Celebrating the Best of Cuisine and Wine in Charlottesville
In Central Virginia we are extremely fortunate to be able to source almost all of our ingredients from small local farmers. Chefs Brian and Joe are passionate about supporting
such farms as they bring the best flavors to the table. In doing so we help to keep these farms, with exceptional produce and protein, thriving.
Wayside Produce hand delivers exceptional root vegetables and tomatoes. Polyface Farms provide us with some of the most pampered poultry in the country. The husband and wife
team at Meadow’s Pride Farm bring us the most delectable whole lambs.
When choosing the wines to go onto our list I have a similar frame of mind. Supporting small, family vingerons can also make for the best juice in the glass. All of these amazing producers
have a love and dedication to their craft. The attention to detail and care for the land that these farmers and winemakers exhibit is truly heartwarming. It is a passion of mine to educate our guests on wines that they may have never heard of. Our list spans the globe, however we
offer some of France’s best, and pay special attention to the talented producers in Virginia. Let us guide you through this list of some of the best wines of the world.

From this land with a history of turmoil spring forth wines with unique cultural heritage. In Alsace there is a movement toward recognizing Grand Cru vineyard sites and bottling wines from specific soil types.

Jura Blanc A favorite region among wine geeks. Located east of Burgundy, winegrowers in Jura produce some of the most mysterious wines in all of France. Think rustic farmland, hearty cuisine, and traditional, old-school winemaking. These are wines for a ponderous mood. You’ll find a wide variety of styles splayed out on a flor spectrum. There are “regular” white wines on one end of the spectrum; on the other end, you’ll find flor-influenced
wines that taste more like a dry fino sherry. The more flor there is, the more you will want to pair this wine with shellfish…

plots with the most sunlight. When chardonnay is planted in sunlight on this kind of unique limestone, a lustrous terroir manifests in the glass.

Petit Manseng in France & Virginia “There is a lot of clay in Jurançon, and humidity. It’s very similar to here.”
~Matthieu Finot, winemaker at King Family Vineyards in Crozet, Virginia
We rarely see Petit Manseng outside of its home in southwest France, particularly in the Jurançon. Aside from a few scattered plantings throughout the world, if you look at Petit Manseng’s diaspora, it pretty much consists of
Virginia. Petit Manseng has open clusters that allow for airflow, which is perfect for the humid climate you’ll find in the Jurançon and in Virginia.
• 1562 ~ ‘mansengue’ is mentioned in Jurançon text
• c1562-1780s ~ It is highly likely that a seed from a Manseng plant grew to become
Gros Manseng, with the parent later distinguished as Petit Manseng
• c1783 ~ Petit Manseng is distinguished from Gros Manseng in text
• 1987 ~ Professor of Viticulture Tony Wolf (Virginia Tech) brings Petit Manseng from New York to
Virginia to evaluate varieties for Virginia’s climate
• 2000 ~ Michael Heny and Graham Bell makes a Petit Manseng wine at Horton Vineyards
• 2002 ~ Jennifer McCloud of Chrysalis releases a 100% Petit Manseng bottling
• 2009 ~ about 2,500 acres of Petit Manseng in France
• 2011 ~ DNA findings imply that Petit Manseng is a parent of Gros Manseng
• 2011 ~ 69 acres of Petit Manseng in Virginia
• 2017 ~ 381 acres of Petit Manseng in Virginia
• 2018 ~ Virginia’s Wisdom Oak Winery wins ‘Double Gold’ at the San Francisco International Wine Competition with their 2017

Sherry This category of fortified wines from Spain ranges from dry to sweet and can accompany a wide variety of foods.
Sherries have inspired the likes of Edgar Alan Poe (‘The Cask of the Amontillado’) and helped drive the early cocktail movement in the 1800s (think ‘Sherry Cobbler’). A dry sherry can be amazing with shellfish, and sweeter sherries pair well with cheeses & desserts.

Amber Wines of the World Amber wine is skin-fermented white wine. It’s a style of winemaking that once pervaded the known world, now used by only a few.
These jewel-like wines are hotly debated in the wine world. Some wine experts disdain amber wines on the assumption that skin-contact wines display aromas and flavors of wine-making technique rather than terroir. These same Amber nay-sayers usually contradict themselves when they also say that
terroir is best expressed in a traditional red ferment with heavy skin maceration, or that terroir is absent in a ‘simple’ rosé. Amber wines force us to re-examine the locus of terroir in wines made from white grapes—does terroir lie in the grape flesh? The seeds? The skins?
It could be a combination…
Amber wine is ‘oddball’ at the moment, but I long for a day when it has its proper place at the table. And this place is with foods that a traditional white wine or red wine may not quite complement, such as poultry, pork, and fatty foods like foie gras. Amber wines often have the tannin structure of a pinot noir with the lightness of being of a white wine, and this allows them to occupy an alternate universe of food pairing with dishes that require in
concurrence both delicacy and power.

Oddities & Specialties Some wines don’t fit the usual categories ~ here, they have a home.
chalk 250 France, Champagne Paillard dry, rouge, still Pinot Noir 2013 135
Rare still red wines from Champagne. Three centuries ago, this type of wine was usual in Champagne, and enjoyed by the Sun King. In the 1700s, wines like this competed with the fine pinot noirs from Burgundy. Champagne created its niche apart from Burgundy when producers there controlled a second fermentation.
marl 252 France, Champagne Horiot Rosé des Riceys ‘En Valingrain’ dry, rosé, still Pinot Noir 2013 110 This Rosé des Riceys—from the village of the same name straddling the border of Champagne and Burgundy—is made in tiny quantities by a handful of growers only in warm vintages. This has more in common with a red wine than most rosés. First, the wine is intended for cellaring; typically it is released after a long elevage.
A master of the genre is vigneron Olivier Horiot.
bio limestone 251 Spain, Penedès Parés Baltà, Radix Rosé dry, rouge, still Syrah 2016 68 The roots of Parés Baltà go back to the 18th century. In 1790 the first vines were planted on the estate that
now surrounds the winery. After only six hours of skin maceration, this unique “rosé” drinks like a Northern-Rhone Syrah. Enjoy it at cellar temperature or with a slight chill.

Cru Beaujolais Rouge It would behoove us all to pay more attention to the region of Beaujolais. The Crus of Beaujolais produce wines that are rich yet approachable.
By law, they must all be hand-harvested; yet despite this meticulous vineyard work, most Cru Beaujolais wines are around $50.
These wines ignite a great synergy with food, as they support cuisine without overpowering it. Forget Beaujolais nouveau; below you will find a
carefully curated collection of gems from this overlooked region.

Featured Producer: Hervé Souhaut
Hervé Souhaut created Domaine Romaneaux-Destezet in 1993. Hervé works 5-hectares of old and ancient vines— between 50 to 100 years old. He is very fortunate to own two vineyards in the Rhône Valley just opposite the
storied hills of Hermitage in Saint Joseph. This region is widely recognized as being one of the finest areas for wine production on the planet; thanks in part to its elevation, ancient vineyard sites and the southeastern and southern exposures.
Hervé works entirely on whole grape bunches and semi-carbonic maceration. All of the vineyards are farmed organically,
and no chemicals are added in the winemaking process. His philosophy is to extract a delicate balance of tannins from the grapes, to make a wine with subtlety and finesse. Hervé prefers to make a wine that is drinkable right away, but we must say his wines
have such a fantastic level of purity and acidity, that the older bottles we have tasted have incredible potential to evolve into some of the most spectacular natural wines in existence.

Provence, Languedoc-Roussillon, Southwest, & Jura Rouge It’s hot and dry in the lands that border the north Mediterranean coast. The wines from this area are often dense and rich, taut and at times sinewy.
They are relentlessly raw and straightforward, and always perfect with local Virginia grass-fed steak…

Rhône Valley Rouge The Rhône River winds through the inhospitable rocky hills in the north to the gallet-studded plains in the south. The gobelet-trained vines look
like small shrubs; the fruit they produce is taut and flavorful. Here, there is a democracy between many grape varieties from picpoul to syrah. The biodiversity and variation in the soil translates to a wide spectrum of flavors and styles.

American Red We’ve come so far since the days of Prohibition. Just a century ago we were preparing to shut down American wineries left and right.
Generations later, the wine industry in the US has bounced back with incredible force. The benchmark wineries below have come a long way in exploring and pushing the envelope of what American terroir can express. The next generation of US wine will build upon their work.

Wines of Virginia
Here are a few of our favorites from Virginia’s blossoming wine industry….
Castle Hill Cider - Levity 2017 $45
A producer of truly world-class cider. The style of Castle Hill rivals the best of Normandy. We are fans of these dry and complex offerings. Levity is a truly unique sparkling cider; as it is crafted in terra-cotta vessels that are
buried on property. Levity is settled and bottled before fermentation completes, producing a natural carbonation from native yeasts.
Ankida Ridge - Pinot Noir 2015 $89
Ankida Ridge is leading the charge of producing the best Pinot Noir in Virginia. The estate features only a few acres of vines and plenty of happy animals. Dennis and Christine Vrooman are
some of the nicest winery owners you will ever come across. Stop in to taste their Burgundian-style pinot noir and chardonnay or to pet their sheep. (614)
Lovingston - ‘Gilbert’s Vineyard’ Pinotage 2015 $52 This is one of the greatest values in Virginia. This playful offering reminds us of a wild, red fruit driven Pinot Noir.
This Pinotage is grown on red clay slopes. This tasty bottling comes to us byway of the Puckett family & is crafted by the insightful winegrower, Riaan Rossouw.
In the 1900s, a woman named Josie owned the knoll where the grape vines are planted, hence the wine’s namesake…
King Family - Petit Verdot 2014 $89
In 1996, the King family put down roots in Crozet and has been helping to define Virginia wine ever since. Winemaker Matthieu Finot brings a wealth of experience from his childhood in France.
He has great success with Petit Verdot in the Monticello AVA. (658)
Barboursville - ‘Octagon’ Bordeaux Style Blend 2014 $99
Winemaker Luca Paschina culls some very special grapes from Virginia’s red clay to make this landmark wine. We call it a ‘landmark’ wine for a few reasons: it carries the mark of the land and represents the soils of the Monticello AVA,
the label depicts a design by Thomas Jefferson of the ruins that rise up from the vineyards thus paying homage to the historic building and the echoes of Barboursville’s past, and the wine itself is something of a landmark in Virginia’s wine landscape (611)
