Cut up carrots and onion to have ready for the steamed carrot side and the simple rice pilaf.

In a small sauce pan, whisk together 2 Tbs. hollandaise sauce mix and 1/2 cup of milk. Add 2 Tbs. butter and bring to a boil, stir frequently. Reduce heat and keep warm on low

heat. Sauce will thicken after about 1 minute.

Put sliced carrots into a separate pan, cover them with water and salt to taste. Heat to boiling on

high, once boiling reduce heat to medium-low, cover, and simmer until carrots are tender.

Preheat oven to

350 degrees F.

Coat a 7x11

inch baking dish

with nonstick

cooking spray.

Pound chicken breasts to 1/4 inch thickness. Sprinkle both

sides of chicken breasts with salt and pepper.

Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken

evenly with bread crumbs.

Bake for 25 to 30 minutes, or until chicken is no longer pink.

Remove chicken from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve.

As soon as you get the chicken in the oven start the rice. Melt 1 Tbs. butter in a lidded skillet over medium-low heat. Cook and stir 1/4 cup orzo pasta, onion and 3/4 teaspoon

freeze dried minced garlic until orzo is golden brown.

Now mix in the 1/4 cup of rice, chicken broth and 1/8 cup water. Increase heat to high and bring to a boil. Reduce heat to medium-low, cover, and simmer until the rice is tender,

and the liquid has been absorbed, 20 to 25 minutes.
