Craft beer is a broad term that refers to beers brewed in a variety of styles, mainly by small breweries around the world, who blend old traditions with exciting new ideas. Craft is growing so quickly because many people – including some who previously thought they didn’t like beer – love its flavour and the stories behind it.

Citrusy American-style pale ales are now widely available in the UK, imitated and sometimes bettered by young British breweries.

Having seen how successful microbreweries have been, some older, more traditional breweries are launching ‘craft’ ranges of their own, combining the easy-drinking refreshment of lager with the character of ale and the fresh zinginess of American craft.

This shouldn’t come as any surprise when you look more broadly at food and drink. Twenty years ago coffee meant Nescafé or Mellow Birds. Now we prefer a macchiato or a flat white.

Remember the story about Chicken Tikka Masala being Britain’s favourite dish? Not any more. It’s been overtaken by its hotter cousin, the Jalfrezi. Spicy Mexican food is our fastest growing cuisine, and strong mature Cheddar is taking over from the milder stuff.

We want our food and drink to taste of more. And beer is no exception. And that flavour comes in infinite variety. There’s no single style. Craft beers can be crisp and pale or dark and spicy. What unites the great ones is that they’re beers made with imagination, a spirit of experimentation and a real sense of pride. The brewer puts a little of his soul into every brew. It’s beer that’s ‘crafted’ to deliver a drink with character.

Any attempt to define ‘craft beer’ is guaranteed to generate a hot debate. For us, that’s part of the joy of it. But any drinker that ventures into the world of crafted can be sure of finding an experience that is extraordinary.

Take India Pale Ale – by far the most popular style of craft beer. It was an old English style, brewed primarily for export. It changed over time, and was reinvented by the first wave of American craft brewers in the 1980s. Britain rediscovered it, and started importing the American stuff. Then British brewers started making it again, but using American hops. Some of them did it so well they sold it back to America… and so it goes on! Craft beer is a constant exchange of influences and ideas.

TRYING CRAFT BEER Craft beer is an imprecise term with no technical definition. Some drinkers say they don’t know what it is exactly – but this doesn’t stop them from wanting to try it!

ENJOYABLE DISCOVERY • A quarter of British adults – some thirteen million – say they have tried craft beer in the last six months*.

• 50% of all beer drinkers say they expect craft beer to taste better than other beers - whether they’ve already tried it or not*.

• Maybe that’s why 35% of all beer drinkers say craft beer is worth paying more for*!

There’s a big overlap between craft beer and traditional British real ale. They’re not quite the same, but our real ale was the beer that first inspired American craft brewers, and there are lots of similarities between the two. The last edition of the Cask Report – the guide to the British cask ale market – asked cask drinkers about craft beer:

• 67% of cask ale drinkers have heard of craft beer, and 42% of them drink it.

• They describe craft beer as being from a small brewer or small batch or limited edition brew; or a beer you don’t find in many places.

PUSHING THE BOUNDARIES As you might expect, the first countries to embrace craft beer were those that have long been famous for brewing and drinking beer.

The modern craft beer movement began in America, about thirty years ago, before migrating to Britain and Scandinavia - the biggest export market for American craft beers after Canada.

All of these are traditionally beer-drinking countries, with some drinkers looking for an alternative to the mainstream.

But in today’s interconnected world, you don’t have to go through the same history to arrive at the same destination. Craft beer is now taking root wherever you go.

In wine-loving Spain and Italy, where people haven’t really thought seriously about beer before now, craft has the sophistication and flavour complexity of wine but at a lower alcohol level, and beer itself is new and exciting.

In hotter countries, you might think beer can only be a cool refresher. But Australia has had a booming craft scene for several years now.

And the most exciting new developments are from Brazil: at the recent Brussels Beer Challenge, Brazilian craft brewers won a surprisingly large haul of medals, brewing beer styles that originated in the UK, Belgium and Germany.

The next big thing could come from anywhere.

At the same time, craft draws on the many diverse brewing traditions from the world’s most noted beer-drinking countries. English-style ales are being brewed in Brazil; Belgian abbey-style beers are being created in America – you can even find German-style wheat beers being brewed in Australia using American hops.

Some fans think of craft beer as an American phenomenon, but it’s more useful to think of the evolution of craft as a transatlantic tennis match.

The appeal of craft beer is wide. The stereotypical beer nerd is way off the mark. Craft drinkers are often young and frequently affluent. When they drink, they want to drink well. They value the stories behind the breweries and the brews, they enjoy trying the new, but most of all, they want that all important hit of flavour.

Craft is uniting the sexes. More and more, craft drinkers are women. The number enjoying ‘real beer’ has doubled in two years, according to CAMRA and now almost a third are ordering themselves a beer on a night out. Craft beer offers high refreshment and lower ABV than wine or spirits. The depth and complexity of flavour make it perfect for sipping and savouring.

Man or woman, the craft drinker loves discovering, they enjoy the whole experience from learning about ingredients to the ritual of the serve. They seek out the bars and pubs that serve an interesting range and serve them well. They’re educated, connected and when they’ve found something exciting, they share. And that’s got to be good news for the pubs and bars that serve great craft.

Only a few years ago, craft beer was seen as niche - a pleasure enjoyed only by the ‘in crowd’ in uber-trendy London bars. But over the past few years, it has been gathering fans nationwide at an astonishing pace. Sales of packaged craft beer alone have grown by a whopping 154%* in the On-Trade over the last three years.

“When we started serving craft beers, we knew there must be an opportunity, but we started small. We just had a couple of the most popular: Sam Adams and Brooklyn. But it’s escalated. We rotate around our core ‘flagship’ range, changing three at a time. At first, there was a certain amount of ‘just try it and see.’ Customers would recommend beers, as well. Now we know what the ‘bankers’ are: the beers that are known and have a reputation, like Goose Island, Sierra Nevada and Stevens Point rather than the totally niche and new.”

“Having the proper glassware is fundamental to serving craft. People are attracted by the bottle designs as well, so showing off the bottles in the fridge is persuasive. We always make sure that the front of the bottle is facing the customer when we serve.”

“For anyone who is thinking about serving craft, I’d say: ‘Give it a go. Start small. Rotate your beers and see what works. Don’t give up if something doesn’t sell. Try something else. And always make sure you know what you’re serving and can recommend what new-to-craft drinkers might like’. It’s made a difference to us.”

NEW TO CRAFT DRINKER FRANCESCA McELROY Francesca tried her first craft beer on a date at the Bay Horse. Now it’s a firm favourite for a night out, relaxing with friends.

“It’s completely different to generic beer. There’s a stronger flavour. And the designs are different to mainstream beers. They’re really eye-catching. I like to know a lot about what I’m drinking, too and that’s part of the experience.”

“If I’m meeting up with friends after work, I’ll have a craft beer – Erdinger, Brooklyn or Anchor Steam. Having a craft beer is about enjoying a relaxed, social atmosphere where you can talk with your friends or enjoy a good meal.”

ESTABLISHED CRAFT DRINKER EDWIN MILES Edwin has been a confirmed craft drinker since he tried his first bottle of Thornbridge Jaipur. It’s still his favourite beer, though he loves to experiment.

“Where I grew up, there wasn’t a massive range of beers, but then I moved to Manchester. My neighbour recommended Jaipur when we were having a Christmas Eve drink a couple of years ago in a pub. There was something nice and floral about it. It smelt really good. I loved it. I was happy to move on from lager.”

“I go to places where they refresh the pale ale every two to three months because I like to try different beers. The atmosphere of the place also has to be right. When you think about craft beer, you think of wood, a cosy place. It doesn’t necessarily have to have open fires, but it has to have that cool character.”

The Bay Horse in the Northern Quarter area of central Manchester started serving a couple of craft beers as an experiment when they spotted the rising trend. Now they stock between 10 and 15 beers at any one time and haven’t looked back.

The joy of craft beer is finding the flavours that make you want to make the most of every sip. The pub or bar that makes it easy for drinkers to try new styles, find the tastes they prefer and build their knowledge of breweries and brews will be repaid with a loyal fan base. Serving crafted never has to be a hard sell.

So how can you help more drinkers begin the discovery? By giving some enthusiastic guidance, piquing curiosity, and growing knowledge. MAKE CRAFT ACCESSIBLE Whatever the size of your range, make it easy for the newbies to give it a go. Pretension has no part in enjoying craft. A ‘menu’ organised by country and style helps your customer to know where to start. It doesn’t have to be formal and printed – a blackboard is fine and easy to update. Once customers know what styles they enjoy, they can move on from there.

If they want to experiment with something new, give them a taster. Letting drinkers try before they buy oozes confidence in your selection. It also lets you open the conversation – once you get them talking about what they like and what they don’t, you can steer them to the right choices.

Drinkers always say the most useful recommendations on what to drink come from knowledgeable friends or bar staff.

Staff who are unfamiliar with craft beer often make the mistake of trying to serve the newbie the beer that’s closest to lager, with the lightest flavour. This is great if you’re talking to a lager drinker, but craft doesn’t always work like that – and not everyone is coming across from lager.

You can take the conversation further and grow the knowledge with expert talks and organised tastings. For the craft drinker, a little knowledge is a lovely thing. It helps them extend their flavour comfort zone and discover new passions

It’s always good to keep your range interesting and refreshed so there’s something new to discover. Introducing seasonal specials or guest beers maintains the interest for regulars. It also gives you something to tweet about and news to liven up your Facebook page and bring fresh customers in.

But you don’t need to go wild with new beers every week. Drinkers have their favourites and want some continuity. Rotating the range and introducing new flavours once a month or so keeps the love alive.

Beer that’s crafted with care, deserves to be served with flair. Every glass should be a special experience – that’s what makes it worth a premium price.

THE RANGE Firstly, don’t stock too many different beers. Some specialist bars stock hundreds, but their audience is looking for something new and different every time.

A well-balanced range of half a dozen beers can satisfy any palate. We’ve split the Craft range by flavour profile. Choose from across these sections to create variety.

Beer menus with brief descriptions of flavour, strength and style help people order confidently, and encourage beers stocked in back-bar fridges to move a little quicker.

THE RIGHT GLASS It’s not just temperature that allows the drinker to enjoy the flavour and character. A glass is essential – crafts aren’t beers to be necked from the bottle. Glasses help retain the head and aroma and open up the flavours of the beer.

There’s a guide to the main types of glasses and how they improve the drinking pleasure of different beer styles on the next page. You may not want to hold the full range of glassware, but a selection of at least pint, steiner, tulip and pilsner glasses is a starting point for a crafted service.

Don’t forget that trial is a big part of craft discovery. Keep a rack of tasting glasses so you can give customers a try when they’re thinking of venturing into new territory.

THE RIGHT SERVE A great craft serve is about respect for the brew and a basic knowledge of the different types of beer, rather than flashy ‘cocktail’ showmanship.

For most craft beers, bottled or draught, you just pour as you would any premium beer. All you need is a touch of reverence and a room temperature glass.

There are four elements to creating a truly great craft drinking experience. TEMPERATURE Temperature is crucial to bringing out the flavour and aroma of craft beer. Serve a beer too cold and you won’t get the full impact. Serve it too warm and it won’t be as refreshing. But with such a variety of beers, there’s no simple ‘right’ answer when it comes to temperature for craft – it’s all a question of style. Generally, lighter beers, like lagers and wheat beers are best served cool (around 4.5°C) and richer beers, like porter, warm (around 12-13°C). but there are always exceptions.

Bottle conditioned beers are the exception. Bottle conditioned means a little bit of yeast is left in the bottle, which naturally carbonates the beer. For some styles of beer, swirling the last bit of liquid in the bottle and pouring the yeast into the glass enhances the flavour. For others, pouring the sediment into the glass can make the beer taste ‘off’ and you don’t want that. Knowing your beer styles is important to the good serve. But individual taste comes into play too, so it’s always worth asking the customer whether they’d prefer you to pour or pour themselves.

Worldwide there are at least 60 distinct styles of beer. Add the increasing number of hybrids such as Black IPA and there is no doubt that beer rules the drinks sector in the variety it offers imbibers.

Given this malty miscellany why do so many pubs in Britain offer customers such a limited choice? The default options are a mainstream bitter, an international pilsner brand, and a stout, usually Guinness. As someone who is bonkers about beer this is really disappointing especially when there are so many exciting brews available. I always walk into pubs with the thrill of anticipation, my eyes scanning the taps, and am so often disheartened to see the lacklustre selection.

Craft beer has prompted the most dynamic period in brewing and here in Britain, it is a golden age. There are more breweries per capita than any other country and Britain is the home of more styles of beer currently brewed around the world than those of any other brewing nation. These include golden ale, pale ale, India pale ale, bitter, mild, brown ale, stout and porter.

I know that many drinkers prefer the comfort factor of seeing brands they recognize and pubs need to have at least one failsafe anchor beer. But there are customers out there who like variety and are not wedded to one particular brand. While a wide range of styles in cask might be a risk for some pubs to stock, having them as keg or in bottles is an alternative. Craft beer drinkers are well-used to drinking top quality beers in a filtered format - most of them never having lived through the era when kegged ale was usually a by-word for disappointment in a glass.

In my perfect world, pubs offering a selection of styles alongside the best bitter will be the norm rather than the exception and then I will know that I live in beer heaven!

One of the joys of beer for me is its diversity - not just in flavours, aromas and ABV, but also in styles.

AROMA Craft beer glasses are designed to release the aroma of a particular beer. Aromas can be light and floral, richly fruity or citrusy; they can be peppery, spicy or conjure up grass or wood. The aroma has a big impact on how the drinker appreciates the flavour. Get the right glass, take a few deep sniffs and your imagination will do the rest.

TASTE Taste buds will usually detect five core tastes: bitter, salty, sour, sweet and umami (a savoury taste, like soy sauce). See which comes to the fore.

FLAVOUR Aroma and taste fuse to create the overall perception of the flavour of the beer. There are many descriptions to choose from, just like wine tasting: nutty, caramel, chocolatey, earthy, herbal, spicy, fruity, but be creative and make your descriptions individual.

MOUTHFEEL Not surprisingly, the way the body of the beer feels in your mouth: is it light, smooth and creamy, heavy, or tingly with carbonation?

HEAD The head, too, can vary from beer to beer. Rich and long-lasting, or delicate, the head holds in the aromatic quality of the beer, making each sip more flavoursome.

CLARITY A great beer can be anywhere between crystal clear to intriguingly cloudy.

COLOUR Again there’s a whole palette of colours. The classic descriptions run from straw to black via golds, ambers and browns, but be as inventive as you like.

CARBONATION Subtle and lightly carbonated or frothily effervescent, carbonation is an important part of the experience.

BALANCE The balance between malt’s sweetness and the bitterness of hops is very unique to every craft beer and preferences are very unique to every individual drinker.

RECOMMENDING CRAFT: THE TECHNICAL STUFF The drinking experience is a personal one. But the details on craft beer labels give some useful technical information that can help you select your range and guide your customer to the right beer for the right occasion.

ALCOHOL ABV, ‘Alcohol By Volume’, is based on a precise chemical calculation. Many craft brewers experiment with higher ABVs so the range is wide.

GRAVITY A measure of the density of malt/sugar in water before fermentation. The higher the number - we use the Original Extract system (OE) - the more sugar is present. Craft beers often have a higher specific gravity.

BITTERNESS IBU, International Bittering Units, records the level of bitterness from the hops, offset by the malt – a light lager might be 5 IBU, an IPA more than 50.

COLOUR The SRM is a pretty accurate description of a beer’s colour. A reading of 1 is delicate, pale straw; more than 40 is the blackest of black.

Other times, a beer can be years in development to get the flavours and mouthfeel perfect. Velvet took three years. I don’t think there’s any beer like it anywhere. OUR STORY BEGINS AS THE BREWERY IS CONSTRUCTED

The Boulevard story begins in 1988, when founder John McDonald started construction of the brewery in a turn-of-the-century brick building on Kansas City’s historic Southwest Boulevard.

A vintage Bavarian brewhouse was installed, and the first batches of beer were produced in the fall of 1989. That November, the first keg of Boulevard Pale Ale was delivered—in the back of John’s pickup truck—to a restaurant just a few blocks away.

In 2006, a major expansion adjacent to the original brewery raised Boulevard’s brewing capacity to approximately 600,000 barrels per year—a sizable increase from the 6,000 barrels contemplated in John’s original business plan. The new brewing and packaging facility is a model of sustainable urban architecture and engineering; a three-story, 70,000 square foot building housing a new, state-of-the-art 150-barrel brewhouse, packaging lines, administrative offices, and hospitality rooms.

LAGUNITAS IPATony Magee started brewing in December 1992 on his kitchen stove in the West Marin county town of Lagunitas, California. The very next December Tony got his first license to brew, then he began to brew commercially in January 1994. Tony got ejected from this West Marin location in the summer of 1995 because of the septic system’s inability to handle the process. Turns out, when the liquid started rising from the drains, the small town knew who to blame. So Tony moved everything to nearby Petaluma in Sonoma County, where we still are today.

TWIN PEAKSBeing inspired by the Sierra Nevada beers, we were fortunate enough to meet the guys leading the brewery and get an insight into their approach. A plan was hatched for the two breweries to produce a collaborative brew. We agreed to use hops from Sierra’s own supplies and malts from the UK to make a Pale Ale at 5%. After the brew we used a “Hop Torpedo” to maximise the great flavours and aromas of the hops! The result of the cross Atlantic working is “Twin Peaks” a full of flavour Pale Ale at 5% with aromas of tropical fruits.

Accompaniment Perfect accompaniment for a hot Indian curry as the hops complement the spices deliciously, as well as working to douse the fire from the chillies.

DUVELBelgians acquired a taste for British ales after British soldiers introduced their beers to Belgium during World War I. Brewer Albert Moortgat used a strain of Scottish yeast to create a beer commemorating the end of the War in 1918, which he initially called ‘Victory Ale’ before one of his friends, a local shoemaker, described the beer as ‘nen echten Duvel’ or ‘a true Devil’ during a tasting. The name has stuck ever since. The beer has been perfected over time and is bottle conditioned over a 90 day period giving it a reputation of one of the best beers in the world ever.

Westmalle Dubbel is a dark, reddish-brown Trappist beer with a secondary fermentation in the bottle.
