    Domaine Aigues-Belles

    Domaine Aigues Belles was created in 1870. Just before 2000,Gilles Palatan decided, with the help of his 2 nephews Patriceand Thierry Lombard, to vinify his grapes instead of sellingthem to the local coop as this family-run domain has beenbeen doing since the years following the war. Vintage aftervintage, Gilles has been ceaselessly improving the quality of hiswines. Although part of his vines are classed as AOC, thistalented wine producer has deliberately chosen the Pays d’OcIGP denomination to benefit from greater freedom andproduce the wines he loves. In explaining the success of hiswines Gilles always put forward team work ethic and the totaldedication of each team member to his tasks. Gilles knows likeno other producer in Southern France how to use new oak andage wine. His wines all have a strong aromatic personality,freshness and great balance.

    Domaine de Cebene

    Leaving her native Bordeaux and the employ of Jean-LucThunevin, Brigitte Chevalier acquired a group of vineyards in aremote part of Faugères centered around a ziggurat-shapedhill at an elevation of 320m above sea level. This locationaffords a range of exposures from north-facing, to fullsouthern exposure. Underneath these sites is the classic soil ofFaugères – schist. Soil, exposure and climate, combine to allowBrigitte to makes wines that suit her palate, what she calls,“Vin du Nord in the South.”Brigitte is meticulous in her farmingand winemaking. Her vineyards are certified organic andeverything is harvested by hand and transported in small bins.Brigitte prefers native yeast, and whole cluster fermentationsas well as aging in tank. All wines are balanced, rich and soft,with abundant fruit and spiciness, complex structures, finetannins and hints that they will continue to evolve over anumber of years. In choosing a name for her Domaine, Brigittetook as inspiration an ancient goddess of the celtic tribes ofthe region, Cébenna, mentioned by Julius Cesar in the firstcentury BC.

    Clos du Serres

    Sébastien Fillon was born in the Loire and firstworked as an engineer. At 30, he switched careersand became a winemaker. In 2006, Sébastien andhis wife Béatrice bought Domaine le Clos duSerres in the relatively new Terrasses du Larzacappellation. ‘Serres’ translates as ‘hills’ in Occitandialect. “There’s everything one needs to makegreat wine: diverse and arid soil, deep water and avery special climate where the sun is tempered bythe proximity to the limestone Larzac plateauwhich brings in cool air during the summernights.“ This large shift in temperature betweenday and night helps the grapes mature slowly,increasing complexity and maintaining acidity.Clos du Serres produces terroir-driven wines withlovely fruit and freshness.

    Domaine Alain Chabanon

    After studies in agronomy Alain crossed paths with oneof France’s most talented wine producers, AlainBrumont, founder of the Château Montus at Madiran,allowing him to imbibe from his experience. At the endof the 1980s, Alain bought his first parcels of vines inthe terrasses du Larzac and produced his first cuvées in1992. The respect for the life in the soil is Alain’s firstpriority: The Domaine has been organic since 1992 andhas adopted biodynamic principles since 2007. Yieldsare kept low and the soils are ploughed. The work in thecellar is admirable too: long ageing in old oak barrels orin concrete eggs for its top cuvees. Alain aims toproduce exceptional wines that are subtle and elegant,with a true identity of their terroir,. Wines that wouldbecome even more complex after several years but thatare delicious young. Without a doubt this domaine isamong the top 10 in Languedoc-Roussillon.

    After a first career as a professor of computationalscience and four years at the French magazine "LaRevue du Vin de France" (RVF) where he workedas assistant chief editor, this wine aficionadorealised his dream in 2000 by settling down inPézenas after a training period in Beaune. He isnow in charge of a 7 hectare domaine in organicfarming. "Through the expression of our verydiversified soils, we look for the delicacy and thefreshness in our wines more than theconcentration and the power. The wine is made tobe drunk, we shall never say it enough... "

Over time I understoodsomething: if you don’t respect nature, you don’trespect yourself. So I stopped using chemicals andbegan to farm organically. It is so obvious now that theestate is in the middle of a protected natural area.Being organic allowed me to revitalize the soils, bringmore balance and vigor into the wines, and helped melive in harmony with this land that welcomed me.I like to know that La Clape was an island long time ago.     Mas Champart

    Isabelle Champart and her husband Matthieuarrived in St. Chinian in 1976, from the north ofFrance. Their estate began as a run-down housesurrounded by 8 ha. They slowly developed theirvineyards, and until 1988 they sent their grapes tothe coop. Altogether they now have sixteenhectares. They bottle some of the most nuanced,pure, and delicious wines in the Languedoc. TheChamparts’ often steep chalk-clay hillsides thatfavor Mourvedre and their nearly 300m-highrocky plateau with its walled-in Syrah andCarignan conduce to blends of unusually elegantinterplay between fruit, animal, and mineralelements..

    Domaine Montrose is a family wine estatefounded in 1701 when the "Three Lizards"coat of arms was given to the ancestor ofOlivier Coste. The name Montrose refers toits geographic location on a volcano (Mont)and to the pink (Rose) flowers almond tresssurrounding the vineyard. Montrose islocated a few kilometers away from theMediterranean sea, on the great "Côtes deThongue" terroir. Montrose is activelyinvolved in preserving and enhancing itsterroir’s biodiversity.     Le Pas de l’Escalette is the historic trail linking theMediterranean plain to the high Larzac plateau.Sandwiched between the warming Mediterranean andthe cooling northern mountains, Larzac is blessed withan ideal mesoclimate for indigenous grapes Carignan,Grenache and Syrah. That makes for a longer, temperedripening season and grapes that retain their balanceand acidity. Julien Zernott and Delphine Rousseauacquired this estate in 2003. He was well established inthe Loire Valley as a consulting oenologist. Julien andDelphine farm old stone terrasses the right way. Theywork by hand, avoid chemicals in favour of plant-basedvine treatments. They farm in limestone-rich north-facing vineyards that permit the crafting of wines with adegree of freshness to complement theirMediterranean warmth. Equal to the rugged terrain anddramatic scenery, the wines of Pas de L’Escalette areelegant, rounded and well balanced. They displaywonderfully fresh and fragrant savoury aromatics.

    Plo Roucarels means small rocky plateau in occitan.It is run by two young and passionate wine makers,Julia Hubrich (from the former East Germany) andJulien Gil. This domain is located a few kilometersfrom the medieval citadel of Carcassonne, nearthe Pyrenees mountain range. The warmMediterranean climate is tempered by someAtlantic oceanic influence. It allows Julia andJulien to produce wines based on elegance andfinesse.

    Roc d’Anglade

    Rémy Pedreno is an intriguing guy; unusually forsomeone who is now so enthusiastic about wine, he didnot touch a drop for the first 22 years of his life. Hemade his very first wine in 1996 from some bunches ofCarignan, just enough for one barrel. And in 1999 hewent into partnership with René Rostaing from CôteRôtie who gave him carte blanche. In 2002 he made hisfirst wine from his own vines. His vineyards are organic,but not biodynamic; everything is handpicked; he usesnatural yeast and keeps the sulphur levels as low aspossible. And he enthused about Carignan; ‘it’s thePinot Noir of the Languedoc, a fabulous variety’. RemyPedreno is a combination of modesty and confidence,and displays commitment and dedication. He neveranalyses his grapes, only tastes them and he states veryfirmly that he makes wine according to his own taste.He is not looking for concentration in his wines, butsheer drinking pleasure. Wine is after all made to bedrunk and enjoyed.

    Domaine St Sylvestre

    Vincent Guizard became involved in viticulturefrom an early age, working in the vines with hisgrandfather and, in the late 1990's, he workedwith Olivier Jullien at Mas Jullien. From 2003 to2010, he was part owner of Domaine deMontcalmès. At the end of 2010, Vincent decidedto break away from Montcalmès, taking his 7hectares of vines and creating Domaine SaintSylvestre. His vineyard is scattered amongst thewild, oak-covered hills of the Terrasses du Larzacjust a few kilometres north-east of Aniane -historically one of the real hotbeds of Languedocfine winemaking. His wines are in such demandthat they are available only on allocation, to hisloyal band of customers. It is remarkable thatVincent has gained such a cult following in such ashort space of time.

    La Terrasse d’Elise

    Xavier Braujou started his life as a woodcutter.But his real passion was wine. He started LaTerrasse d’Elise in 1998. His vines and wines arecared for as naturally as possible, with minimumtreatments in the vineyards, and with no fining,natural yeasts and very little sulphur used in thewinemaking process. Xavier’s specialty is to blendterroirs from a same grape variety to best expressits character. Although 85% of Xavier’s land iswithin the Appellation, all his wines are labelled asVin de Pays because they are mono-varietal andthus do not comply with the local AOC.

    Domaine Zelige-Caravent

    Zelige = Moroccan ceramic tile like the vineyard forminga mosaic in the landscape.Caravent = Caravanserail - a roadside inn along thesilk/spice route.Luc and Marie Michel of Zélige-Caravent began in 1999with three hectare of vines in Corconne, a small villagein the Languedoc, at the foot of the Cèvennes. Zelige-Caravent is the realization of a dream as well as asecond career for its proprietors: Luc Michelreconnecting with his family’s roots; his wife Marie stillfinding time to work as a painter (and responsible forthe Domaine’s dramatically distinctive and diverselabels). Today the domaine comprises 15 hectare, madeup of 25 different plots, and offers a wide range ofdifferent grape varieties native to the Languedoc:Aramon, Alicante, Cinsault, Carignan on top of syrah,grenache and mourvedre. In the vineyard, all vines arepruned by hand, the rows are tilled by horse and alltreatments are organic. In the cellar, only indigenousyeasts are used, manual pressing and no treatmentsother than sulfur at a level lower or equal to 30mg/literat bottling. As Luc doesn’t use wood in his wines itallows the terroir to shine through unencumbered.

    Chateau Ventenac

    The vineyards of Château Ventenac lie in thefoothills of the 'Black Mountain', north ofCarcassonne. The climate here is an interestingmix of Mediterranean and Atlantic influences.Alain Maurel established his winery here in 1973,blending classic Bordeaux varieties with theirMediterranean cousins, Syrah and Grenache.     Clos del Rey

    Jacques Montagne started the Clos del Rey in 2001. Hisgrandparents were already making dry table wine fromthe family’s choice properties in Maury. His son Julien,who has worked for the Mas Amiel, joined him last year.The high-elevation vineyards southeast of the village,where much of their fruit grows, preserves freshnessand warded off dehydration in 2009, but in general it'sclear that old vines, exceptional sites, and meticulousvineyard work combine at this estate to minimizedisparity across vintages in ripening-curve or quality ingeneral. The Clos del Rey turns out fantastic wines thatare rich, powerful, concentrated yet are not overdone.The balance is always there.

    Domaine Danjou-Banessy

    Located at Espira, a few kilometres away fromRivesaltes, Domaine Danjou-Banessy is an old familyestate that was producing only fortified and dry ranciowines until Benoit took over from his father 10 yearsago. His brother, Sebastien, an English teacher, joinedthe domaine full time 5 years ago. They are nowproducing dry whites and reds from very old vines oflocal grapes such as their rare and original carignan gris.Their soil has always been free from any chemicals;their father and grandfather were bio before anyoneelse. They are as non-interventionist as possible in thecellar. Benoit and Sebastien are Catalans but friendswith many neo-vignerons that came from all over theworld to Roussillon to produce great wines. Traditionand open-mindedness could explain the quality of theirwines.

    Domaine des enfants sauvages

    After a busy life working and living in a big city, Nikolausand Carolin, both German, decided to start a new life inFrance. They bought in 2001 a domaine located 30 kmnorth of Perpignan, near Fitou. They started with thehelp of Olivier Pithon who lent them a part of his cellarfor their first vintage. The vineyards are on limestonesoil and are all grouped in two plots of land in the midstof natural wild "garrigue" vegetation. Their project is tofarm the land without damaging it; creating a balancebetween what is taken from the land and what is givento it; understanding and respecting the rules of theearth and the cosmos. “Wherever possible, we letnature take its course. The result is wine that reflects anessential harmony between humans and nature."

    Mas Mudigliza

    After a stint in Bordeaux, Dimitri Glipa moved in2005 to the vineyards of Roussillon, in the highlycoveted, rugged and dry area known asFenouillèdes. Like many talented winemakers inthe area, Mas Mudigliza produces wines from thebest terroirs with altitude and from old vines thatimpress with their intensity, mineral complexity,purity, freshness and generosity. The farming isorganic and Dimitri works the soil by hand. Hisyields are ridiculously low, but it is the only way togive his wines the level of concentration andcomplexity he seeks. Dimitri keeps his wines veryreasonably priced. As the RVF once wrote: “Dimitriis a great winemaker who produces wines thatnever disappoint.”

    Domaine Olivier Pithon

    Olivier Pithon has been involved with wine from a veryearly age. His Grandfather was a vine grower in Anjouand when Olivier was four, his big brother, the famed JoPithon, settled on the hillsides of Layon. After learninghis craft in Bordeaux where he was taught "thesensitivity to how wines can become pleasure, balanceand lightness", Olivier settled down in the village ofCalce, where he met with Gerard Gauby. Olivier's winesare inspired. They achieve a balance between characterand nature that has to be the envy of all winemakers. His goal is to make the wine as good as possibleby getting as much out of the soil as he can, whilstrespecting the environment and considering theproblem of leaving to generations to come healthy soil.

    Domaine le Roc des Anges

    The domain of 20 hectares was created in February2001 by 23 year old Marjorie Gallet. Exposed to wine atan early age (she grew up near Côte Rôtie), she earnedher degree at Montpellier while doing apprenticeshipswith Yves Cuilleron and Pierre Gaillard in the northernRhone. The domain is located in the valley of Agly, onshallow schist soils (the bedrock is less than one meterdown in most parts of the vineyard). 30 differentparcels make up the domain with primarily a northernexposition on the side of the Força Real Mountain,protected from the ocean wind and humidity. 40% ofthe vines are more than 95 years old! Marjorie believesthat the vines should be allowed to find their“autonomie” in order to truly express their terroir.

    Le Soula

    Le Soula is a joint enterprise between the famedRoussillon winemaker Gérard Gauby and RichardsWalford Wine Importers. Gérard shares thewinemaking responsibilities with Gérald Standleywho joined Le Soula in 2008 and assures the dayto day running of Le Soula. High up in the AglyValley (at an altitude of between 450m and 600mabove sea level) Gerard found in late 90’s a sitethat could offer great potential for making wineswith the freshness and acidity imparted byaltitude, while at the same time retaining adistinct southern French character. All their winesdisplay finesse and élégance.

    Domaine des Soulanes

    The estate is named after the local word (Soulane)for a south-southeast facing hillside. Now 18hectares in the stoney hilly back-lands betweenTautavel and Maury it is owned by Cathy andDaniel Laffite. It's nothing but hard dry stones andflaky schist. Daniel quipped "I get through twopairs of climbing boots a year!" The farming isorganic ("It's more philosophical than a marketingthing for us"). They spend a lot of time workingthe 'soil' encouraging the vines to grow deep rootsto reach water, as "we only get 400mm or so ofrain here." Daniel favors wines with bright fruits,fresh flavors and silky tannins.

    Les Terres de Fagayra

    The Gallets, owners and winemakers of Domainele Roc des Anges, have acquired in 2007 a tinynew Domaine, Les Terres de Fagayra, givingMarjorie’s husband, Stephane, a chance to utilizethe special talents for Maury that he honed aswinemaker while at nearby Mas Amiel. This littleknown appellation yields wines of great structureand flavour. These are fortified wines made in asimilar style to Port. Their three cuvees arestunning. More than good fortified wines they alsodisplay freshness, brightness and mineralsmokiness. To say that Stephane is off to a flyingand successful start would be an understatement.

    La Tour Vieille

    The Domain was created in 1982, resulting from theunion of two established wine producing families withVincent Cantié already at Collioure and ChristineCampadieu joining him from Banyuls-sur-Mer. Theirtwo Catalan families have been linked to wines formany générations. The chai is in the heart of theirvineyard in the locality of “la Tourette” (the little tower)over-looking Collioure. This domain’s dozen hectares ofvineyards is meticulously farmed by hand. The low dryschistous stone-walls and steep slopes prevent anyform of mechanisation. Tour Vieille produces uniqueand finely balanced wines of the South,tending towards a depth of fruit that retains itsfreshness rather than an expression of overwhelmingrichness.

    Tribouley – an outsider (he was a social worker inhis previous life) who understudied with Gaubyand then began his own estate in 2002 – farmsroughly 15 hectares biodynamically in the heart ofthe fabulous terroirs of the Roussillon in Latour deFrance. Yields are very low. He is a non-interventionist in the cellar. Jean-Louis likes to saythat he lives from the earth while respecting it.     Chateau la Font du loup

    La Font du Loup (the fountain of the wolf) is botha famous lieu-dit situated in the heart ofChâteauneuf-du-Pape within the commune ofCourthézon, and the name of the natural spring inthe middle of the estate. Legend has it that wolvesfrom nearby Mont Ventoux would stop to drink atthe spring as they made their way to theProvençal plains. Today, Anne-Charlotte Melia,the granddaughter of the founder, and herhusband, Laurent, oversee the estate and thewinemaking. “I was born under a foudre,” she toldus. “Our vineyards are at the top of a hill, facingnorth,” she explains. “This and the sandy soil(similar to close by legendary Château Rayas) giveour wines freshness, elegance, and delicacy. For asmall part, it’s our way of doing the wines, neverover-extracted, vinification at cool temperature,and no new oak.”

    Domaine Les Ondines is situated in the heartof the Vacqueyras appellation.     Domaine Mas Saint Louis

    The estate was established by Jean-Louis Geniestover a hundred years ago with some family land. Jean-Louis Geniest came from a long line of coopers from the Rhone valley known since the eighteenth century. His work was continued by his son Louis and grand son Jean, a prominent lawyer and doctor of law, and by Monique Geniest, his wife who now runs the estate. The vineyard is a beautiful and homogeneous plot of over 30 hectares. Monique is focusing on the improvement of the soil works, as well as the ageing of wines. Mathieu Faurie-Grepo and Vincent Tramier are helping Monique Geniest to run the estate. Mas St Louis’ Grenache are as elegant and delicate as Pinot noir and their texture is magnificient.

    The Perraud family was one of many making theirliving from growing grapes for the local co-operative. Then, in 2005, encouraged by hisparents, Jean-Christophe Perraud (then 24 yearsof age) began to make and bottle wine from thefamily’s vineyards.     Domaine Chevalier

    Domaine Chevalier is an entirely family owned andoperated estate in Ladoix-Serrigny, dating back to1850. All of the vineyards are located in the Cotede Beaune: Ladoix, Aloxe-Corton villages andPremier Cru, then the Grands Crus Corton-Charlemagne and Corton Le Rognet. Claude hasbeen crafting superb wines since taking over fromhis father in 1994. His daughters Chloe and Julieare now helping him. The vineyard is conduct with a natural andsimplistic approach, trying to help and support the vinein its role of extracting the best from soil and weather.They avoid chemicals while managing grass in thevineyard to control moisture and support thedevelopment of a real life of their soils. This full-timehuman and manual attention to the vines nurtures thedevelopment of concentrated natural fruits. VincentGodier says “We carry out a slow and cautiouswinemaking process, avoiding pumping and filtration.The wines we like combine fruits, spices and tannins tomature favourably.”

    Champagne SangerTo rebuild the regional heritage after the devastationbrought to Champagne by the phylloxera, there seemedto be only one solution: training new generations towinegrowing. On November 3rd 1927, thanks to adonation, the gates of Avize wine school opened for thefirst time to 13 students for a training in wine-growingand wine-making. In 1952, 16 former students gottogether, and set up the “former students cooperative”.For them, the cooperative and the school should be onesingle entity. They decided to bring every year to theschool some of their still wines and their enthusiasm tomake wine with the students in the school. Thediversity of the geographical origins of the grapesincreased along the years. Meanwhile, from the end ofthe 50s, the school has bought or rent vineyards in theneighborhood of the school, to reach its current surfaceof about 10 Ha.Champagne Sanger is unique as the students of AvizeViti Campus produce Champagne Sanger with theircellar master.

    Champagne Pierre Baillette

    Périne Baillette, daughter of Pierre Baillette, is now the owner of the family champagne at Trois-Puits. She lives and breath for her wines. She also managed perfectly to express every terroir of every cuvée with talent.The family now owns 3.65 hectares of Grand Cru and producing about 13.000 bottles.Most of the grapes (35 years old) are from Rilly la Montagne and Trois-Puis, there is also some Chardonnay from Verzenay Grand Cru.Since 2010 no pesticide are used on the vines. She also tries to use as less as possible machines, so the vines are growing wild. But two horses (Tarzan et Saumur) are often walking in the vineyard. Those horses are owned by his husband, Alexandre Chartogne, who is now leading the famous Chartogne-Taillet House of Champagne.She aslo doesn’t use any yeast and to be able to obtain as pure champagne as possible, the addition of dosage liquor is very little.Wines are aged in the basement between 3 to 6 years and at least 6 month into bottle before it sell.

    Domaine Fosse sèche

    The very old vineyard of « Château de Fosse-Sèche», located in Brossay, Val de Loire, dates from the13th century. It has been farmed, since 1998, bythe Keller-Pire Family. Organically runthe estate has 45 hectares in total on clay/flint soiland oxides of iron. 17 hectares are planted undervine with the surrounding land (a national birdsanctuary) planted with sunflowers, cosmos andother wild flowers. Guillaume and his brotherAdrien vinify and age their wines in large old beertransport tank without any added SO2. The winesare rich, complex, and well balanced; these aresome of the most terroir-oriented wines in all ofSaumur.

    Totaling 22 hectares spread over 30 differentplots; Clos de l’Elu is located near the village ofChaume, famous for its sweet style of botrytizedChenin Blanc. Clos de l’Elu was purchased in 2008by Thomas Carsin, an agricultural engineer whoworked in various cellars all around the world andGrégoire du Bouëxic, an entrepreneur who wasequally passionate about wine. Thomas farms Closde l’Elu organically with continuing experimentswith biodynamics. In this warmer and drier part ofthe Anjou red varieties, such as Cabernet Franc,Gamay and Grolleau are widely cultivated alongside the traditional Chenin Blanc. Most of the redwines are whole cluster fermentations. Onlynatural yeasts are employed, macerations are longand the wines age in tank, barrel or amphorae.Sulfur usage is minimal. Wines are elaborated withpassion to obtain the best expression from thesoil.

    Domaine de l’R was founded by FrédéricSigonneau in 2007. He worked for a few yearsat the famed Domaine Baudry, his neighbor inCravant near Chinon, then 2 years in Spain onbiodynamicly-farmed ungrafted vineyardsbefore coming back to his family estate. Hefarms his old vines (50 years on average) with astrict organic approach. The style is natural,focusing on the pure cabernet franc fruit withample concentration due to low yields andattentive viticulture.     Guillaume Overnoy is a young winemaker of 24 years old. He is making wine since 2013 with his father at Orbagna in the South of Revermont. This 5,5 hares’ estate is located on a mainly grey-marl soil.Since Guillaume is working there he breath a new life into the estate. It starts with the organic conversion (labeled since 2016), the amount of sulfure got as minumum as possible, the aging in oak barrels got longer.
