Perfect for those who want to find their feet in the kitchen, or for cooks who have a solid understanding of basic cooking techniques but want to further their skills and add new exciting recipes to their repertoire. With all new recipes covered in every class, students will build an extensive & varied library of recipes. Tuesday 16th Niall Murphy Indian Spice Trail 7pm – 9.30pm 75 To celebrate the launch of D|F's new range of Indian food, join us for a fantastic evening creating fabulous side dishes to complement this new range of food. Thursday 18th Tony Keogh Modern Vegetarian 7pm – 9.30pm 60 Vegetarian food has come a long way in the last 20 years. Apart from the odd country hotel, stodgy nut-loaves and over cooked greens have been largely consigned to the past. Modern vegetarian cuisine takes full advantage of the versatility of ingredients available to create simple yet elegant food. At this workshop, Tony Keogh, head chef from Cornucopia, will show you how to host the perfect vegetarian dinner party. He will lead you through the planning, the preparation and the execution of a fool-proof, modern 3 course vegetarian meal accompanied by a selection of sides Saturday 20th Niall Murphy The Art of Breadmaking 10am – 2pm 90 Learn the techniques to produce simple tasty fresh bread at home. In this practical, hands-on course we will introduce you to a range of both traditional Irish and international breadmaking techniques. You will also have the opportunity to produce your very own bread in our demonstration kitchen to ensure you are fully equipped when you return home. Wednesday 24th Niall Murphy Cooking by Numbers 7pm – 9.30pm 75 Ever wondered how to cook the perfect chicken, meat or fish? In this hands-on class you will learn how to judge the exact time to perfection, every time, to ensure that you get the most succulent dish possible. Thursday 25th Niall Murphy Tapas and the Wines of Spain 7pm – 9.30pm 60 & Laura Peterson Join us for a fabulous and highly entertaining evening, recreating those balmy evenings in Spain. Our wine expert Laura Peterson will match fabulous regional wines with gorgeous bite size treats that will clear the gloomy winter skies. With this in mind, Tony Keogh, head chef from Cornucopia, will demonstrate how it is possible to create a sumptuous 3 course meal and a selection of sides that are free from wheat, gluten, egg, dairy and refined sugar. If you want to broaden your culinary repertoire then this work-shop is for you! Saturday 18th Niall Murphy Asian Odyssey 10am – 2pm 90 Join us for a wonderful evening of Asian cuisine as we tour through Asia without even having to leave the Cookery School!
