• Organized and managed a group in a capstone course integrating knowledge that I acquired in my Food Science courses for new food products. With knowledge learned from key speakers around the world, my team developed a sweet potato based granola bar. The project focused on taking our product from a conceptual standpoint to the commercial market. The project entitled a multidisciplinary approach based around research and development including product formulation, ingredient interactions, sensory analysis, packaging, labeling, food safety and food law.
