JUNE 2015 | VOLUME 10 | ISSUE 6 Hola! We traveled south to Santiago, Chile, to produce June’s Wine of the Month – a Chilean Cabernet Sauvignon. During our trip, we explored the country’s Valle Central region, the long valley spanning from the Andes Mountains to the Pacific Coastal Ranges. The winery we partnered with to produce this wine sourced the grapes from the Valle Central’s Maipo Province – one of the six viticultural districts in the Santiago region. The Maipo region is one of the smaller provinces in the area, spanning 433 square miles. What it lacks in size, it makes up in legacy – as it’s known for producing the highest quality Cabernet Sauvignon grapes in the country. The famed province is the birthplace of the Chilean wine industry, with a grape-growing history dating back over 150 years. This wine is an exquisite ruby red color with a slight purple tint at the rim. Robust aromas of cherry, blackberry, plum, brown spices, and a hint of fresh olive lead to a rich and well-balanced palate. The sip ends with a long, fruity finish accompanied by flavors of cherry, raspberry, prune, and cocoa. This wine pairs exceptionally well with outdoor grilling favorites, such as Cooper’s Hawk Churrasco Grilled Steak or Filet Mignon. It also pairs with a wide range of hard cheeses. ¡Salud! Cabernet Sauvignon is Chile’s star grape, the “king” of all reds – comprising 26% of all grapes grown in Chile. This late-ripening grape prospers in the warm and dry climate, allowing the fruit to thoroughly ripen and develop a rich, ripe bouquet and firm backbone. This wine is an exquisite ruby red color with a slight purple tint at the rim. Robust aromas of cherry, blackberry, plum, brown spices, and a hint of fresh olive lead to a rich and well-balanced palate. The sip ends with a long, fruity finish accompanied by flavors of cherry, raspberry, prune, and cocoa. This wine pairs exceptionally well with outdoor grilling favorites, such as Cooper’s Hawk Churrasco Grilled Steak or Filet Mignon. It also pairs with a wide range of hard cheeses. ¡Salud!

RECIPE OF THE MONTHAncho Peach Salsa Crema

Ingredients:

¹/3 cup Cooper’s Hawk Peach Salsa

1 cup Mexican Crema or regular sour cream

2 tsp fresh lime juice

1 tsp Ancho Chile Pepper

¼ tsp salt

¼ tsp freshly ground black pepper

1 Tbsp chopped cilantro

Procedure:

Whisk together all ingredients except for cilantro and chill at least 60 minutes until ready to serve. Garnish with chopped cilantro.

Use our Ancho Peach Salsa Crema as a dip for tortilla chips, pita chips, or vegetable sticks. It’s also a wonderful accompaniment to grilled steaks!

He’s back! We’re thrilled to partner with Bravo’s Top Chef fan favorite Fabio Viviani for our Friends of Cooper’s Hawk series this fall. The exuberant Italian-

born chef owns several acclaimed restaurants throughout the country, including the new Prime & Provisions (Chicago), Siena Tavern (Chicago), Café Firenze (LA), and Mercato (Chicago & San Diego). Much like our own Founder & CEO Tim McEnery, Fabio has worked in the hospitality industry since he was a boy growing up in Florence. We’ve hosted a number of events and wine collaborations with Fabio throughout the years and are so excited to have him visiting our ‘Sunshine state’ locations this fall!

The event will include an interactive cooking demonstration, 4-course dinner with wine pairings, and a special meet-and-greet with Fabio and our founder, Tim McEnery. Additionally, each guest will receive a signed copy of Fabio’s American Home Kitchen.

Price is $100 per person. Maximum 4 tickets per person. Tickets will be on sale starting July 8th at 10 a.m. CDT. Call 888-685-0056 to reserve.

SEASON’S BLOOM

This month’s cheese collection features an assortment of seasonally sourced ingredients such as summer produce, peppercorns, and raspberry ale.

Stilton White with Apricot (pairs with Cooper’s Hawk Riesling)An English cow’s-milk cheese, this variety combines a classic, creamy, and crumbly white Stilton with dried apricots to create a vibrant yet balanced flavor.

French Morbier (pairs with Cooper’s Hawk Pinot Noir)This semisoft ivory cow’s-milk cheese is named after the quaint area of Morbier Village in France. The aroma is robust with rich, creamy flavors and a bitter aftertaste.

Sartori BellaVitano Raspberry (pairs with Cooper’s Hawk Sangiovese)Hailing from Wisconsin, this nutty, creamy cheese was soaked in New Glarus’s Raspberry Tart ale. The fruity notes fused with hazelnut and brown butter impart a decadently complex finish.

Tillamook Smoked Black Pepper White Cheddar (pairs with Cooper’s Hawk Riesling)This hickory-smoked cow’s-milk cheese packs a serious pepper punch. The creamy white cheddar is studded with spicy cracked black peppercorns, imparting a smooth yet fiery finish.

Point Reyes Blue Wedge (pairs with Cooper’s Hawk Ice Wine) Derived from the coastal estate of Point Reyes Farmstead in California, this classic-style bleu cheese is creamy and tangy with a medium punch of bleu flavor and a perfect balance of salt.

This month’s cheese assortment is paired with Cooper’s Hawk Pineapple Jalapeño Jelly, a sweet yet zesty combination of peak-of-season pineapples and fiery peppers. Available in our Tasting Room.

Save t he Dates!Question: Cooper’s Hawk has over 30 varietals of wine. Do you have a #1 favorite?

Answer: My typical answer for this question is “Yes, all of them.” Since I am addressing the whole Wine Club, it is only fair that I elaborate a bit. Every wine has what I refer to as a “sweet spot.” This is the stage in a wine’s aging where everything comes together. With red wines, this sweet spot typically starts around three to six months after bottling and lasts for a couple of years. This is when I enjoy wine the most, and when it is my “favorite.” Our red wines tend to display both youthful and some aged characteristics throughout this roughly two-year period. With most of our white wines, this period starts closer to one month after bottling, and lasts around eighteen months. Everybody has different taste in wine, so what is my sweet spot may not be yours. Statistically speaking, this makes the vast majority of our wines my favorite. I encourage you to experiment with aging wines to find out what your wine sweet spot is.
