year that they would not receive without donations from students and residents in the Durham community.

The Angel Tree program pairs over 1,100 children ages 0 to 12 with individuals who donate gifts every year. You will be assigned to one child, learn his or her name, age, gender, clothing sizes and “wish gifts,” so you can shop specifically for that child.

The Adopt-A-Family program is similar, but instead of adopting one child, you adopt an entire family to purchase gifts for. Price limit is $125.

All gift donations must be dropped off by December 12th at the Salvation Army location on Liberty Street. Call Debbie Avolin to get involved.

It is for this reason that each year, Meals on Wheels of Durham strives to provide each meal recipient with a holiday gift. They have been able to touch each client in this small but very meaningful way for the past three years only with the help of compassionate community members. They ask that you consider a donation of an inexpensive (under $20) item that can be given as a gift to a needy Durham senior.
