Winter WonderlandThe Pitt Meadows Arena Complex (PMAC) will be transforming the Maple Ridge Chrysler Rink into a Winter Wonderland on ice. Enjoy the lights, trees and Christmas magic. Kids can skate, push carts on the ice and parents can pull kids in sleds. There will be a hot chocolate stand and lots of fun during the holiday season. Buggies/stroll-ers are welcome. Please clean off the wheels.

Bob’s “Big Boys”pork loin• Hy’s seasoning salt• 1 can pineapple slices• barbeque sauce of choice•
Cut pork loin into 1 3/4 inch chops and season with seasoning salt. Refrigerate for 1 hour. Remove from fridge and place in large bowl. Add pineapple slices, including the juice. Refrigerate for at least 1 more hour.
Remove from fridge, coat with barbeque sauce and place on hot barbeque. Sear and fl ip to sear the other side. Turn heat to low and baste with
pineapple juice, browning both sides until done. Inside will stay moist and is done as soon as it turns a white colour. Put pineapple ring on each pork chop the last 5 minutes of broiling with juice in the circle. Brown to taste.

Prepare the day before and pop in the oven in the morning. Serves 8.
16 slices of bread (crust • removed)thinly sliced ham• sliced or grated sharp cheddar • cheese6 eggs• 1/2 tsp salt• 1/2 tsp pepper• 1/2 tsp dry mustard• 1/4 cup minced onion• 1/4 cup green pepper - fi nely • chopped1 tsp worcestershire sauce•
3 cups whole milk• dash of tabasco• 1/4 lb butter or margarine• crushed corn fl akes•
In a 9 x 13 glass, buttered baking dish, put 8 slices of bread. Add pieces to cover dish completely. Cover bread with slices of ham. Lay cheese overtop of ham and cover with the last 8 slices of bread.
In a bowl beat eggs, salt and pepper. Add dry mustard, onion, green pepper, worchestershire sauce, milk and tabasco.
Pour over the bread, cover and let stand overnight. In the morning melt the butter, pour over top. Cover with crushed corn fl akes. Bake uncovered for 1 hour at 350F. Let sit 10 minutes before serving.

LazyMan’s Cabbage Roll Casserole2 lbs ground beef• 1 head cabbage• 1 lg tin tomato sauce• 2 cups cooked rice•
Fully cook ground beef. Cook cabbage until tender (you can cut it up and microwave it). Cook rice. In large oven proof pot add meat, cabbage and rice. Mix in tomato sauce. Cook uncovered at 350F for 1 1/2 hours. It should look browned on top when fully cooked.
Turkey Pot PieA great way to use leftovers.
frozen puff pastry dough to cover • 3 qt casserole
1/2 cup butter or margarine• 1/2 cup fl our• 1 tsp salt• pepper to taste• 2 tbsps onion - fi nely chopped• 3 cups chicken broth• 1/2 lb mushrooms - sliced• 1 tbsp butter or margarine• 3 cups turkey - cooked & diced• 3 carrots• 2 stalks celery - fi nely chopped• 2 potatoes - cubed•
In a small frying pan, cook the mushrooms in 1 tbsp butter and set aside. Melt 1/2 cup butter in a saucepan over medium heat. Blend in fl our, salt, pepper and onion. Gradually whisk in chicken broth. Cook, stirring constantly until smooth and thick. Add mushrooms, turkey, carrots, celery and potatoes to sauce. Mix well and pour into large casserole. (At this point you can cool it and refrigerate to bake the next day.) Cover the mixture with pastry and slash to allow steam to escape. Bake in a preheated 400F oven for approximately 30 minutes or until pastry is golden and turkey mixture bubbly.

Cucumber and Smoked Salmon RoundsThin rounds of cucumber• Canadian Camembert• smoked salmon slices• dill• lemon• pink peppercorns•
Top thin rounds of cucumber with a slice of smoked salmon and a wedge of Canadian Camembert. Sprinkle with dill, lemon zest and pink peppercorns, to taste.
Serve immediately, or refrigerate but remove a few minutes before serving to bring cheese to room temperature.
Alternatively use Canadian Brie or cream cheese.
Artichoke Dip1 pkg (250g) cream cheese – softened• 1 can (14 fl .oz.) artichoke hearts - drained and • chopped2 tbsp butter - melted• 1 clove garlic - minced• 1/4 cup 100% grated parmesan cheese• paprika•
Spread cream cheese onto bottom of microwaveable 9 inch pie plate. Mix artichokes, butter and garlic. Spoon evenly over cream cheese. Sprinkle with parmesan cheese. Microwave on high for 1 minuted or until heated through. Sprinkle with paprika before serving.
Chex Party Mix6 tbsp butter• 2 tbsp worcestershire sauce• 1 1/2 tsp seasoning salt• 3/4 tsp garlic powder• 1/2 tsp onion powder• 3 cups Corn Chex cereal• 3 cups Rice Chex cereal• 3 cups Wheat Chex cereal• 1 cup mixed nuts• 1 cup pretzels• 1 cup broken bagel chips•
Preheat over to 250F. Melt butter in large roaster, stir in seasoning salt, garlic powder, and onion powder. Add remaining ingredients and evenly coat. Bake one hour stirring every 15 minutes. Spread on paper towels to cool. Store in airtight container.
Glazed Carrots6 - 8 medium sized carrots• 2 tbsp butter• 1/2 cup packed brown sugar• 2 tbsp cold water• 1 1/2 tsp cornstarch•
Cut carrots into 1/2 inch slices. Place in 1 quart dish with butter and brown sugar. Cover and microwave on high 9 - 11 minutes. Stir after 5 minutes. Stir together water and cornstarch until smooth and stir into carrots. Cover and microwave on high 2 - 4 minutes until thickened.

Sausage Stuffi ng1 lb (500g) frozen pork sausage meat - thawed• 1 1/2 cups hot water• 2 pkg (120g each) Stuffi ng Mix for Turkey•
Brown sausage in large skillet on medium heat. Drain, reserving 1/2 cup of the drippings. Place reserved drippings in large bowl. Stir in hot water. Add stuffi ng mix and cooked sausage. Stir just until moistened. Refrigerate until ready to stuff turkey.
Holiday Shrimp DipMike and Nancy say this is a quick and easy recipe that’s always a hit!
1 8oz pkg regular Philadelphia Cream Cheese• 3 tbsp Miracle Whip• 1 tbsp Heinz Chili Sauce• Dash of salt• Dash of onion powder• Dash of garlic powder• Dash of pepper• Dash of paprika• 200 grams of fresh peeled shrimp•
Cream all ingredients together, except the shrimp. Add shrimp and serve with crackers, celery or anything edible you can use as a spoon.

2lbs Philadelphia cream cheese• 1 ½oz all-purpose fl our• 13oz sugar• 1lemon - juiced and zest• 14oz sour cream• 5oz milk• 300ml egg• 4oz graham cracker crumbs• 2oz sugar• 2oz melted butter•
For the crust, combine graham crumbs, sugar and butter and press into a 9-inch ring mold lined with parchment paper. Soften cream cheese and mix with sugar at low speed. When smooth add sour cream, lemon zest, juice, milk and eggs.Whisk in sifted fl our by hand.
Pour into mold and bake at 310F for 45 minutes with moisture in the oven (i.e. water in an oven proof container).Open door and let it cool in the oven for 1 hour before serving.

1/2 cup butter• 1/2 cup peanut butter• 1/2 cup brown sugar• 1 egg• 3/4 cup whole wheat fl our• 1/2 tsp baking soda• 1/2 cup oatmeal•
1 cup chocolate chips• 1/2 cup peanuts•
Cream together butter, peanut butter, brown sugar and egg. In a separate bowl mix together fl our, oatmeal, baking soda, chocolate chips and peanuts. Add dry ingredients mix to the creamed mixture. Drop by tablespoon onto ungreased cookie sheet. Bake at 350F for 10 to 12 minutes.

Light Fruit CakeHilda hopes you will try this recipe. She says it’s good and even kids like it.
2 2/3 cups fl our• 1 tsp salt• 1 tsp baking powder• 3 cups shredded coconut• 1 1/2 cups candied cherries – halved• 1 1/2 cups white raisins• 1 1/2 cups blanched almonds – slivered• 2 cups sugar• 1 cup butter• 4 eggs• 1 tsp almond extract• 1 cup pineapple juice•
Line a 9 or 10” tube pan with 2 thickness of buttered paper. Measure fl our without sifting into a large bowl. Add salt and baking powder, stir well to blend. Add coconut, fruit and nuts. Mix until fruit
is separated and coated with fl our. Cream sugar, butter, eggs and almond extract thoroughly. Stir in the fruit and fl our mixture alternately with pineapple mixture. Spread batter evenly in prepared pan. Bake at 275F for 3 to 3 1/2 hours. Keep pan of hot water in bottom of oven while baking. Leave in pan until cool. Remove paper liner and wrap in foil.

Peppermint Bark 6oz white chocolate• 1 cup chopped candy canes•
Microwave chocolate until melted. Pour onto wax paper covered cookie sheet. Sprinkle chopped candy canes overall. Refrigerate approximately one hour. Break into pieces. Store in fridge.
Cheesecake Cupcakes2 8oz packages cream • cheese - softened1/2 cup granulated sugar• 1 tbsp vanilla extract• 2 large eggs• 12 vanilla wafer cookies• Topping of your choice - • cherry, blueberry or pineapple pie fi lling
Preheat oven to 350F. Cover a cupcake pan with foil or paper cupcake liners. Blend the cream cheese, sugar, eggs and vanilla together with an electric mixer until smooth. Place one vanilla wafer in each cupcake liner to form the crust of the cheesecake. Spoon cheesecake batter into each
cupcake, leaving room for the cupcake to rise while baking.
Place pan in oven and bake for approximately 15 minutes or until the tops of the cheesecakes are lightly golden. Remove pan and let cool on a wire rack. Top each cheesecake with topping of choice and let chill in the refrigerator until time to serve.

Pepernoten (Dutch Christmas Cookies)4 eggs• 2 cups brown sugar• 4 cups fl our• 1 tbsp ground cloves• 1 tbsp nutmeg• 1 tbsp cinnamon• 1/2 tbsp baking soda•
Beat eggs in a mixer. Add brown sugar and beat. Sift the spices with the fl our. Mix dry ingredients together with wet ingredients using a mixer. Refrigerate dough for 1 hour. Roll out dough to 1/2 inch thickness and cut with small round cutter. Let stand on an oiled cookie sheet overnight to ripen. Bake 10 minutes at 325F. If desired, frost cookies with powdered sugar frosting when cool.

Magic French FudgeOne of Deb’s favourite recipes. It’s quick and easy during the busy holiday season. It makes a wonderful hostess gift when visiting family and friends.
3 cups (one 500g package) semi-sweet chocolate • chips1 can Eagle Brand sweetened condensed milk• dash of salt• 1 1/2 tsp vanilla extract• 1/2 cup chopped nuts (optional)•
In top of double boiler (or heavy bottom pot on low heat) melt chocolate chips, stirring often. Remove from heat. Stir in condensed milk, salt, vanilla and nuts. Spread mixture evenly into waxed paper lined 8x8 baking pan. Chill for 2 hours or until fi rm. Turn fudge onto cutting board, peel off paper and cut into squares. Tightly cover any leftovers.

1/2 cup unsalted butter• 1 cup graham cracker crumbs• 1 cup semisweet chocolate chips• 1 cup butterscotch chips• 1 cup coconut• 1 can (15oz) sweetened condensed milk•
Melt the butter, mix in graham cracker crumbs. Pat crumb mixture into a 9x13 baking pan. Sprinkle the remaining ingredients over the crumbs in order listed, in layers. Drizzle the sweetened condensed milk over all. Do NOT stir. Bake at 350F for 25 minutes. Cool and cut into bars.

Grandma Boultbee’s Munch BarsWith such a fun name, you have to give them a try!
1/4 cup butter• 4 cups mini marshmallows• pinch of salt• 1 cup rolled oats• 1 cup unsweetened coconut• 1 cup chopped nuts• 1 1/2 cups Rice Krispies• You can substitute candied peel • or dried fruit for some of the dry ingredients.
Melt together butter, marshmallows and salt. Stir in oats, coconut, nuts and Rice Krispies. Press into a 9x12 greased pan. It helps to grease your hands too. Refrigerate to harden. Cut into squares.

Santa HatsThese crispy confections are brimming with kid appeal.
2 egg whites, at room • temperature1/2 tsp cream of tartar• 1/4 tsp vanilla extract• 1/2 cup sugar• red coloured sugar•
Heat oven to 200F. With an electric mixer, beat egg whites until soft peaks start to form. Beating all the while, add the cream of tartar and vanilla extract, then slowly add the 1/2 cup of sugar. Continue to beat until the peaks stiffen.
Spoon the meringue into a quart-size plastic bag. Snip off a corner and pipe 2 dozen 1 1/2 inch-tall Santa hat triangles onto a parchment-lined baking sheet. You should have about 1/4 of the meringue left.
Sprinkle the triangles with the red sugar, then use the remaining meringue to give each one a pom-pom and trim. Bake the hats until they’re hard but not browned, about 1 hour and 20 minutes. Turn off the oven and leave the hats in it for an hour to crisp before removing.

20 frozen dough buns• 1 cup brown sugar• 1/4 cup vanilla instant pudding powder• 1/4 - 1/2 cup melted butter• cinnamon•
Put dough buns in bundt pan and sprinkle brown sugar and pudding powder on top. Top with melted butter and sprinkle on cinnamon. Cover with damp cloth and let sit at room temperature overnight. Remove towel and bake for 20 - 30 minutes at 325F.
Land of Nod Cinnamon Buns
1 egg• 1/2 cup butter• 5 tbsp cocoa• 1 cup coconut• 1/2 cup chopped walnuts• 5 tbsp white sugar• 2 cups graham wafer crumbs•
Place softened butter, sugar, cocoa, vanilla and egg in a bowl. Set bowl in a pan of boiling water or double boiler. Stir mixture until butter has
melted and is the consistency of custard. Mix wafer crumbs, coconut and nuts together. Add to the cocoa mixture. Pack into a greased 9” square pan and spread with the following icing.
4 tbsp butter• 2 tbsp milk• 2 tbsp vanilla custard powder• 2 cups sifted icing sugar• 2 squares semi-sweet • chocolate1 tsp butter•
Cream 4 tbsp butter. Combine milk with vanilla custard powder. Add to butter. Mix in sifted icing sugar. Spread over chocolate base and allow to harden. Cover with melted semi-sweet chocolate mixed with 1 tsp butter. Spread evenly. Refrigerate.

Butter 9x13 pan and butter or grease a mixing spoon. Melt butter, butterscotch chips, and peanut butter together in a microwave or double boiler. Add coconut and marshmallows. Stir together. Refrigerate and cut into squares.

500 g self raising fl our• 375 g hard butter• 350 g soft light brown sugar• approximately 1 tbsp “speculaas” spices available • in dutch deli (mixture of 1 part cinnamon, 1/2 part nutmeg, 1/4 part powdered cloves)1/2 tsp lemon peel• salt•
FILLING500 g almond paste• 2 egg yolks• 1 egg white• 1/2 tsp lemon peel•
GARNISHhalf and half cream• whole almonds•
In a food processor knead self raising fl our, diced butter, soft sugar, spices, lemon peel and salt to taste into a soft dough. Knead shortly with a cool hand. Wrap dough in cling wrap and let rest in the fridge for 30 minutes. Mix almond paste, egg yolks and lemon peel with a fork. Beat egg white lightly. Butter 24 cm diameter springform pan and preheat oven to 325F. Divide dough into two equal portions and roll out one portion to fi t bottom and sides of the springform (or press out in the tin). Spread out almond paste mix over the bottom. Roll out the second portion of dough, brush the sides with egg white and place the dough over the almond paste layer. Brush the top with cream and decorate with almonds. Bake in the centre of the oven for approximately 30 minutes, until golden.

Gingerbread5 cups fl our• 1 tsp baking soda• 1 tsp salt• 1 cup cloves• 1 cup shortening• 2 tsp ginger• 1 tsp cinnamon• 2/3 cup molasses• 2/3 cup hot coffee•
Mix shortening, coffee and molasses until creamy. Sift dry ingredients together in separate bowl and gradually mix into wet ingredients. Knead and roll out until desired thickness. Cut into shapes needed and bake 17 minutes at 350F until dough is fi rm.
Icingperfect for gingerbread 2 egg whites• 2 1/2 cups icing sugar• 1/4 tsp cream of tartar• 1/4 tsp vanilla•
Beat egg whites to soft peaks. Add in remaining ingredients and mix until smooth.

Melt chocolate and butterscotch chips in a double boiler. Stir in walnuts, chow mein noodles and coconut. Drop in clusters on to a cookie sheet covered in wax paper. Chill in refrigerator until fi rm. Store in an airtight container in a cool place. Enjoy.

Heat oven to 350F. Mix butter, sugars, vanilla and eggs in a large bowl until light and creamy. In a separate bowl mix together fl our, baking soda and salt, then stir into creamed mixture. Stir in chocolate chips. Drop by rounded tablespoons, about 2 inches apart onto ungreased baking sheets. Bake 12 to 15 minutes until light brown. Makes about 60 cookies.
