A note from JoeAutumn is my favourite season in Edinburgh - the leaves turn, the air is crisp, the light amazing and the low winter sun in the mornings can be blinding walking down any of the streets that run North-South. There’s also a new sense of energy and purpose as everyone reconvenes.

That sense is evident in Vegware as we start a new phase in our journey. Our UK team approaches 50 taking us from a Small to a Medium business, we’ve lots of new initiatives in the pipeline and we’re also now accredited to ISO 9001 and 14001 - a sure sign of coming of age for any company. As with every issue of our magazine we have some new award wins, some more insight into the world of zero waste and of course some new uses for our products - like hatching gecko eggs on page 38. The growth rate of 901% that got us into last year’s Deloitte Fast 50 continues with our current 5-year growth of 919% - so fingers crossed for placing in this year’s awards which are announced in November!

New Eco school case study and film – Penair SchoolFrom spending £11,000 a year sending waste to landfill, this Truro Eco School now saves £9,400. They switched to our compostable packaging, and installed a biodigester. Used Vegware and food waste turns into fuel for their biomass boiler, heating the school and its water. 20 bin bags a day? Awards? We’re ‘Solution of the Year’ and representing EuropeBefore you ask, yes we have won some more awards since the last issue. 2degrees network named us Solution of the Year earlier in the summer. We are absolutely delighted, as 2degrees holds a lot of sway with sustainability professionals and we were up against some really impressive entries.

We have also just won the SME category at the Finance for the Future awards! We’re delighted that they can see that sustainability, leadership and innovation are engrained in everything we do. Hooray!

AND… to top it all off – some very exciting news, as we’ve just been shortlisted for the European Business Awards for the Environment! We’re absolutely delighted to be representing the UK in the EU’s environmental awards and are looking forward to the award ceremony in Lyon on the 1st December. Fingers crossed!

We’re now ISO accredited! And finally, Vegware have now received our ISO 14001 and 9001 certification for quality and environmental management systems.

Paul Adderley of SOS4business helped us to achieve our new certification (thanks, Paul!) Here’s what he had to say: “Some companies view QEMS as a tick-box exercise to gain the ISO stamp for a tender. Not Vegware. Overseen by three directors, the whole team has diligently worked with me to ensure that the requirements of ISO9001 and ISO14001 are not just exceeded, but thoroughly embedded.

Harrison Catering Services are reducing their environmental impact and increasing their commitment to sustainability by switching over to using our compostable branded packaging across its business.

Eilidh is Vegware’s Group Recycling Consultant. In her role she advises our customers on how to divert our compostable foodservice packaging from landfill. Eilidh is not only passionate about recycling but by helping businesses realise the value of improved waste management, she is actively driving the UK towards zero waste!

Nominated as one of their eco heroes, Greenhouse PR recently chatted to Eilidh about recycling, the Bin Detective and taking Vegware’s waste expertise global!

Q. What motivates you? A. I love getting out and being able to actively engage the public on the importance of recycling and waste management. For Vegware customers I run a lot of green days where I set up a recycling challenge. Bringing a competitive edge (and the offer of a free lunch!) encourages participation and is very successful in ensuring staff use the correct bins. I have also done a lot of recycling volunteering at events. It’s great to get out ‘on

the front line’ and be a part of changing behaviours whilst improving event sustainability.

Q. What is your greatest achievement to date?

A. Being nominated for Young Recycler of the Year by one of our customers was hugely flattering and gave me confidence that the work I do is of real benefit to businesses. Unfortunately I didn’t win, but there’s always next year!

Q. What are the challenges you face?

A. In recycling you will always come up against the few that

are not interested and don’t see the point. In these situations it’s always about trying to make the waste separation process as easy as possible and trying to engage them on some level. Having recently volunteered as a waste manager at T in the Park, I learnt that people at music festivals have much higher priorities than recycling!

Q. What are you working on that’s getting you fired up and excited?

A. I have a waste fighting alter ego, The Bin Detective, which we have developed into an educational resource for schools. It’s really exciting to get into schools and engage the young people on the issues around waste. Our hope is that the children become a ‘Bin Detective’ themselves and take the messages home. It’s really encouraging to see the enthusiasm for recycling even from the youngest people in the school.

Q. Where do you want to take your company next?

A. Global! As Vegware’s Group Recycling Consultant I am responsible for building our knowledge of food waste recycling systems across the globe. It’s a big job but it’s exciting to be able to help drive food waste recycling infrastructure forward in countries where it’s a relatively new idea. It’s equally exciting to learn from different systems in different countries. Next stop…USA.

Q. What can we, as individuals, do to make a difference?

A. Waste less. Recycle more.

Q. If you were Prime Minister for a day, what would be the first thing you’d do?

A. I would make the Waste (Scotland) Regulations UK wide. Making recycling compulsory for all businesses would not only see the UK become a key player in terms of resource management but would also save businesses money. It’s a win - win.

Q. What’s the coolest project or product you’ve come across, and inspired you?

A. I’m really impressed by the work of Growing Forth, a social enterprise based in East

Lothian. In return for collecting food waste from restaurants they provide locally grown fresh fruit and veg. The growing side of the enterprise creates workplace opportunities, helping to tackle both unemployment and the decline in rural skills, whilst offering specialist, locally grown produce to restaurants encourages uptake in food waste recycling. A truly closed loop project!

Q. Can you recommend a life- or game-changing book for our readers? A. Bodkin Keeper of the Marsh by Nick Hesketh. It was my favourite book when I was a child and what really sparked

my interest in environmental issues. Q. What do you listen to when you’re cooking dinner?

A. I love cooking, and I love music. At the moment I’m listening to a lot of Scottish bands – Admiral Fallow, Frightened Rabbit, Washington Irving, Fatherson, The Twilight Sad…I could go on…

Q. What’s the best advice you’ve ever been given?

A. Keep the professional professional and the ridiculous ridiculous.

Q. Can you leave us with who’d be your Eco Hero? A. Tristam Stuart – his commitment to fighting food waste is really inspiring.

This October, the Vegware team has been taking part in IGD’s industry-wide initiative ‘Working on Waste’.

Developed in collaboration with WRAP, we’ve been working to help our team reduce household food waste, save some money and have a bit of fun whilst we do it!

Food waste diaryMany of us don’t even notice the food we waste. Why not encourage staff to keep food waste diaries for a week. This will quickly help them see what and how much they’re wasting! Then get staff to share their experiences with each other.

Switching to Vegware’s eco disposables has not only helped Truro’s Penair School achieve the Eco Schools Green Flag Award, it has also served as a great educational tool to teach students about sustainability!

Before Penair School switched to Vegware, all their used catering disposables were going to landfill, and they had a waste collection bill of £11,000 a year. With over 1,200 staff and students, and a canteen that can only seat 250 at a time, this secondary school needed to offer a takeaway service to ensure everyone could have a hot meal if they wanted it. However, this created a lot of waste and the school were also finding litter to be a big problem.

Keen to find an eco alternative to reduce the amount of waste being sent to landfill and improve the unsightly litter problem, Penair decided composting on a large scale would be the solution, and introduced a large biodigester on site to convert all food waste into compost. Switching to Vegware’s completely compostable packaging meant used containers could be simply disposed of together with food waste and composted in their biodigester in just 48 hours.

Penair now have a complete Food Waste to Energy process in place. The compost they produce is used not only in their greenhouses, but also burnt in their biomass boiler, heating the school and their hot water – significantly reducing their heating’s C02 emissions.

Where they used to generate up to 20 large bin bags of waste a day, all of which was going to landfill, this has now been reduced to 3, and the school is no longer plagued by litter and seagulls!

What, where and why are the waste Regs changing?The Scottish Government has taken a forward thinking approach and is making independent steps to recognise the value in resources and divert waste from landfill. By implementing ambitious, ground breaking waste policies, Scotland is leading the way in resource efficiency in the UK.

The Waste (Scotland) Regulations 2012 require a change in the way businesses in Scotland deal with their waste. As of the 1st of January 2014, all businesses, regardless of their size or location will have to recycle these 5 key waste streams:

over 50kg per week must have separate food waste recycling by

These materials will have to be separated from the general waste and no longer sent to landfill.

Businesses involved in the processing, distribution, preparation or sale of food will also have to recycle their food waste. This includes restaurants, cafés, food courts, canteens, hotels, public houses serving food, shops and supermarkets selling food, school and college canteens, nursing homes, hospitals and prisons.

Why carry out this research?As specialists in zero waste for food service, with hundreds of customers affected by Scotland’s new Regs, Edinburgh-based compostable food packaging firm Vegware is perfectly placed to gather and share these insights. We are forging and leading our own new sector – combining environmental products and sustainable waste management for a zero waste food service sector.

The Food Waste Network, www.foodwastenetwork.org is Vegware’s zero waste initiative, mapping commercial food waste services and helping UK businesses to recycle their food. Our expertise in this field makes us perfectly placed to carry out this research.

Helping Edinburgh micro-brewery The Hanging Bat reduce waste to landfill by 90% and save money showed us there are real business benefits both of the Regs and of improved waste management in general. By extending our research to five more businesses, we hope to help others realise these benefits too.

Our aim is to dispel the widely-held myth that complying with the incoming Scottish waste Regs is both arduous and costly, and to reassure business that there is real value in improving waste practices.

The focus of our research is to investigate the potential barriers, cost implications and other impacts the waste Regulations will have on different types of food businesses. Five businesses (over a total of six business sites) participated in the study.

ConclusionsOur report concludes that far from being the cost burden many businesses fear, the Scottish Waste Regs can bring savings for food businesses. Although greater segregation may introduce challenges such as managing space issues, there are solutions to these barriers.

Food businesses located within rural areas are also exempt from the food waste regulations. However, as 80% of Scotland’s population resides in urban classified areas, a large proportion of food businesses are covered by the duty.

Further insights

Our study also made these discoveries:

1. Biggest savings come from reducing general waste collections

2. Switching from a macerator to food waste collections may seem to increase costs but will

reduce energy and water use and maintenance costs

3. Regs likely to be cost neutral for businesses already with high recycling rates

4. Even businesses with initial cost increases can see savings once new recycling systems are in

place

5. Businesses who pre-pay for bags may have extra up-front costs but will save over time

6. Grocers shops and supermarkets face higher collection costs for packaged food

Overcoming barriers

Barrier 1: Lack of external space for additional bins

Solution A: Increased recycling means the general waste bin size can be reduced to 360L. This will create space in the external area for a 240L food waste bin.

Solution B: Using a bagged service for mixed recycling removes the need for an external bin; having this recycling collected regularly reduces the space needed for storing waste internally.

Barrier 2: Lack of internal space for separate bins

Solution: More bins doesn’t have to mean more space! The increase in recycling will reduce the amount of general waste. Currently there is 2 general waste bins both front of house and in the kitchen – one of these in each area can now be used to collect mixed recycling.

The school is an active member of the Eco Schools Scotland Programme and environmental education is incorporated into the curriculum. As a result, the schools pupils, in particular the younger ones are pushing for more recycling.

The school produces a lot of food waste, of which half is disposed of to sewer via a macerator in the main kitchen. The other half goes in the general waste bin. Under the new waste Regulations, St George’s will have to stop using the macerator by January 2014.

St George’s facilities management see food waste as a challenge due to the work needed to raise awareness and change behaviour.

The Hidden Costs of Macerators

Until now food waste at the school has been disposed of to sewer so incurring no ‘direct’ waste cost for disposal. The daily food waste collection is the main reason why costs are looking to increase.

However, using a macerator is by no means free and instead has ’hidden costs,’ including:• electricity use • maintenanceSavings will become evident over time, when the macerator is no longer used.

The macerator ban From 1st January 2016, there will be a ban on sending food waste to sewer in non-rural areas.

However, by January 2014 businesses producing over 50kg of food waste a week must have their food collected for recycling. This means St Georges must stop using the macerator by then. The only exception to this would be if there was no food waste collection available.

Environmental cost of macerators• Disposing of food waste to sewers has a higher impact on energy and carbon

emissions than kerbside collections• Wasting high quality drinking water - in use, food waste disposers use water in far

greater quantities than the food waste they dispose of.• Sending food to sewer also creates extra costs not seen by the macerator user -

water companies advise that macerators increase the risk of sewer blockages, sewer flooding, environmental pollution, odours and rodent infestations.

• Currently produce around 1000 per day. • Can be included with the mixed recycling, but would take up

Once the new recycling system is embedded and providing there has been effective communication and training, it is likely that the general waste collections can be reduced further.

If St Georges were able to remove 1 general waste bin, this would result in a weekly saving of £12.84 compared with their current system.

Q. Tell us a bit about Cambridge Gecko

A. We started breeding Leopard geckos several years ago. We pride ourselves on breeding geckos of the highest quality and ensure every gecko is individually housed. Our care and attention is second to none!

Q. How many different breed of Gecko do you have?

A. Here at Cambridge Gecko we breed Leopard geckos and African Fat Tail geckos. The different colour and pattern combinations of these breeds make them particularly interesting for people who keep reptiles as pets.

Q. So how did you come about using Vegware at Cambridge Gecko?

A. We first started using Vegware’s 12oz deli containers several years ago for incubating our eggs! The clear containers

made it really easy to see and check the eggs were okay and whether there were any hatchlings.

Q. So how do you use our deli containers for incubating the eggs? What’s the process?

A. Not long after we started using Vegware we discovered a clever divider that fitted perfectly into your 12oz deli containers. This separates four clutches of eggs and lifts them off the substrate we were incubating them on. We then put an inch of pearlites and water under the suspended divide and then put on the deli lid for incubation.

We try to imitate their natural habitat in the wild, so getting the right humidity and temperature is vital. When the lid is in place, it recreates a perfect environment to incubate eggs and we now have a 100% hatch rate thanks to Vegware’s deli containers and the clever dividers!

A. Yes! We now use quite a number of Vegware products for keeping the geckos. We use Vegware’s small portion pots to place water, insects and vitamins for the geckos to eat and drink. And we also use Vegware’s soup containers for the gecko hides!

Q. We’re intrigued… How do you use our soup containers for the gecko hides?

A. We use two soup containers for each hide. One container is turned upside down and kept dry. Then we use one of Vegware’s flat soup container lids on the other one, in which we cut a small hole and fill with some damp substrate. Then we heat their homes from

underneath on one side. This way the geckos can regulate from hot to cold and control its own body temperature, as they are cold blooded.

Q. What do you particularly like about Vegware products?

A. Geckos need a good clean environment and it’s important to ensure you change the geckos’ homes regularly. Using compostable products means that we can change the containers as often as needed, keeping our gecko homes nice and clean whilst minimising our environmental impact!

Q: Tell us about the Emirati appetite for eco friendly products…

A: Although becoming more environmentally friendly seems to be a relatively new concept over in the UAE, I definitely found that even in my short time there that this seems to be rapidly changing and people are starting to make steps towards increasing sustainability.

For example, in my time over there the residence I stayed in received their first ever recycling bins and I attended the UAE’s first sustainability event for the hotels and hospitality industry.

Eco-friendly products are still a very new idea being introduced to the region and it was really fantastic to be there first hand to see how excited people were about our products and how they can help the environment.

Q: How popular is Vegware over in the UAE?

A: Vegware was really well received in the UAE. People really loved the fact that they could make a real difference to their environmental impact simply by choosing Vegware products, and they loved our positive and energetic approach to customer support!

Q: What’s your most memorable moment from your time in Dubai?

A: Oooft - that’s a tricky one. As I was only based with the Horeca team for 6 months I tried to make every day memorable! I think one of my favourite days however was a cooking competition that Horeca arranged for its staff.

Everyone was split into teams, and then were let loose in a huge commercial kitchen to create the best meals we could using Horeca food. It was the first time I’d really got to see my new colleagues out of their normal working roles and we had lots of fun and giggles. It may have helped too that my team won!

Q: Which Vegware products were the Emiratis most excited about?

A: Our compostable CPLA cutlery - they thought it was fantastic! People would just not believe that this sturdy, great looking product was made from plants, not plastic. Luckily we had the certification to prove it!
