Sir SidneyPoitier, longtime friend andsupporter of the Children’sDiabetes Foundation, introducedChairman Barbara Davis whospoke about the importance ofhelping children who suffer withdiabetes. Following Mrs. Davis’remarks, nine-year old TylerSmith joined her onstage to givethe evening’s invocation.

The evening also included atribute to the late Marvin Davis,introduced by Academy Award-winner and Davis family friendSir Michael Caine, whichincluded a montage of familyphotographs and lovingmemories of their father by thefive Davis children.

The highlight of this spectacularevent was Oprah Winfreypresenting Halle Berry, adiabetic herself, with the BrassRing Award. The Children’sDiabetes Foundation was proudto recognize Halle for herextraordinary contributions tothe cause of curing childhooddiabetes. We honor her as awoman of great courage,strength, talent and beauty. Herdetermination to fulfill herdreams despite having diabetesis an inspiration to all afflictedwith the disease. We thank herfor giving hope to children withdiabetes that one day they willgrasp their brass ring: the cure.The Brass Ring Award has beengiven only four times in the pastto: Sir Sidney Poitier, SenatorHillary Rodham Clinton, StevieWonder and Whitney Houston.Ms. Berry expressed herheartfelt appreciation for theaward and told the audiencehow she now feels as thoughhaving diabetes in her life is agift, a gift that has given her strength, taught her compassionand given her grace, every dayof her life.

arvin Davis, the former owner of 20th Century Fox, the Pebble Beach Company, the

Aspen Ski Company and theBeverly Hills Hotel, who wasknown in the oil and gasindustry as “Mr. Wildcatter,” diedpeacefully Saturday, September

25th in the presence of hisfamily. He was 79 years old.

Mr. Davis was a self-madeentrepreneur who earnedseveral fortunes — first as anoil and gas wildcatter and thenthrough savvy investments inindustries ranging fromentertainment to resorts to realestate. He was also a majorphilanthropist, who, along withhis wife Barbara, had beenactive for decades in raisingfunds for a variety of worthycauses, including the Children’sDiabetes Foundation and theBarbara Davis Center forChildhood Diabetes, whichcurrently cares for more than5,000 children from all over theworld and has made it possiblefor countless mothers withdiabetes to deliver healthy

babies (the Center is the largestfacility of its kind devoted tocare and research in pediatricdiabetes); the Cedars-SinaiMedical Center in Los Angeles;and the Nancy Davis Foundationfor Multiple Sclerosis.

In Denver, the Davis’ regularlyhosted what they called theCarousel Ball in support of thediabetes facility and it becameat the time the largest single-event fundraiser in the country.After relocating to Beverly Hills,the Davis’ hosted a glitteringbiennial fundraiser known asThe Carousel of Hope, whichattracted the entertainmentindustry’s top stars as well asthe business community’sprincipal leaders and became atop event on the city’s socialcalendar.

A disciplined dealmaker withimpeccable market timing, hedemonstrated an uncanny abilityto recognize both the top andbottom of market cycles and hewas credited with being able toidentify economic trends longbefore they became generallyapparent.

Until the end, Mr. Davisremained a major figure in boththe business and social sceneswho enjoyed a well-deservedreputation as a lively storyteller.

Marvin Davis was born onAugust 31, 1925, in Newark,New Jersey. After growing up inNew York City, he received aBachelor of Science degree fromNew York University in 1947,and married the former BarbaraLevine in 1951, the year shegraduated from AdelphiUniversity in Garden City, NewYork. Over the years, they hadfive children.

After graduating from NYU, Mr.Davis joined his father increating an oil and gas

exploration business. Under hisleadership, Davis Oil Companybecame one of the premierwildcat drilling operations in thecountry, buying up low-priced oiland gas leases in the RockyMountain region, then ridingthem through the boom times ofthe 1970s. The company, whichis now known as DavisPetroleum Corp., also developedproducing leases in Louisiana,Oklahoma, Wyoming and Texas.During the 1970s, only threeother companies — multinationalgiants Shell, Amoco, and Exxon— drilled more exploratorywells in the United States. Thecompany is still one of the mostprolific exploration companies inthe oil and gas industry today.

In the 1980s, Mr. Davis and hisfamily relocated from Denver toBeverly Hills, where he turnedhis deal-making skills toentertainment and real estate.In 1981, he bought 20th Century-Fox with financier Marc Rich inone of the first successfulleveraged buyouts of the decade.Mr. Davis wound up buying outMr. Rich’s half of Fox in 1984and sold the movie studio andfilm library to Rupert Murdochin 1985.

In addition to the movie studioand film library, Fox’s assetsincluded a number of otherworld-class properties which Mr.Davis retained after the sale ofthe Fox studio to Mr. Murdoch.These properties included thePebble Beach Company, theNorthern California seasideresort with two luxury hotels,four world-class golf coursesand the world-famous 17-miledrive, the Aspen SkiingCompany, which owned 200miles of ski trails on threeColorado mountains(Breckenridge, SnowMass andButtermilk), as well as the LittleNell luxury hotel, in addition toproperty in Century City,

California, on which Mr. Davisbuilt and twice sold the 20th

Century Fox Plaza. An avidgolfer, Mr. Davis sold PebbleBeach to Japanese investors for$841 million at the top of themarket in 1990. Still, itremained one of his favoriteacquisitions. “Oh, I loved everyminute of it,” Mr. Davis said ofthe years he owned the resort.“I never fall in love with anyasset, but that one came theclosest to it.”

Mr. Davis is survived by hisloving, devoted wife of morethan 53 years, Barbara, theirfive children, Patricia Ann DavisRaynes and her husband Marty,John Davis and his wife Jordan,Nancy Davis Rickel and herhusband Kenneth, Gregg Davisand his wife Elena and DanaDavis, as well as, Mr. Davis’sister, Joan Chorney. Despiteall his business accomplishments,Marvin Davis considered hisgreatest legacy to be his wife,his five children and 16grandchildren.

role of innate and adaptiveimmunity in development ofdiabetic complications, includingaccelerated atherosclerosis, aswell as development of novelmethods of inflammationimaging. Dr. Rewers researchesprevention of diabetes and itscomplications through a seriesof large cohort studies. HisCoronary Artery Calcification intype 1 Diabetes has studied,since 1999, development andprogression of coronaryatherosclerosis in 656 T1Dpatients and 764 non-diabeticpersons aged 20-55.Participants have beenexamined twice, using theelectron beam tomography, forthe presence of coronarycalcification. Samuel Wickline, M.D.,Professor of Medicine,Biomedical Engineering,Physics and Cell Biology andPhysiology, WashingtonUniversity School of Medicine,St. Louis, MODr. Wickline’s laboratory isengaged in a multidisciplinaryeffort (physics, engineering,chemistry, cell physiology,pharmacology and imaging) todevelop targeted nanoparticlesfor imaging the molecularcauses of cancer, cardiovasculardisease and other inflammatoryconditions. MANAGEMENTOF DIABETES INYOUTHCONFERENCE

he 8th biennial educational meeting for diabetes healthcare

providers, with 400 attendeesfrom every state in the U.S., washeld July 18-21 at the KeystoneConference Center in Keystone,Colorado. This meeting wasplanned and coordinated underthe watchful eye of ConferenceDirector, Dr. H. Peter Chase.Guest speakers included Dr.William Tamborlane from YaleUniversity School of Medicine,Dr. Tim Wysocki from NemoursChildren’s Clinic and MayoMedical School, Richard Weil,M.Ed. from New York ObesityResearch Center and SusanAllen, M.S.N., R.N. fromCincinnati Children’s HospitalMedical Center.

The meeting was an intensethree and a half days of generalsessions and workshops.Members of the staff at theBarbara Davis Center and theguest speakers shared theirexpertise by presenting atgeneral sessions, leadingworkshops and facilitating paneldiscussions with patients, theirparents and athletes with type 1diabetes. Practical day-to-daymanagement was emphasizedwith special attention given tonew innovations in care,including new insulin analogues,continuous glucose monitoring,blood ketone checking, low doseglucagons and insulin pumptherapy. Education of the entirefamily, recent changes in dietaryrecommendations, suggestionsfor exercise and psychosocialimplications of diabetes werealso stressed.

The conference was once againsold-out. Comments afterwardswere “the best ever,” “the bestconference I have ever attended”and, “I’ll be back with othermembers of my team.” Thanksto Sue Palandri, LindaSchneider and Lisa Fisher fromthe Children’s DiabetesFoundation for their hard workin making this conferencepossible.

Plans are underway for the2006 conference and anadditional day has been added.

It will be held July 15-18, 2006at the Keystone ConferenceCenter in Keystone, Colorado.Many of the participantssuggested that some of themeetings begin in the afternoonso they can enjoy the beautifuland sunny Colorado mornings,so the schedule will be revisedto accommodate this request.Diabetes healthcareprofessionals — mark yourcalendars — it will be the one“must attend” meeting held in2006.

he Barbara Davis Center, withDr. Richard Krugman, Dean of the University of

Colorado Medical Center,recently received word that itwill receive a grant of almost $3million from the NationalInstitutes of Health (NationalCenter for Research Resources)to finish the remaining twofloors of the new Barbara DavisCenter on the medical schoolcampus at Fitzsimons. Thegrant followed a nationalcompetition. This is great newsas with matching funds,including the tremendoussupport from the Children’sDiabetes Foundation andmultiple gifts from the familieswho support the Center, as wellas the support of theUniversity/Medical School, willallow all four floors of theCenter to be finished. It isplanned that by April of 2005the first floor (Clinical andClinical Research) as well as thefourth floor (laboratories) willbe ready for occupancy. Thesecond floor (outpatient clinicalresearch) and the third floor(Islet Transplantation programand a Center for Autoimmunityincluding type 1 diabetes) willtake longer to finish, but arenow on track. We thank themany generous supporters ofthe Children’s DiabetesFoundation and the BarbaraDavis Center who have madethis possible.

FREESCREENINGFOR RELATIVESOF PEOPLEWITH TYPE 1DIABETES

he National Institutes of Health (NIH) has recently announced the

NIH-ADA-JDRF funded researchprogram to again start screeningrelatives of people with type 1diabetes. The program is nowcalled "TrialNet" (formerly theDiabetes Prevention Trial - DPT-1). First degree relatives(siblings, children or parents),ages 1-45 years, and second

degree relatives (cousins,uncles, aunts, nieces, nephews,grandchildren or half-siblings),ages 1-20 years, may bescreened to determine their riskof developing type 1 diabetes.(The relative with type 1diabetes must have beendiagnosed before age 40 andstarted on insulin in the firstyear after diagnosis.) Theadvantages of screening are:

1. The diagnosis can then bemade much earlier before theperson becomes seriously ill.

2. Interventions will soon beoffered to try to preventdiabetes.

uestion:Which is better, an insulin pump or Multiple Daily Injections (MDI)

using Lantus®?

nswer:First let me say that both are far better than the peak-insulin

therapy using NPH, Lente orultralente insulins (particularlywhen one of the three is given atdinner or in the evening). Whenpumps or MDI’s with Lantus areused there is not a large peak ofinsulin acting during the night.Every good study has shown areduction in nighttime lowsusing either pumps or MDI incomparison to the twice-dailypeak insulins. Our studyregarding Lantus use (Chase etal, J. Pediatric 143:737, 2003)showed a reduction from 14 to 4seizures during the night in 114youth as they changed from NPHto Lantus insulin (both givenover nine month periods).

As far as glucose control isconcerned, Dr. Satish Garg,Director of the Young AdultClinic, analyzed the HbA1c datafrom 216 of his pump patients(mean A1c=7.5%) and 299 MDIpatients (mean A1c=7.7%).Thus, there was no difference,which has also been the case formost studies to date. However,for children who snack and whodo not take insulin injections, orwho do not tolerate multipleinjections, a pump may bebetter. The pump is moreexpensive and in Dr. Garg’sstudy, resulted in more cases ofketoacidosis or DKA (due topump insertions coming out).We have also found that some

youth do not attain optimal A1clevels because they forget tobolus with food intake(Pediatrics 113:3, e221, March2004). Research is currently inprogress to determine if alarmswill help to remedy thisproblem. In the meantime, Iwould say that the superiority ofone method of giving insulinover the other is probably “inthe eye of the beholder”(including the patient, familyand care-provider).

uestion:I was reading about the glycemic index in an online article

(www.Glycemicindex.com) andam both astounded andconfounded by what I foundthere. I know you’vepublished a mini-index in theBDC newsletter before, butI’ve always understood juice,little candies, etc. to be thebest things to eat (aside fromglucose and honey) when I amlow. Now it seems like whiterice or Rice Chex or ShreddedWheat would raise my bloodglucose even faster than, say,fruit juice. Is this true? I

feel like my whole center ofgravity has shifted if so!

nswer: I was very interested in the glycemic index 20 years ago. The

problem with it is that itmeasures glucose levels when afood is eaten alone. This rarelyhappens in real life, and theaccompanying food changesthings considerably (e.g. fatdelays stomach emptying andkeeps blood glucose levels uplonger no matter what theglycemic index of thecarbohydrate). Thus, thepracticality of the glycemicindex is limited when someoneeats a meal.

In regards to treatinghypoglycemia, our research fromdiabetes camp showed thatliquids passed through thestomach quicker than solids.The sugar is absorbed in thesmall intestine (not in thestomach). Thus, juice or asugar source that dissolvesquickly is still the best fortreating low blood sugars.

i my name is Sammy Heitsch. Iwas diagnosed with type 1 diabetes when I

was 4 years old. I started ridinghorses when I was 7 years old.In the beginning, I thought Iwould do horrible because I haddiabetes. I thought that when Iwas riding I would have to stopand go test my blood sugar allthe time, but I was wrong.

Whenever I ride in horse shows,each event only takes about 10minutes. As long as I make sureI am in control before I ride, I dojust fine. Once, I did have a lowblood sugar when I was riding. Iknew the man that was in thearena with the judge. He sawthat I was having trouble and letme start over once I felt better.After that for each event, hewould ask me before the event if Iwas okay. Usually I would sayyes, I was okay with my diabetes,but no because I had butterfliesin my stomach.

I love to ride and it also justturned out that the horse that isin the picture is mine now. Iwas leasing him because theowner was a member of ourchurch. I would ride him everyday but I never got to say thathe was my horse. Now, theowner signed him over to me andhe is mine. The horse that Iride is a Palomino horse and isabout 16 years old. His name isRocky. He takes classes withme out at the communitycollege, LCCC. He does reallywell out there and likes to ridewith me. He has taken off oncewith me on him but he is areally good horse and loveswhen I ride him. I have neverhad a bad accident with himwhile I was riding that wascaused by diabetes. There hadbeen times where I went low onhim but never to make me faintor fall off.

I have one really good friend thatlikes to watch me ride. Her nameis Lauren. She is always therefor me and has also gotten to

ride Rocky a lot. I call her“nurse Lauren” because she hasknown me since I was 6 yearsold and knows a lot about meand my diabetes. Every year atmy County Fair, Lauren comes.

I have only gone to fair 3 timesbut still we are out there for atleast 5 hours, sometimes evenlonger. I really have to knowhow to take care of my diabetesand be on a horse for that long.I did so well one year at fairthat I got to go to State Fair inDouglas. I also got second upthere. That year was my bestyear. I had won at least 2 firstplaces and 3 second places. Iam planning on riding my wholelife but we will see how it worksout. But one thing for sure Iknow that diabetes will NEVERkeep me down.

One more thing. My mom hasalways told me that one day whenthey find the cure we are going tohave a big party and have mejump out of the cake!!!!!!

traveled to China to study business and economics for a 21-day study

abroad program through AzusaPacific University with eightstudents and one professor. Ourexperience consisted of studyingat Zhejiang University and thencontinued travel to Shanghaiand Beijing. Although I probablycould write pages and pages ofthe cultural experience, I amgoing to share with you some ofmy experience in dealing withmy blood sugars, the pump andbeing a global diabetic.

Throughout the whole three-week trip one of my biggestconcerns was weather issues,humidity and temperature. Myblood sugars were surprisinglystable, probably because ourdiet consisted of mainly porkand lots of RICE!!! I did take theinitiative of decreasing myinsulin dosage by about 30%. I

did not change my basal ratebut my bolus amount shiftedbetween 1-6 units, whereas inthe U.S., my bolus amountsometimes goes as high as 10units. While I was there, I hadonly one “kind of” low because itwas after a day of intense hikingat the YinLin Temple. I wasamply prepared and brought lotsand lots of Gatorade® andNutrigrain bars from the U.S. forthat exact situation.

My biggest problem with thepump and international travelswas actually in the airports. Itwas sometimes humorousbecause when we flew intoSouth Korea I had my pumpstrapped to my ankle and thesecurity guard searched me andcompletely skipped the areawhere my pump was attached.We concluded that they had veryloose security in their airport.

I did have a minor situation withthe airport security in Shanghai.Of course, this had to happenwhen we were already late forour flight to Beijing and runningto get to the terminal. We wentthrough the metal detectors and

then they had to searcheveryone again. They cameacross my pump, which was stillstrapped to my ankle, and theguard looked up at me and saidsomething to me in Chinese, ofwhich I had no idea what theguard was telling me. I speakno Chinese, so I lifted my pantleg and told her “it’s medicine.”Why I thought she understoodEnglish is still beyond me. Shewent and brought two otherguards back, by this point I wassitting down on a chair showingthem the pump was strapped tomy leg and the tubing leads tothe incision point, whichhappened to be on my hip. Inaddition, I kept repeating thewords “medicine” and “diabetic”(like that was really going tohelp the situation). The guardthen motioned me to follow herto a closed room where shetried to see where the tubingwent. She tugged at my pantsand shirt, needless to say, sheeventually let me go figuringthat this crazy American wasprobably not dangerous. Webarely made it to the flight andthankfully made it safely. Forfellow diabetics and for myfuture traveling experience, Ithink I am going to have a cardthat says “I am a diabetic, it’s aninsulin pump” in the languagewhich they will be speaking orbetter yet, just detach the pumpand stick it in my bag for thesecurity portion of the airport.

Overall, this experience to Chinahas been one of the biggesthighlights of my entire life and Iencourage all diabetics to neverbe hindered by diabetes butexperience the world, don’t losehope and never stop beinginspired.

he Insuflon®

device works extremely well for our five-year old son Brady who

was diagnosed with type 1diabetes in March 2004. He isstill in the “honeymoon” periodand only requires about fiveunits of insulin per day. All ofhis injections are given throughthe insuflon and he nevercomplains of pain during theinjections. We are able to mixdifferent kinds of insulin

together in the Insuflon with noapparent problem. He currentlytakes Lantus®, NPH andHumalog®.

Technically speaking, theinsuflon is an indwellingsubcutaneous catheter. Wewere introduced to this idea byDr. Peter Chase and his teamduring our first visit to the BDC.The Insuflon has a very lowprofile and Brady usually doesnot even remember which sideof his buttocks to expose whenwe ask him to take an injection.He can shower, bathe and evenswim with it in. Occasionally,the sticky tape has frayed at theedges and we have reinforced itwith Tegaderm® with goodsuccess. We usually change theinsuflon once a week and applyEMLA® topical anesthetic creamfor one hour, under a band-aid,before insertion. Most of thetime, he does not feel thecatheter going in at all.

Our local pharmacy gets theinsuflon from Amerisource (800-523-4020) and the item numberis 450-9725. The cost is $5-$6each. More information can befound at insuflon.com.

While not for everyone, theinsuflon has been wonderful forour son. If he wants to eat alittle extra snack, we can simply“cover it” with short actinginsulin to keep him in tightcontrol. Brady’s othercaregivers (babysitters andgrandparents) are especiallythankful since they no longerfeel intimidated when faced withgiving him an injection. Also,the insuflon may be a low costalternative for those people whocannot afford to start the pump.The insuflon has helped to makeour preschooler’s life as close tonormal as possible.

Matthew Cooperwas invited to Unomedical’smanufacturing facility in Mexico.The company makes insulin pumpinfusion sets and the visit was inrecognition of the launch of theirnew device, the Inset®.Matthew has worn an insulinpump for five years and reallyenjoyed learning by working “onthe line” side by side with theworkers in the factory. Themanagers at the factory told usthat the employees found itrewarding to hear from apatient that uses their productsto stay healthy.

LOW CARBCONES!

ince our five year-old son was diagnosed with type 1 diabetes last March,

making the proper food choiceshas been an ongoing challenge.Typically, our family tries to eathealthy food, but with threeyoung boys, we want to makeeating fun. Here are two low-carb treats that we havediscovered.

We buy plain ice cream conesand have the boys fill them withthe whipped cream that comesout of the can. Although thiscan be messy, the kids lovemaking their own "whippedcream cones." The whippedcream comes in both vanilla andchocolate flavors. This treat isusually 5-10 carbs depending onthe amount of whipped creamused.

Another special treat that thekids enjoy is making snow conesusing Kool-aid®’s new sugar-freeJammers. We bring a Jammeralong with us everywhere we goand if the opportunity arises andwe see a snow cone stand weask for a snow cone with justice. We then top it with thesugar-free Jammer and we havemade our own sugar-free snowcone. This treat is only 2 totalcarbs. Our boys love thesetreats and we feel good aboutletting them enjoy them.

any of you have been taught to use carbohydrate counting as a method of meal

planning. What you are usuallytaught by the dietitian is thatwhether you eat a foodcontaining sugar or a foodcontaining starch, they both willbe converted into blood sugar.And, if the food contains thesame amount of totalcarbohydrate, whether it’s twocookies or one slice of bread, itwill cause about the same risein blood sugar. We teachpatients and families to counttotal carbohydrate grams infoods because it is the totalamount of carbohydrate that youeat that is the most importantfactor affecting blood sugarsand not the source ofcarbohydrate. Theserecommendations are based onthe current nutrition guidelinesput forth by the AmericanDietetic Association and theAmerican Diabetes Association.

But, why is it that you’venoticed, for example, thatpotatoes cause a higher rise inblood sugars than beans do?That’s because there arevariations in how differentcarbohydrates affect bloodsugars. In fact, there have beenmany studies conducted onindividual foods and how theyaffect blood sugars. From thesestudies, a glycemic index hasbeen developed. Some of youmay be asking why you’ve neverheard about the glycemic index.That’s because the glycemicindex is not widely accepted asa method of diabetes mealplanning for a number ofreasons. It is complicated and ifa patient tries to eat only lowglycemic index foods, they may

be severely limiting the types offoods that they can eat and lackthe variety they need forbalanced nutrition. Manyexperts also feel that thedifference between carbohydratefoods is not significant.Although we do not regularlydiscuss the glycemic index indetail with patients, some of youmay find it helpful.

So, what is the glycemic index?The glycemic index is a rankingof foods based on how muchthey raise a person’s bloodsugar level compared to areference food. The referencefood is either white bread orglucose. To determine theglycemic index, test foods arefed to people with and withoutdiabetes and the blood sugarresponse is measured over threehours and compared to thevolunteers’ response to thereference food. Each food isgiven a number or glycemicindex using these results, and intheory, the higher the number,the higher the blood glucosewould be expected to rise aftereating that food.

Various other factors also affectthe blood sugar rise after eatinga carbohydrate food. Thesefactors include the protein andfat content of the meal, themethod of preparation andwhether a food is pureed orwhole. For example, a high fatand protein meal would slowdown the rise in blood sugar ascompared to a low fat andprotein meal. And foods thatare pureed and cooked will beabsorbed more quickly thanwhole, uncooked foods. Also,each person may reactdifferently to the samecarbohydrate food.

Since each person reactsdifferently to carbohydrate-containing foods, it is best touse blood sugar testing to findout how various carbohydratesaffect you or your child’s bloodsugars. It is important toremember, though, thatvariations in blood sugars canbe caused by factors other thanthe food that was eaten. If thereis a pattern over a few days witha certain food or meal, you canuse the blood sugar values tomake adjustments in insulindose.

How can you use the glycemicindex? First, I want toemphasize that you should notuse the glycemic index as thesole meal planning tool. We stillrecommend that when planningmeals, the most importantconsideration is the totalamount of carbohydrate and notthe source of carbohydrate.Then, if you are still notsatisfied with blood sugarcontrol you can try using somelower glycemic index foods tosee if they make a difference.You may want to include morefoods from the lower end of theglycemic index, such as lentilsand beans. However, there is noneed to omit a food just becauseit is at the higher end of thescale. When eaten with othertypes of foods, it may notproduce the higher responsesthat occur when it is eatenalone. Eating more fruits,vegetables and whole grains andreducing the amounts ofprocessed white flour productsyou eat can also be helpful andhealthful for many reasons. Seethe table on the next page for alisting of commonly eatencarbohydrate containing foodsand their glycemic index.

DIRECTIONS:Combine juice drink, soda and fruit slices in a large punch bowl.Add ice. Float mint leaves if desired.

HOLIDAY PARTY CAKE INGREDIENTS: 2 baked eight or nine inch white cake layers, cooled

2 boxes (four serving size) sugar-free gelatin, one red, one green

2 cups boiling water

31/2 cups (8 ounces) “lite” whipped topping

DIRECTIONS: • Prepare cake layers per package instructions.Remove from pans and cool on wire racks.

• Place baked cake layers, top side up, in twoclean eight or nine inch cake pans. Prick eachcake at 1/2 inch intervals.

• Dissolve red and green gelatin in separatemixing bowls using 1 cup boiling water in eachbowl.

• Carefully spoon dissolved red gelatin over onecake layer and the green gelatin over the othercake layer. Chill three to four hours.

• To unmold gelatin cake, dip bottom of one cakepan in hot water for 10 seconds. Unmold ontoserving plate. Top with 1 cup whipped topping

• Unmold second cake layer and carefully placeatop first “frosted” layer.

• Frost top and sides of cake with remainingwhipped topping. Chill. Garnish as desired.

2 cups boiling water

1 cup cold water

1 pint fresh strawberries

1 package (four serving size) sugar-free instantvanilla pudding

11/2 cups skim milk

1 cup “lite” whipped topping

18 low-fat graham cracker squares (9 fulllength crackers)

DIRECTIONS:• Dissolve gelatin in boiling water, then add coldwater. Chill until slightly thickened.

• Clean and slice berries, saving a few wholeberries for garnish.

• Prepare pudding per instructions, using ONLY11/2 cups skim milk.

• Fold whipped topping into pudding. Foldgelatin mixture into pudding mixture.

• Add sliced berries.

• Line bottom of 9 inch square pan with 9graham cracker squares. Spread half of mixtureover crackers. Repeat.

• Chill until firm, approximately three hours.Garnish with whole berries.

A HAUNTINGLYFUN TIME BY ALL

ids dressed up as princesses, cheerleaders, action figures, doctors,

dinosaurs and cowboys at thisyear’s Guild Halloween Party atthe Colorado School of MinesGreen Center hosted by PhiGamma Delta Fraternity. Thefraternity has hosted the Guild’sAnnual Halloween party since1983, offering an alternative tothe large quantity of sweetsoffered on this holiday.

The children enjoyed plentifulamounts of pizza donated byDominos and diet soda donatedby Pepsi Cola Bottling Company.They also had a “spooktacular”time decorating pumpkinssupplied by our Guild membersRobert and Judy Villano, whilealso having the opportunity toplay games and place theirprizes from games in theiroverflowing goody bags. Someof the game prizes were donatedby: BD Medical, Deltec,Medtronic MiniMed, RocheDiagnostics Corporation andTheraSense.
