Ingredients: 4 potatoes 3 carrots 3 garlic cloves 2 small onions 2 chili peppers 1 tbsp fresh ginger 2 tbsp oil 2 cups water ½ tsp ground cardamom 1 tsp black pepper Method: 1. Wash, peel and chop vegetables into small chunks 2. Place in large sauce pan and cover with water 3. Bring to the boil and simmer for about 15-20 minutes 4. When ready drain and set aside 5. Puree ginger, garlic, onions and peppers in a food processor 6. Pour oil into a sauce pan on a medium heat 7. Add puree and sauté for five minutes 8. West African Fufu ‘Mashed Yams’ (serves four)

West African Fufu is mashed yam, which is served in West Africa with stews. To eat it you use a small ball of the mash as a scoop for the stew. Or you can use a larger ball in a dish and spoon the stew around it.

Ingredients:• 900g white yams• 2 tbsp butter• Pepper for seasoning

Method:1. Place the yams into a pot and cover with water 2. Boil for 15-30 minutes or until the yams are

cooked through3. Drain and once slightly cooled peel the yams and

chop them into large pieces4. Place them into a large bowl with the butter and

seasoning and mash until smooth5. Put the Fufu into a large bowl6. Wet your clean hands with water and form into a large

ball and serve

Brazilian ‘Farofa’

Try this typical Brazilian side dish with rice or beans. The main ingredient is manioc flour (cassava).

Ingredients:• 1 onion, finely chopped• ½ cup scallions, finely chopped• 4 tbsp butter• 2 cups manioc flour• Pepper for seasoning

Method: 1. Melt the butter in a frying pan2. Add the onions and cook for about 10 minutes,

until soft3. Add the manioc flour and scallions and stir for about

3 more minutes until toasted evenly

Peruvian ‘Maduros’ Fried Sweet Plantains

Plantains are similar to bananas but they are starchier and less sugary. They are generally cooked. Here is a delicious Peruvian plantain recipe.

Ingredients:• 2 black-skinned sweet plantains• 2 tbsp butter

Method:1. Peel the plantains and slice them into ½ inch pieces2. Melt the butter in a frying pan3. When it is bubbling add the plantain slices4. Fry until both sides are golden5. Serve hot6. Return the bananas to the tray and add the chocolate

Try this scrumptious desert from the Philippines with all the family.

Ingredients:• ½ cup cornstarch (can be substituted with flour or tapioca)• ½ cup water• ½ cup sugar• 2 cups gata (coconut milk)• 1 cup toasted coconut flakes for topping

Method: 1. Prepare a serving tray by greasing2. Place the coconut milk and sugar in a non-stick pan and bring to the boil3. Mix the cornstarch and water in a bowl until smooth4. Gently add the cornstarch mixture to the boiling milk mixture and stir

quickly for about three minutes to thicken5. Transfer to the prepared serving tray and cool until set6. Sprinkle desert with coconut flakes7. Slice and serve

Filipino ‘Cheesy Cassava Squares’

Choose this cheesy recipe for a nice afternoon snack.

Ingredients:• 2 cups grated cassava• 1½ cups coconut milk• 3 eggs, beaten• ½ water• 1 cup sugar• 1½ cups grated low-fat cheese

Method: 1. Preheat oven to 180C/350F/Gas Mark 42. Mix cassava, coconut milk, eggs, water and sugar in a bowl3. Transfer to a baking tray and sprinkle cheese on top4. Bake for one hour or until mixture is firm when tested

with a fork/cake tester5. Remove from oven and cool6. Slice into squares and serve7. Sprinkle desert with coconut flakes8. Slice and serve
