INGREDIENTS6 oz. (2 cups) uncooked rotini (spiral pasta)2 cups small broccoli florets8 oz. frozen ready-to-cook medium shrimp, thawed, tails removed1 (6.5-oz.) container (about 1 cup) light garlic and herbs

soft spreadable cheese2 tablespoons milk1/2 teaspoon salt

DIRECTIONS1. In large saucepan, cook rotini as directed on package, adding broccoli and shrimp during last 2 to 4 minutes ofcooking time. Cook until broccoli is tender and shrimp turn pink. Drain; return to saucepan.2. Add cheese, milk and salt to cooked rotini, broccoli and shrimp; toss gently to coat.

Restaurant-Quality Maple Oatmeal SconesINGREDIENTS

3/4 cup dried cherries, 1 egg 3/4 cup buttermilk 3/4 teaspoon vanilla extract 3 cups all-purpose flour 1/2 cup rolled oats 1 tablespoon cornstarch 2 1/2 teaspoons baking powder 1/2 teaspoon baking soda 3/8 teaspoon salt 3/4 cup white sugar 2 tablespoons real maple syrup 1/2 teaspoon maple flavored extract 3/4 cup unsalted butter 1 egg white, 1 teaspoon white sugar

DIRECTIONS1 Preheat oven to 425 degrees F (220 de-

grees C). Line a heavy duty baking sheetwith parchment paper. To prepare fruit,cover with boiling water and let stand 5minutes. Drain and dry with paper towel-ing.

2 In a two cup measure, stir together the egg,buttermilk and vanilla, maple syrup andmaple extract.

3 In a food processor bowl, place the flour,oatmeal, corn starch, baking powder, soda,salt and sugar. Process briefly to blend in-gredients. Drop in chunks of butter andpulse to cut in. Stop when you have acoarse, grainy mixture. Alternately you cando this by had with a pastry blender or twoknives.

4 Remove mixture to a large mixing bowl.Make a well in the center. Stir in butter-milk/egg mixture. Blend in dried cherries.Stir with a fork to make a soft dough.

5 Turn out onto a lightly floured work sur-face and knead only to get a slightly cohe-sive dough. Divide the dough into 3 equalsize pieces. Pat each piece into an 8 to 10inch circle, 1/2 to 3/4 inch thick. Cut eachcircle into eight wedges. Place on bakingsheet. Paint tops with beaten egg white andgarnish with about 1 teaspoon of the sugar.

6 Bake at 425 degrees F (220 degrees C)for 15 to 18 minutes or until golden brown.

DIRECTIONS1 Preheat oven to 425 degrees F. Whisk pumpkin, sweetened

condensed milk, eggs, spices and salt in medium bowl untilsmooth. Pour into crust. Bake 15 minutes.

2 Reduce oven temperature to 350 degrees F and continuebaking 35 to 40 minutes or until knife inserted 1 inch fromcrust comes out clean. Cool. Garnish as desired. Store leftoverscovered in refrigerator.

sugar mixture over each layer. Dot with butter. Sprinkle withlemon juice. Roll out remaining dough; cut slits for escape ofsteam. Moisten rim of bottom crust. Place top crust over filling.Fold edge under bottom crust, pressing to seal. Flute edge.

3 Bake at 450 degrees F (230 degrees C) for 10 minutes. Reducetemperature to 350 degrees F (175 degrees C), and bake for anadditional 35 to 40 minutes.

Spinach Dip Crescent WreathINGREDIENTSWreath 2 cans (8 oz each) Pillsbury® refrigerated crescent dinner rolls or 2 cans (8 oz each)Pillsbury® Crescent Recipe Creations™ refrigerated flaky dough sheetTopping 1 box (9 oz) Green Giant® frozen chopped spinach3/4 cup light sour cream1/2 cup fat-free mayonnaise2 tablespoons fat-free (skim) milk1 tablespoon chopped green onion (1 medium)1/2 teaspoon seasoned salt1/2 teaspoon dried dill weedGarnishes1/4 cup chopped red bell pepper2 tablespoons chopped green onions (2 medium)1 tablespoon chopped fresh parsleyGreen bell pepper, cut into holly leavesSmall cherry tomatoes

DIRECTIONS1. Heat oven to 375°F. Turn 10-oz custard cup upside down on center of ungreased large cookiesheet.2. Remove dough from one can, keeping dough in one piece; do not unroll. With hands, roll doughto 12-inch log. Cut log into 20 slices. Arrange 16 slices, slightly overlapping, around custard cup.3. Repeat with second can of dough, cutting log into 20 slices. Arrange remaining 24 slices, slightlyoverlapping each other, next to but not overlapping first ring. Remove custard cup from center.4. Bake 13 to 16 minutes or until light golden brown. Gently loosen wreath from cookie sheet, andcarefully slide onto cooling rack. Cool completely, about 30 minutes.5. Meanwhile, cook spinach as directed on package; cool and squeeze to drain.6. In medium bowl, stir sour cream, mayonnaise and milk until well mixed. Add spinach and re-maining topping ingredients; mix well. Cover; refrigerate until serving time.7. Place cooled wreath on serving tray. Spread wreath with spinach topping. Sprinkle with red bellpepper, 2 tablespoons onions and parsley. Decorate with bell pepper “holly leaves” and cherrytomato “berries.” Serve immediately, or cover and refrigerate up to 2 hours before serving.

Grilled Fresh Vegetable PizzaINGREDIENTS1 cup fresh small broccoli florets1 (13.8-oz.) can Pillsbury® refrigerated

classic pizza crust2 teaspoons olive oil1 small yellow summer squash, sliced lengthwise1/2 cup pizza sauce2 Italian plum tomatoes, sliced6 oz. (1 1/2 cups) shredded mozzarella cheese

DIRECTIONS1. Heat grill. In small microwave-safe bowl, combine broccoli and 3 tablespoons wa-ter; cover with microwave-safe plastic wrap. Microwave on HIGH for 2 to 3 minutes oruntil broccoli is bright green. Drain; set aside.2. Cut 18x12-inch sheet of heavy-duty foil; spray with nonstick cooking spray. Unrolldough; place on sprayed foil. Starting at center, press out dough with hands to form13x9-inch rectangle. Brush dough with 1 teaspoon of the oil. Brush squash with re-maining teaspoon oil.3. When ready to grill, place squash on grill. Invert dough onto grill rack and peel offfoil. Cook on gas grill over medium-low heat or on charcoal grill 4 to 6 inches frommedium-low coals for 3 to 5 minutes or until bottom of dough is golden brown andsquash is crisp-tender and grill-marked, turning squash occasionally.4. Remove squash from grill; place on cutting board. Cut squash into bite-sized pieces.Turn dough; grill 1 to 2 minutes or until bottom is set. Carefully remove from grill. Topcrust with pizza sauce, tomatoes, squash and broccoli. Sprinkle with cheese.5. Return pizza to grill. Cook an additional 3 to 5 minutes or until crust is browned andthoroughly cooked, and cheese is melted.
