TERROIR At Quinta de Covela we practice organic farming on the granitic soils that form a natural, South-facing amphitheatre of low-lying terraces overlooking the right bank of the Douro river. Covela lies in the south easternmost corner of the Vinhos Verdes demarcated region, on the borderline between the continental climate of inland Portugal and the maritime influences of the Atlantic coast to the West. TASTING NOTES Colour: Bright, silver-straw colour. Nose: Dominated by light florality, with notes of ripe lemon and minerality typical of Covela’s granitic soils. Palate: Dry, yet rich and well-balanced with notes of stone fruit, particularly White peach and apricot, Vibrant and elegant acidity. Long finish. VINIFICATION Manual harvesting. Harvest organized by vineyard plots to ensure harvesting at the right time. Transport in small boxes to avoid crushing. Spontaneous fermentation in stainless steel vats and fining with bentonite when necessary. No use of enzymes. Aged on fine lees until mid-January, with batonnage. Light filtration. AT TABLE Enjoy at a temperature between 8°C and 10°C. Ideal with grilled fish and seafood. With its youthful zest, this wine goes well with various hors d'oeuvre or can be enjoyed without food, though never without the good company of family or friends.
