Martin Muller. Chef Martin Muller is a

traditional Swiss Chef with an extensive

background in international culinary arts

ranging from Indonesia, Thailand and

Israel, and even right here in Seoul!

Having over 20 years of experience, Chef

Muller will be presenting a unique and

ravishing mixture of Italian, Asian,

French, and traditional Swiss fine dining.

Chef Muller is to the culinary arts as

Salvador Dali is to his infamous artwork

with a reputation of producing first class

cuisine while implementing new themes

and exotic menus.

Cooking WITH Chemistry

Many aspiring chefs have taken up

interest in molecular gastronomy -- the

study of the transformation of ingredients

in the process of cooking. The term was

coined in late 1988 by Nicholas Kurti, a

physicist from Oxford University and the

only with a PhD in molecular

gastronomy. His studies triggered the

uprising of a network of chefs, teachers,

scientists, and food representatives who

aim to perfect the culinary arts and

discuss culinary matters such as how to

avoid cracks in macaroons. However, this

research not only improves the products

of first class, worldwide Chefs, it also

teaches amateur cooks how to fix the

perfect meal for gatherings in their own

homes. Molecular gastronomists can

also use their chemical expertise to

modify the taste and texture of dishes.

Appropriate amounts of certain

chemicals, for example, give a wonderful

mushroom taste to dishes, if wild

mushrooms are not available. Call it

cheating but adding drops of vanillin

solution to a cheap whisky will produce a

version with the 'round' taste of expensive

malt; it produces a similar effect to the

slow reactions that occur during ageing

in wood barrels.

What about kitchen equipment?

Chemists might not realize it, but

apparently labs are full of potentially

useful hardware for cooks. For example,

a reflux column over a pan rather than a

lid might be a better choice because it

retains flavors more effectively. Thanks to

collaborations between chemists and

cooks, Chefs now use a wide range of

'scientific' equipment in the kitchen - all

purchased from a laboratory, rather than

a kitchen supplier. Chefs' kitchens have

been refurbished to include, for

example, temperature-controlled water

baths to cook fish and some meats; a

vacuum still to extract flavors from herbs

and stocks before they are lost to the

environment; and plenty of temperature

probes.

Similarly, infusion cooking plays a part in

the renovation of culinary arts. The trick

is to cook the food you want to infuse

with flavor in well seasoned, flavored

liquid rather than plain water. A tasty

combination of herbs, spices, seasonings

and flavor enhancing liquids are used to

super marinate foods. Pressure cooking

forces the liquid to penetrate deep inside

food and also creates a richer tasting

sauce or gravy. Infusion cooking is

appropriate for thinner cuts of meat like

Celebrate Halloween with Yongsan

t's time for you to dig in the back of the closet for that box full of Halloween Idecorations and costumes because

Halloween is just around the corner. Whether you want to be a goblin, witch or vampire, Halloween is the chance for you to let loose and have a blast.

When Halloween first came to America, those that celebrated this holiday would gather and share stories of the dead, dance, sing and tell others of their fortune. Now, many would celebrate Halloween by trick-or-treating, having a bonfire, holding costume parties, going to “haunted houses” and carving pumpkins to create Jack-O-Lanterns. This Halloween, FMWR has planned a ton of activities for you to choose from. Yongsan Library has prepared a selection of books for you to check out. From one of Stephen King's bests to Rob Scotton's Scardey-Cat, Splat, there is something for everyone. Also, Yongsan Library is holding a Pumpkin Seed Contest. Stop by the library and give them your estimate of how many seeds are in the pumpkin they

costumes for the kids, but they have costumes for adults so there's something for everyone. Like the Yongsan Commissary, every year, the Yongsan Main PX has a contest for children to participate in. The child with the best costume will get the biggest prize but every child who participates is guaranteed to walk away with something.

To ensure the safety of children and youth during Halloween, there are rules that must be considered which apply to Yongsan and Hannam Village Housing areas. The official hours for Halloween “Trick-or-Treat” activities are from 1800-2030 on Saturday, 29 October 2011. Adults, especially parents, are key in ensuring this year's Halloween is conducted safely so Child, Youth, and School Services has provided a few basic guidelines to follow:

All candy must be pre-packaged and purchased at the Main PX or Commissary. Treats such as art or school supplies are also allowed. For those families who want to help through donations, drop-boxes for candy and other treats will be set up at the Main PX and Commissary. Trunk or Treat will take place during the same time as trick-or-treating (Saturday, 29 October from 1800-2030). There will be prizes for the best decorated vehicles and there will also be a pumpkin decorating contest. Those wishing to participate in the pumpkin decorating contest must bring a pre-decorated pumpkin with them to the Trunk or Treat. Want some lessons on painting your own mask or pumpkin? If so, come to K-16 Arts & Crafts Center on any Thursday or Friday from 1600-1800 during the month of October and learn from a professional! The fee to participate is $5.00.

On Saturday, 29 October, Yongsan Lanes has planned two parties for both adults and children. From 1400-1730, Yongsan Lanes is hosting their very own “Spook-N-Bowl” Party for children. During this event, there will be Cosmic Bowling with Halloween themed music videos to entertain, a costume contest and plenty of free candy. Later that evening, there will be an additional “Spook-N-Bowl” Party for adults. Like the children's “Spook-N-Bowl” Party, there will be a costume contest so come prepared!

Like Yongsan Lanes, R & R Bar & Grill will be hosting a “Halloween Costume Party”

on Saturday, 29 October from 2100-0200. There will be door prizes and a contest for the best, funniest, and scariest costume. Tickets can be purchased for $15.00 now and $20.00 at the door.

In case you haven't noticed, Yongsan Commissary has prepared for Halloween as well. Their shelves are stocked with plenty of candy and pumpkins of all shapes and sizes. Every year, Yongsan Commissary holds a pumpkin carving contest for the children. As soon as all pumpkins are carved and returned to Yongsan Commissary, they will be on display for 3-5 days. They will then be judged and the best carved pumpkin will receive a prize.

Aside from all the candy and pumpkins, the Yongsan Main PX has the final recipe to complete this year's Halloween; a costume! Sons may want to be Spiderman instead of the Red Power Ranger and daughters may want to be Cinderella instead of Bell from Beauty in the Beast but that's alright. Not only does the Yongsan Main PX have a variety of

Youth Trick-or-Treaters should wear some type of reflective clothing that can be seen by motorists. Flashlights are not mandatory; however, it would assist motorists in seeing children.

Trick-or-Treaters are requested to remain within their own neighborhoods. Children from off-post must be escorted by the adult sponsor. U.S. Embassy staff residing off-post are requested to park their vehicles in the Yongsan Commissary parking lot and walk to the U.S. Embassy Housing Area to minimize traffic.

Costumes should be designed so that movement or visit is not restricted. It is recommended that face paint be used instead of mask and that costumes be constructed of flame-retardant material.

Possession and use of fireworks are strictly prohibited.

It is suggested that candy and other food items be inspected by parents or responsible adults before consumption. Give special attention to unwrapped treats. Items which appear to be questionable should be identified and turned over to the Provost Marshal's Office (PMO).

If you set Jack-O-Lanterns outside with candles in them, ensure that they are far enough out of the way so that children's costumes will not accidently be set on fire.

Ensure that any props your child(ren) might be carrying (e.g., scythe, butcher knife, or pitchfork) have smooth and flexible tips to prevent injuries.

Ensure that children do not use sharp knives to help carve pumpkins. It is best to let the children clean out the pumpkins and draw the faces and the adults do the carving.

For those that live off-post but still want to participate in passing out candy to trick-or-treaters, you're in luck! Trunk or Treat is a community event that will allow off-post families to participate in Yongsan's Halloween activities. Off-post families will be able to gather in the Commisky's parking lot (Facility located near the

Key Steps to Beginning a Running Program

unning is a versatile workout. It is important to understand the risks involved and the necessary steps one should take when thinking Rabout beginning an exercise program. Running certainly is not for

all of us. The action of running is a weight bearing exercise that can cause a certain amount of stress on one’s bones and ligaments, and can become very taxing to those individual’s that are not trained properly. So you may ask, How does one properly prepare for a running program?

IMPORTANT STEPS TO STARTING A RUNNING PROGRAM:1. Buy the right shoes: it is important to not buy a shoe for

it’s look or price, but rather the shoe should provide the proper support and cushioning.

2. Stay hydrated and energized: it is important during any form of exercise to be properly hydrated to maintain the essential nutrients your body needs. Not doing so can lead your body to fatigue and lead you to faint.

3. Wear the right attire: dress for the current weather condition. Wear moisture wicking material to keep your body cool in the hot weather.

4. Warm-up/Stretch: ease your body into the run to allow your muscles to warm up to prevent any injury. Stretch after to maintain flexibility and prevent muscle tightness/soreness.

5. Stay visible: when running outside, wear reflective clothing or accessories. When running on the road, do not assume that drivers will automatically give you the right of way, always proceed with caution.

Despite following these steps, there is always the possibility for injury. The most common running injuries include:

1. Runner’s Knee; pain in the knee cap region on account of the constant impact.

2. Shin Splints3. Pulled Muscles

*** When running outside on post, iPods and other musical devices are restricted. Runners need to be aware of his/her surroundings at all times.

If you are unfortunate to become injured during an exercise program, the most important thing you can do is to stop the exercise immediately. DO NOT try and continue working through the pain. Once you have done so, it is important to remember RICE (Rest, Ice, Compression and Elevation). In order to allow the body time to recover from injury it needs ample time to repair. Following these steps and advice should certainly get you well on your way to running your first 5K. Looking for some practice to prepare for your next race, then get involved in one of the many “Fun Runs” that takes place at Collier Fitness Center.
